- Dissolve yeast in warm water. Combine 2 tablespoons oil, honey, salt, yeast mixture and 1-1/2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Punch down dough; divide into 6 portions. On a lightly floured surface, roll each portion into an 8x6-in. rectangle. Place each on a greased piece of foil. Spritz with cooking spray; cover and let rest 10 minutes., In batches, carefully invert crusts onto greased grill rack; peel off foil. Grill, covered, over medium heat until bottom is golden brown, 2-3 minutes. Turn; grill until bottom begins to brown, 1-2 minutes., Remove from grill. Brush tops with remaining oil; top with tomatoes. Grill, covered, until bottom is golden brown and tomatoes are heated through, 1-2 minutes. To serve, add basil, drizzle with glaze and, if desired, top with cheese.

- Heat a grill to medium. Clean and lightly oil hot grill. Divide pizza dough into 4 balls. On a lightly floured work surface, stretch or roll dough into 6-inch rounds. Lightly brush both sides of each with olive oil and transfer to grill. Cook until undersides are lightly charred and bubbles form all over top, 1 to 2 minutes. With tongs, flip dough and grill until lightly charred, 2 to 3 minutes. Transfer to a cutting board. Top crusts with goat cheese, tomatoes, spinach, avocado, oregano, and basil. To serve, drizzle with olive oil and season with salt and pepper.

GRILLED PIZZA WITH FRESH TOMATO AND BASIL

- Stretch and roll the dough on a lightly floured surface into a thin rustic round about 1/4 inch thick and 12-inches in diameter (no need to be perfectly round). Transfer to an 18-inch-long piece of heavy-duty aluminum foil and brush the pizza with the oil. Lift the whole piece of foil and put on the grill. Grill until the dough is charred on the bottom and almost cooked through, turning the foil a quarter turn a few times to ensure even cooking, 4 to 7 minutes.
- Using the foil, remove the crust from the grill. Scatter the mozzarella and Parmesan over top, add the sliced tomato and season lightly with salt and pepper. - Toss onion, tomatoes, and avocados with oil and lime juice in a medium bowl. Season with salt and pepper; set aside.

- Halve the avocado and remove the pit. Score the flesh on each half in a criss-cross pattern. Carefully scoop the cubes into a bowl with a spoon.
- Place mango jam in a small bowl and microwave on high until warm and thinned, about 20 seconds.
- Gently stir the jam into the avocado; blend in lemon juice, red onion, salt and pepper.

GRILLED TOMATO AND CHEESE PIZZAS FOR GAS GRILL
The pizzas cook very quickly on the grill, so before you begin grilling them, be sure to have all the equipment and ingredients you need at hand, Equipment includes a pizza peel (or a rimless baking sheet), a pair of tongs, a paring knife, a large cutting board. and a pastry brush; ingredients include alll the toppings and a small bowl of flour for dusting. Timing and coordination are crutial; if you are unsure of your skill level, try cooking the first two pizzas one at a time, then work up to cooking the final two in tandem. The pizzas are best served hot off the grill but can be kept for 20-30 minutes on a wire rack in a 200F oven.

