GRILLED GROUPER AND STEWED WHITE BEANS WITH ARUGULA AND TOMATOES

Grilled Grouper and Stewed White Beans with Arugula and Tomatoes image

Provided by Food Network

Categories     main-dish

Time 1h40m

Yield 3 to 4 servings

Number Of Ingredients 11

8 ounces applewood-smoked bacon strips
1 small yellow onion, diced
3 pounds dried white beans
1/4 cup high-quality chicken stock or broth
3 tablespoon salt
3 tablespoon black pepper
1 cup diced tomatoes
2 cups arugula
Three to four fresh 6-ounce grouper fillets or like fish
1 to 2 tablespoons olive oil
Sea salt and pepper

Steps:

  • For the beans with arugula and tomatoes: Slice the bacon strips into 4 even pieces and cook in a large stock pot over medium-high heat until brown and starting to get crispy. Add the onion and stir, making sure to scrape the bottom of pot. Cook until the onion is soft, about 5 minutes. Add the beans, chicken stock, 8 cups of water, salt and pepper. Bring to a boil, then lower the heat to medium-low and simmer. Stir the beans frequently and check the water level: If they start looking dry add a little more water. When the beans no longer float, after about an hour, reduce the heat to low. Continue cooking until the beans are soft, 25 to 30 minutes more.
  • For the grilled fish: Heat a grill or heavy grill pan over medium-high heat. If using a grill, coat the fish with the oil, season with salt and pepper and add to the grill using tongs to adjust the fish and prevent sticking. If using a grill pan, season the fish with salt and pepper and add the oil to the grill pan (if the oil begins to smoke, reduce the heat slightly). Cook the fish until white on all sides and edges and firm to the touch, 3 to 4 minutes per side.
  • Just before serving, add the tomatoes and arugula to the beans and stir in to heat the tomatoes and wilt the arugula, just a few minutes. Serve with the fish.

WHITE BEAN AND SAUSAGE STEW

White Bean and Sausage Stew image

This recipe is a combination of things I had on hand and wanted to make a hearty stew--something to stick to the ribs. Serve with rolls, salad for a complete meal.

Provided by mightyro_cooking4u

Categories     Stew

Time 2h20m

Yield 4 serving(s)

Number Of Ingredients 16

1 cup dried white bean
1/2 cup vegetable oil
1/2 cup all-purpose flour
1/2 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped celery
1/2 teaspoon salt
1/2 teaspoon dried thyme
2 bay leaves
1/4 teaspoon ground cayenne pepper
1/2 teaspoon fresh ground pepper
1/2 lb smoked ham, diced
1/2 cup sliced smoked sausage
1 1/2 tablespoons minced garlic
2 (14 1/2 ounce) cans chicken broth
3 cups sliced mushrooms (use white and or or a combination of wild mushrooms)

Steps:

  • Soak the beans overnight, covered with water; drain.
  • In a heavy 6-quart Dutch oven or cast- iron pot, heat the oil over medium-high heat. Add the flour and cook, stirring continuously, until it becomes dark brown (like dark chocolate), for 20 to 25 minutes. (Do not rush the process and do not not stop stirring or the roux will burn, and you will have to start over. Stay away from the phone).
  • Add the onion, bell pepper, celery, salt, thyme, bay leaves, cayenne and black pepper. Cook, stirring, for 5 minutes.
  • Add the ham and sausage and cook, stirring, for 3 minutes or until the ham and sausage begin to cook. Stir in the beans and garlic. Stir in the chicken broth. Bring to a boil, reduce the heat and simmer, uncovered, for 1 1/2 hours or until the beans are tender, stirring occasionally. If the stew becomes too thick, stir in more broth (or water if you don't have the broth).
  • Add the mushrooms. Cook for 30 minutes longer.

RABBIT WITH WHITE BEANS RECIPE

Rabbit With White Beans Recipe image

Provided by á-170456

Number Of Ingredients 11

1 pound white beans soaked overnight
2 cups carrots diced
1 large onion diced
4 celery ribs diced
3 garlic cloves minced
Chicken broth as needed
2 young rabbits cut into pieces
1 pound bacon
1 cup tomato puree
Salt to taste
Freshly-ground black pepper to taste

Steps:

  • Place white beans, carrot, onion, celery and garlic in a large oven-safe pot or Dutch oven. Add chicken broth to one inch over beans and vegetables. Bring to a boil, then reduce heat and simmer for about one hour or until beans are softened, but not cooked completely. Cook the bacon in a large skillet until done. Remove bacon, leaving grease in the pan, and break into bite-sized pieces. Fry rabbit pieces in bacon until browned. Add browned rabbit, bacon and tomato puree to pot. Season with salt and pepper. Cover and bake for 1 1/2 hours at 350 degrees. Check occasionally to make sure that liquid has not cooked out. Add additional chicken broth to cover rabbit, if needed. This recipe yields 6 to 8 servings.

HERBED WHITE BEAN AND SAUSAGE STEW

Herbed White Bean and Sausage Stew image

Here's a meaty, cold-weather stew laden with white beans, sweet Italian sausage, rosemary, thyme, cumin and garlic. It is deeply flavored and complex, but quite easy to make. Pan-fry the sausages in a bit of olive oil, then sauté the vegetables with cumin and tomato paste in the drippings. Add plenty of water and the dried beans that, wait for it, you did not have to soak. Simmer until the house is fragrant and the windows fog up (about 2 hours).

Provided by Melissa Clark

Categories     dinner, one pot, main course

Time 2h30m

Yield 6 to 8 servings

Number Of Ingredients 15

2 tablespoons extra-virgin olive oil, plus more for serving
1 pound sweet Italian sausage, sliced 3/4-inch thick
1 tablespoon tomato paste
1/2 teaspoon ground cumin
2 medium carrots, finely diced
2 celery stalks, finely diced
1 onion, chopped
2 garlic cloves, finely chopped
1 pound dried great Northern beans, rinsed and picked through
2 teaspoons kosher salt, or to taste
2 thyme sprigs
1 large rosemary sprig
1 bay leaf
2 teaspoons balsamic vinegar, plus more for serving
1/2 teaspoon black pepper, plus more to taste

Steps:

  • Heat oil in a large stockpot over medium-high. Add the sausage and brown until cooked through, about 7 minutes. Using a slotted spoon, transfer to a plate lined with a paper towel.
  • Add the tomato paste and cumin to the pot. Cook, stirring, until dark golden, about 2 minutes. Add the carrots, celery, onion and garlic. Cook, stirring, until the vegetables have softened, about 5 minutes. Stir in the beans, 8 cups water, salt, thyme, rosemary and bay leaf. Turn the heat up to high and bring to a boil. Then reduce heat to low and simmer gently until the beans are tender, about 2 hours, adding more water if needed to make sure the beans remain submerged.
  • When beans are tender, return the sausage to the pot. Simmer for 5 minutes. Stir in the vinegar and pepper. Taste and adjust seasoning. Ladle into warm bowls and serve drizzled with more vinegar and olive oil.
