Steps:
- Preheat griddle pan to medium-high heat.
- Heat small skillet over medium heat.
- Mix sauerkraut, beer or cider, and mustard in small skillet and simmer 10 minutes.
- Cut kielbasa into 4 portions and split sausage pieces in half, opening them up.
- Grill the sausages on hot griddle until crispy on both sides, about 7-8 minutes total.
- Wipe some of the grease off the griddle and drop heat to low.
- Lightly butter 1 side of each slice of bread. Build butter-side out sandwiches out of grilled kielbasa, sauerkraut, and 2 slices of cheese; spread the top of each sandwich with red pepper relish before setting in place.
- Grill the sandwich on griddle until crispy.
- Cut and serve.

Steps:
- Whisk together mayonnaise and Sriracha sauce in a small bowl until blended.
- Spread one side of each bread slice with this mixture.
- Dividing evenly, top four of the bread slices with half of the cheese, turkey, and sauerkraut.
- Add remaining cheese.
- Top with remaining bread slices, coated sides down.
- Place butter and oil in a heavy skillet large enough to hold all four sandwiches.
- Place over medium heat.
- When butter melts, add sandwiches.
- Cook, pressing down gently with a metal spatula, until the bread is golden brown and cheese has melted, about 2 to 3 minutes per side. Add more butter and oil if needed.

- Preheat a grill to medium-high (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Using your hands, remove about 1/2 cup bread from each side of the loaf. Brush hollowed-out sides of bread with oil.
- Grill kielbasa, flipping once, until browned and heated through, 8 to 10 minutes. Grill bread, flipping once, until lightly marked by grill, about 3 minutes.
- Transfer kielbasa and bread to a cutting board. Halve kielbasa crosswise. Spread hollowed-out sides of bread with mustard; top each with half of the sauerkraut and a halved kielbasa ring. Cut each into 4 wedges. Serve immediately.
