ROASTED RED PEPPER & PROVOLONE GRILLED CHICKEN SANDWICH



Roasted Red Pepper & Provolone Grilled Chicken Sandwich image

This sandwich is a great combination of creamy roasted red pepper spread, melted provolone cheese, tomatoes, grilled onions and chicken all atop a moist, chewy pretzel bun.

4 pretzel buns
4 chicken breasts
4 slices provolone
1 tub alouette flame-roasted red pepper spread
1 large tomato sliced
1 medium onion sliced
Lettuce
2 Tbsp olive oil

Steps:

  • Start by pounding your chicken breasts to tenderize them so they cook evenly. Add olive oil to your pan on medium-high heat and cook on each side for about 4 minutes or until cooked thoroughly. In the last couple of minutes of cook time, place a slice of provolone on top of each chicken breast, and cover with lid. Let the cheese get completely melted. After chicken is cooked, let rest for 5 minutes.
  • Meanwhile, place 4 slices of onion in same pan and cook on each side until well browned. Slice your pretzel buns and spread each top with 2-3 Tbsp of alouette spread. Assemble the rest of your sandwich with the chicken, onions, tomato slices and lettuce. Serve hot.

4 slices multi-grain bread
4 (3/4-oz.) slices provolone cheese (from deli)
2 roasted red bell peppers (from 7.25-oz. jar), drained, cut into 1-inch strips
1 tablespoon margarine or butter, softened

Steps:

  • Top each of 2 bread slices with 1 cheese slice, half of bell pepper strips and another cheese slice. Top with remaining bread slices. Spread margarine on both sides of sandwiches.
  • Heat large skillet or griddle over medium heat until hot, or to 375°F. Add sandwiches; cook 2 to 4 minutes on each side or until bread is golden brown and cheese is melted.

What a lovely surprise this sandwich is. Not only does it taste great, it is really quick and easy to make. Make sure to use the chutney it adds a nice depth to the overall flavor of the sandwich.

Number Of Ingredients 10

2 slices bread, Italian, thick
2 tablespoons mayonnaise (or miracle whip)
1 tomatoes, cut into four thin slices
1/4 teaspoon salt
1/4 teaspoon pepper, fresh ground black
1 tablespoon basil, thinly sliced fresh
3 slices turkey, oven roasted
2 slices cheese, provolone
1 tablespoon mango chutney
1 tablespoon butter, frying

Steps:

  • Spread the mayonnaise on the two slices of bread.
  • Add the tomato slices and sprinkle with salt and ground pepper.
  • Next add the sliced basil over the tomato.
  • Now add the turkey slices.
  • Add the mango chutney to one of the slices of cheese, then top with the other slice.
  • Lastly you will add the cheese slices over top of the turkey meat.
  • Top with your remaining slice of bread and lightly butter, both sides.
  • Place in a medium low pan and fry until golden brown.