- FOR THE CRUST:.
- Combine oil and water in liquid measuring cup. I food processor fitted with plastic dough blade or metal blade, process bread flour, whole wheat flour, sugar, salt and yeast until combined, about 5 seconds. With machine running, slowly add liquid through feeding tube; continue to process until dough forms tacky, elastic ball that clears sides of work bowl, about 1 1/2 minutes. If dough ball does not form, add more flour 1 tablespoons at a time and process until dough ball forms. Spray medium bowl lightly with nonstick cooking spray or rub lightly with oil. Transfer dough to bowl and press down to flatten surface; cover tightly with plastic wrap and set in draft-free spot until doubled in volume, 1 1/2 - 2 hours.
- When dough has doubled, press down gently to deflate; turn dough out onto work surface and divide into 4 equal-sized pieces. With cupped palm, form each piece into a smooth, tight ball. Set dough balls on well-floured work surface. Press dough rounds with hand to flatten; cover loosely with plastic wrap and let rest about 15 minutes.
- FOR THE TOPPING:.
- Meanwhile, toss tomatoes and table salt in medium bowl; transfer to colander and drain 30 minutes (wipe out and reserve bowl). Shake colander to drain off excess liquid; transfer tomatoes to now-empty bowl and set aside. Combine cheese in second medium bowl and set aside.
- Gently stretch dough rounds into disks about 1/2 inch thick and 5-6 inches in diameter. Working one piece at a time and keeping the rest covered, roll out each disk to 1/8 inch thickness, 9-10 inches in diameter, on well-floured sheet of parchment paper, dusting with additional flour as needed to prevent sticking, (If dough shrinks when rolled out, cover with plastic wrap and let rest until relaxed, 10-15 minutes). Dust surface of rolled dough with flour and set aside. Repeat with remaining dough, stacking sheets of rolled dough on top of each other (with parchment in between) and covering stack with plastic wrap; set aside until grill is ready.
- SPICY GARLIC OIL:.
- Combine the olive oil, minced garlic, onion, salt and chili in a small saucepan - sauté for two minutes over medium - low heat. Double or treble this recipe to have lots made ahead of time!
- TO GRILL:.
- Light all burners and then to high heat, cover grill, and heat grill until hot, about 15 minutes; scrape cooking grate clean with grill brush.
- Lightly flour pizza peel; invert 1 dough round onto peel gently stretching it as needed to retaing shape (do not stretch dough too thin; thin spots will burn quickly). Peel off and discard parchment; carefully slide round onto hot side of grill. Immediately repeat with another dough round. Cook (with grill lid down) until tops are covered with bubbles (pierce larger bubbles with paring knife) and bottoms are grilled marked and charred in spots, 2-3 minutes; while rounds cook, check undersides and slide to cool area of grill if browning too quickly. Transfer crists to cutting board browned sides up. Repeat with 2 remaining rounds.
- Brush 2 crusts generously with Spicy Garlic Oil; top each evenly with on-quarter of cheese mixture and one-quarter of tomatoes. Return pizzas to grill and cover grill with lid; cook until bottoms are well browned and cheese is melted, 3-5 minutes, checking bottoms frequently to prevent burning. Transfer pizzas to cutting board; repeat with remaining 2 crusts. Sprinkle pizzas with basil and coarse salt to taste; cut into wedges immediately.

PIZZA ON THE GRILL WITH CHERRY TOMATOES, MOZZARELLA AND ARUGULA
These grilled pizzas require no precooked sauce, though you could use some if you wanted to. The cherry tomatoes warm up but don't collapse as they would in a hot oven. The arugula is sprinkled on when the pies come off the grill.

- Prepare a hot grill. Meanwhile, cut the cherry tomatoes in half along the equator and place near the grill, along with the olive oil, salt and pepper, mozzarella and arugula.
- Oil the hot grill rack with olive oil, either by brushing with a grill brush or by dipping a folded wad of paper towels in olive oil and using tongs to rub the rack with it. Place a round of dough on a lightly dusted baker's peel or rimless baking sheet. Slide the pizza dough from the peel or baking sheet onto the grill rack. If the dough has just come from the freezer and is easy to handle, you can just place it on the rack without bothering with the peel. Close the lid of the grill - the vents should be closed --- and set the timer for 2 minutes.
- Lift up the grill lid. The surface of the dough should display some big air bubbles. Using tongs, lift the dough to see if it is evenly browning on the bottom. Rotate the dough to assure even browning. Keep it on the grill, moving it around as necessary, until it is nicely browned, with grill marks. Watch closely so that it doesn't burn. When it is nicely browned on the bottom (it may be blackened in spots), use tongs or a spatula to slide the dough onto the baking sheet or peel, and remove from the grill. Cover the grill again.
- Make sure that there is still some flour on the peel or baking sheet and flip the dough over so that the uncooked side is now on the bottom. Brush the surface lightly with oil, then top with cherry tomatoes and shreds or slices of mozzarella. You can place the cherry tomatoes cut side up or cut side down, or alternate them cut side up, cut side down. Sprinkle with coarse sea salt and freshly ground pepper.
- Slide the pizza back onto the grill. If using a gas grill, reduce the heat to medium-high. Close the lid and cook for 2 to 3 more minutes, until the bottom begins to brown. Open the grill and check the pizza; if the cheese hasn't melted, leave for a few more minutes. If the bottom is getting too dark, move the pizza to a cooler part of the grill and close the top. Use a spatula or tongs to remove the pizza to a cutting board. Scatter the arugula on top, cut into wedges and serve. Repeat with the other two pizza crusts.
GRILLED BACON LETTUCE TOMATO AVOCADO PIZZA
Amazing pizza you can make at home in just a few minutes. You can make your dough the day before, or use store bought. We usually just wait a few hours for our dough to be ready. It is so easy, give it a try.

