2 pork tenderloin
3 tablespoons liquid honey
3 tablespoons mustard (use the "grainy" kind for this)
3 tablespoons balsamic vinegar
3 tablespoons oil (can use olive or vegetable oil)
2 tablespoons minced fresh garlic (or to taste)
2 green onions, finely chopped
1/2 teaspoon fresh ground black pepper (or to taste)

Steps:

  • To make the marinade; mix the honey, mustard, balsamic vinegar, oil, garlic, green onions and pepper in a large bowl.
  • Add in the pork tenderloins, and turn to coat.
  • Cover and place in the refrigerator for 24 hours.
  • When ready to cook the pork, remove from the fridge and reserve the marinade liquid.
  • Place the pork on the grill, and brush with reserved marinade.
  • Close the grill lid and cook, turning and basting one or two times.
  • Cook for about 18-20 minutes, or until inside has a hint of pink.
  • Transfer pork to a cutting board, and let rest for 10 minutes.
  • Slice into about 1/2-inch slices (or smaller).
  • Serve on a platter with roasted potatoes.

4 garlic cloves, finely chopped
1 tablespoon chopped fresh rosemary, plus rosemary branches for garnish
1/2 cup balsamic vinegar
3 tablespoons honey
2 tablespoons olive oil
1 tablespoon Dijon mustard
salt & freshly ground black pepper
1 3/4-2 lbs pork tenderloin
canola oil, for searing

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the glaze: Put garlic and rosemary in a small bowl. Add the vinegar, honey, olive oil, mustard, and salt and pepper, to taste, and stir to combine.
  • For the pork: Slice the tenderloin into 1-inch thick medallions (rounds). Cover the bottom of a medium skillet with a light film of canola oil and heat over medium-high heat until hot. Add the pork slices in 1 layer, season with salt and pepper, and sear for 1 minute. Turn and sear for 1 more minute, until lightly browned. Transfer the slices in 1 layer to a shallow baking dish.
  • Pour the glaze over the slices and turn them to coat.
  • Roast for 8 to 10 minutes, until a thermometer inserted reaches 140 degrees F for medium. Remove from the oven and keep warm, loosely covered until ready to serve.
  • To serve place pork medallions on a platter and spoon the balsamic-honey glaze over them. Garnish the platter with the rosemary sprigs.

½ cup balsamic vinegar
2 cloves garlic, finely chopped
2 teaspoons chopped fresh rosemary
2 teaspoons honey
fine sea salt to taste
freshly ground pepper to taste
1 (1 pound) pork tenderloin

Steps:

  • Whisk balsamic vinegar, garlic, rosemary, honey, salt, and pepper together in a bowl. Place pork in a resealable plastic bag and pour balsamic mixture on top to coat. Squeeze out excess air, and seal the bag. Place the bag in a container to avoid leaks, and marinate in the refrigerator 6 to 8 hours.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove pork from the marinade and shake off excess. Place pork in a roasting pan or baking dish. Reserve marinade.
  • Roast pork in the preheated oven until slightly pink in the center, about 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork from the oven, place on a cutting board, and cover loosely with aluminum foil. Let rest for 10-20 minutes.
  • While pork is resting, pour marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes. Serve with the roasted tenderloin.

1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1/2 cup balsamic vinegar
1/2 cup packed brown sugar

  • Preheat oven to 425°. Sprinkle pork with salt and pepper. In a large ovenproof skillet, heat oil over medium-high heat. Brown pork on all sides. This recipe came to me recently in one of several online newsletters I subscribe to. With pork tenderloin being on special this weekend, I decided to try it. It is actually a barbeque recipe but I did it indoors on the broiler with good results. It was good with one hour of marinating so you can imagine how good it would be with a full 24!

2 tablespoons honey
2 tablespoons grainy mustard
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb pork tenderloin (2)

Steps:

  • In a large bowl, combine the honey, mustard, vinegar, oil, garlic, salt and pepper; add the pork, turning to coat. This can be done up to 24 hours before cooking.
  • If not cooking immediately, cover and refrigerate until ready to do so.
  • Reserving the marinade, place the pork on a greased grill over medium-high heat; brush with the marinade.
  • Close the lid and cook, turning occasionally, for about 18 minutes or until just a hint of pink remains inside.
  • Transfer to a cutting board; tent with foil and let stand for 5 minutes.
  • Cut into 1/2-inch thick slices.
