BEST-EVER GRILLED RIBS
Steps:
- Preheat a grill (charcoal or gas) to 300˚, with the coals or flames only under one half of the grill.
- For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine.
- Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.
- Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180˚ to 190˚, about 80 to 90 minutes.
- Increase the grill temperature to 375˚ and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.
- Transfer the ribs to a cutting board, cut into pieces and serve.

- Prep the beef back rib. Rinse the rib and completely dry by patting it down with a paper towel. Use the sharp end of the knife to lift a corner of the thin membrane at the back of the rib. Then using a paper towel, grasp the lifted corner and pull it off the rack. You can also ask the butcher to do it for you.
- Make the BBQ beef rub. Get a small mixing bowl and combine black pepper, sea salt, garlic powder, onion powder, celery powder, and smoked paprika. You can also add an extra teaspoon of cayenne pepper to make it a tad bit spicier.
- Season the rib. Spread mustard evenly all over the rib. This will help the rub cling better to the meat. Now generously apply the rub on it and massage it with your hands for it to adhere. This makes the most amazing dark bark on your grilled ribs.
- Let it marinate. Transfer the rib into a baking sheet and cover with foil. Put it in the fridge for 4 to 12 hours to marinate. Take the seasoned rib out at least 30 minutes before putting it in the grill. At this point, you can sprinkle it a little more with dry rub.
- Prep the grill. While the rib is resting, it's best to start preheating your grill or smoker to 225° F. I personally prefer using Post Oak wood for a more authentic Texas Smokehouse flavor. You want to place the wood on one side of the grill and reserve the other half for the rib.
- Let it smoke! Place the rib directly on the grill away from the burning wood. Close the griller lid and leave it to smoke for the next 3 hours.
- Check the temperature. After 2 hours, take the temperature of the rib with a meat thermometer. If it shows anywhere 160° to 165° F, then wrap it in butcher paper. You can use foil too but it softens the bark. Then place it back in the smoker for another 1 to 2 hours. After the first hour check the temperature again. We're looking for anywhere between 203° to 210° F.
- Rest and serve. Once you get the desired temperature and tenderness of the rib, take it off the grill and unwrap it. Let it rest for 30 minutes to an hour before you slice and serve it with your favorite side dish.

- Cut ribs into serving size portions. Place in a greased 15x10x1-in. baking pan. Cover and bake at 350° for 1-1/4 hours or until tender., In a small saucepan, combine the remaining ingredients. IRON WORKS BBQ'S BONELESS BEEF RIBS
Steps:
- Pound the boneless beef ribs to tenderize. Rub 3 to 4 tablespoons dry rub into each rib. Sprinkle garlic and pepper over each rib and let marinate in the refrigerator for 30 minutes.
- Preheat a grill to 250 degrees F. Grill ribs for 10 minutes, then turn ribs and grill on other side for 10 minutes or until cooked to desired degree of doneness. Pour barbecue sauce over ribs after grilling, if desired, and serve.

- For the ribs: Heat the oven to 325 degrees. Season the ribs all over with salt. In a large Dutch oven or other heavy pot, heat 2 tablespoons oil over medium-high heat. Add the ribs and brown on all sides, turning with tongs, 5 minutes a side. Transfer to a platter and pour off all but 2 tablespoons fat.
- Add the onion, carrots, garlic, lemon grass and ginger to the pot. Cook over high heat until lightly browned, 3 minutes. Stir in the soy sauce, brown sugar, rice vinegar and 3 cups water, and bring to a boil. Return the ribs to the pot, immersing them in the liquid. Tightly cover and bake, turning the ribs once or twice until very tender, about 3 1/2 hours. Let the ribs cool in the liquid, then drain well. (Ribs can be refrigerated for up to 24 hours.)
- For the glaze: In a heavy saucepan, combine all the glaze ingredients and simmer over medium heat until thick, about 10 minutes. Strain.
- Prepare a grill for direct grilling over high heat. Brush and oil the grate. Cook the ribs until dark brown all over, 3 to 5 minutes a side, basting with the glaze. Serve with the remaining glaze drizzled on top or passed separately in a bowl.
EASY GRILLED STICKY RIBS
I'm showing you my favorite way to grill ribs, which of course, is not the same as barbecued ribs. Those are cooked low and slow in a smoker and served as-is, with BBQ sauce on the side. Whereas, these are cooked first, then sliced, and then each rib is glazed with our beautiful sticky sauce on the grill.

- Preheat the oven to 250 degrees F (120 degrees C).
- Mix salt, sugar, black pepper, paprika, and garlic powder for dry rub together in a small bowl. Set aside.
- Line a large sheet pan with heavy-duty aluminum foil. Place rack of ribs on the prepared pan, bone side down. Poke all over with a sharp knife. Make shallow slits across at an angle, and then repeat the opposite way; this allows the dry rub to penetrate. Coat on both sides with rub; flip back over, ensuring the bone side is down. Wrap tightly with foil.
- Transfer to the center of the preheated oven and bake for 2 hours. Remove from the oven and let cool to room temperature. Refrigerate until cold and firm, at least 2 hours, up to overnight.
- Preheat a charcoal grill until coals are very ashy and hot.
- Remove from the refrigerator, unwrap, and brush off excess fat. Slice between the bones to separate each rib.
- Combine ketchup, brown sugar, soy sauce, vinegar, oil, and cayenne with a spoon in a bowl for glaze.
- Place ribs on the preheated grill and cook for 2 minutes; flip and brush over glaze. Flip and repeat process until ribs are as caramelized as you prefer, about 10 minutes more.
- Remove to a plate and brush over one more application of glaze. Serve.
