Parmesan Crusted Crushed Turnips image

Parmesan Crusted Crushed Turnips are a delicious, low-carb alternative to crushed potatoes!

12 small to medium turnips (peeled)
Salt
2 tablespoons olive oil
3 cloves garlic (minced)
Freshly ground black pepper
1 cup freshly grated Parmesan cheese (or as needed)
Chopped fresh chives

Steps:

  • Place peeled turnips in a pot of salted water to cover. Bring to a boil. Cook 20 to 30 minutes or until turnips can be pierced easily with a paring knife. Drain. Let cool slightly.
  • Preheat oven to 375 degrees.
  • Place the turnips on a clean kitchen towel or double layer of paper towels. Gently press each one down until it's approximately 1/2-inch high. Let them drain for 15 minutes then carefully flip them over onto a dry section of the towel or onto fresh paper towels so the other side drains and dries a bit.
  • Combine garlic, olive oil and salt and black pepper, to taste in a small bowl.
  • Line a baking sheet with parchment paper or nonstick aluminum foil. Place the flattened turnips on the lined baking sheet. Brush each turnip with a little of the olive oil and garlic combination. Sprinkle Parmesan cheese over each turnip, gently pressing it down.
  • Carefully and quickly flip each turnip over. Repeat with the remaining olive oil and garlic combination and cheese.
  • Bake for 20 to 25 minutes. Flip each turnip and bake an additional 15 minutes. Garnish with chopped fresh chives and serve.

Sauteed Turnips with Herbs image

Great, hearty, and earthy vegetarian recipe with heavy French influences. My first attempt with turnips has become a house favorite I can't wait to make again!

1 oz olive oil
1 medium onions, yellow or white
1 pkg mushrooms, fresh, any
2 - 3 medium turnips, no greens
salt and pepper, to taste
several pinch herbs of choice
1 or 2 dash(es) red wine
1 Tbsp butter
1 Tbsp flour

Steps:

  • 1. Heat olive oil in medium saute pan over medium to medium-low heat.
  • 2. Slice onions, turnips, and mushrooms thinly (1/4 inch or so) and add to pan. Cover and stir occasionally.
  • 3. When all the veggies are mostly cooked and tender, add salt, pepper, herbs, and a splash of red wine. Stir and return cover.
  • 4. In a separate dish, blend butter and flour. I have found this easier on a small plate with a fork. This is a French technique with a fancy name for thickening sauces.
  • 5. Turn heat to low and add butter-flour mixture, stirring gently until well blended.
  • 6. I like to serve over rice or chicken.
  • 7. Variations: add finely chopped bacon or pancetta, brown in pan before adding sliced veg. Turnips can be omitted for a great sauce over meat. Omit red wine and add spices like curry, cinnamon, and garam masala for Indian flair, or cumin, garlic, and adobo for a Latin touch.

1/4 cup olive oil
1/4 cup dry red wine
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon coarsely ground pepper
1 teaspoon Worcestershire sauce
2 garlic cloves, minced
4 beef ribeye steaks (3/4 pound each)
STEAK SEASONINGS:
2 teaspoons kosher salt
1 teaspoon sugar
1 teaspoon herbes de Provence
1 teaspoon coarsely ground pepper
HERB BUTTER:
1/4 cup butter, softened
1 tablespoon minced fresh parsley
1 teaspoon prepared horseradish

Steps:

  • In a shallow dish, combine the first 8 ingredients. Add the steaks and turn to coat. Cover; refrigerate overnight., Drain and discard marinade. Combine the steak seasonings; sprinkle over steaks., Grill steaks, covered, over medium heat or broil 3-4 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., For herb butter, in a small bowl, beat the butter, parsley and horseradish until blended. Spoon 1 tablespoon herb butter over each steak.
