Grilled Zucchini Bread with Mascarpone and Berries image

Grill your zucchini bread for a summer dessert, topped with fresh berries.

Vegetable oil, for grilling
One 9-inch storebought or homemade zucchini bread, cut into 8 slices
Sugar, for sprinkling
1 cup mascarpone cheese
1/2 pint raspberries
1/2 pint blueberries

Steps:

  • Light a grill or preheat a grill pan and oil the grates. Lightly brush both sides of the zucchini bread slices with oil, sprinkle with sugar, and grill over moderately high heat, turning once, until dark brown grill marks form on both sides, about 2 minutes per side.
  • Transfer the zucchini bread to plates and top with a dollop or two of mascarpone. Spoon the berries on top and serve.

1 tablespoon olive oil, plus more for brushing
1 premade or store-bought pizza dough
All-purpose flour, for dusting
1/2 cup grated Parmesan
2 small zucchini, cut crosswise on a bias 1/8-inch thick
3 shallots, thinly sliced

Steps:

  • Preheat grill over medium-high heat.
  • Oil barbeque grill topper or a baking sheet tray. With your hands work the dough ball out onto a lightly floured surface into a rectangular shape about 1-inch thick. Shape doesn't have to be perfect. Place dough on lined baking sheet. Brush with some olive oil, then sprinkle top with grated Parmesan. Place 1 row of zucchini rounds along 1 side of dough. Working in and along side of the zucchini arrange 1 row of shallots followed by another row zucchini. With your fingertips gently press vegetables into the dough. Drizzle with 1 tablespoon olive oil. Place on preheated grill and cook for about 20 to 25 minutes until golden brown and crispy. Remove from grill, cut and serve warm.

1 teaspoon chopped fresh thyme leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt
1/2 cup Greek yogurt
1/4 cup milk
2 medium zucchini, each cut lengthwise into 6 wedges
Nonstick cooking spray
Freshly ground black pepper
Lemon wedges, for serving

Steps:

  • Preheat a grill or grill pan for cooking over medium-high heat until hot, about 15 minutes.
  • Mix the panko, thyme, pepper flakes and 1 teaspoon of salt in a medium bowl.
  • Mix the yogurt and milk in a medium bowl. Dip the zucchini wedges in the yogurt sauce, then dredge in the panko. Spray the zucchini sticks with nonstick cooking spray and grill over medium-high heat until the zucchini is nicely marked and tender, about 5 minutes per side. Season with kosher salt and freshly ground black pepper. Serve with lemon wedges.

2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
3 eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
2 cups shredded zucchini
1 can (8 ounces) crushed pineapple, drained
1 cup chopped pecans
1/2 cup raisins
1/2 cup chopped dates
1/2 cup chopped maraschino cherries, patted dry

Steps:

  • In a large bowl, combine the flour, sugar, cinnamon, salt, baking soda and baking powder. In another bowl, whisk the eggs, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the zucchini, pineapple, pecans, raisins, dates and cherries., Pour into two greased 9x5-in. loaf pans. Bake at 350° for 55-60 minutes or until bread pulls away from sides of pans and a toothpick inserted in the center comes out with a few moist crumbs. Cool for 10 minutes before removing from pans to wire racks to cool completely.