- Mix Flour and Yeast and Salt together in your mixing bowl fitted with a dough hook or in your processor bowl with your plastic dough blade. Add water and oil and knead for 5 minutes until dough is smooth and is in the shape of a little ball. Split the dough into 2 balls and spray a bowl with Pam, coat both balls with Pam and cover and let rest in a warm spot for about 2 hours or till double in size. If you are making your dough ahead of time, put it in the refrigerator until ready to use.
- Once your dough is ready, punch it down and let it rest for about 15 minutes while you assemble your toppings.
- Pre-cook 10 slices of bacon until very crisp and break into small pieces. Make a salad using the cherry tomatoes sliced in half, avocado cut into chunks and lemon juice, salt and pepper and mayonnaise.
- Shape dough into round disks the size of a dinner plate. Brush a small amount of olive oil onto the dough. Once your grill is very hot, toss the disk, oiled side down onto the grill for about 3 or 4 minutes. You will see the dough start to blister and crackle, turn the dough over. Top the dough with cheese and bacon, Reduce the heat of your grill and put the cover down. Cook for 5 minutes until cheese is bubbly and bottom of dough is nicely browned. Slide pizza off the grill onto dinner plates.
- Top warm pizza with lettuce and arugula or any salad green you love. then top it with the avocado tomato salad.
- Use any topping you love or that are left over in your fridge. That's how we came up with this one, and now it is our favorite!
- Cut each pizza into 6 wedges.
- This recipe makes 2 pizzas.

Place oiled side down on barbecue. Grill until bottom is golden, about 2 1/2 minutes. Brush top with oil. Using tongs, turn bread over; grill until second side is golden, about 2 minutes. Transfer to baking sheet. Brush bread with oil. Repeat with remaining dough pieces. (Can be made 4 hours ahead. Cover with foil; let stand at room temperature. Before continuing, prepare barbecue; use medium-high heat.)
- Sprinkle Parmesan and Fontina over breads. Top each with tomato slices, corn kernels, parsley and jalapeño. Drizzle with oil. Place breads on barbecue; cover loosely with foil. Grill until cheese melts, watching closely, about 2 minutes. Cut each bread into pieces; serve warm.

- Heat a skillet over medium heat. Add pistachios; cooking, shaking often, until toasted, about 5 minutes.
- Make the pesto by combining the pistachios, avocado, basil leaves, Parmesan, garlic, salt and pepper in a blender. Pulse until the mixture is roughly chopped and then with the blender running, slowly stream in 1/4 cup olive oil. Continue blending until the pesto is a thick paste, scraping down the sides of the blender as needed. Set the pesto aside.
- Preheat the grill for 10 minutes on medium heat. Spread the butter on the corn, then wrap each ear of corn in Reynolds Wrap® Aluminum Foil. Place the corn on the grill, close the lid and grill the corn, turning it frequently until it is tender, 15 to 20 minutes. Unwrap the corn and when cool enough to handle, slice the kernels off the cob.
- Brush both sides of the flatbreads with 2 tablespoons olive oil and grill them for 1 to 2 minutes on each side to warm them. Remove the flatbreads from the grill and top with the avocado pesto, Gruyere, mozzarella, red onions and corn.
- Return the flatbreads to the grill, close the lid and grill until the cheese is melted, about 3 minutes.
- Remove the flatbreads from the grill and transfer them to serving plates. Top the flatbreads with arugula and crushed red pepper flakes (optional) and then slice and serve immediately.
