1/2 cup kosher salt
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme
3 medium zucchini, ends trimmed, sliced lengthwise into 1/4-inch-thick planks
Olive oil, for brushing
1/2 cup crumbled feta cheese

Steps:

  • For the herb salt: Combine the salt, oregano and thyme in a small bowl and mix to blend.
  • For the grilled zucchini: Brush the zucchini planks on both sides with olive oil and sprinkle on both sides with some of the herb salt. Transfer the zucchini to a grill pan set over medium heat and cook until tender, about 5 minutes, flipping halfway through. Remove the zucchini to a serving plate and sprinkle with the feta.

2 medium zucchini; sliced lengthwise into 1/4" thin strips
1/4 cup extra-virgin olive oil + 1 tbsp for brushing
1 tsp finely grated lemon zest
2 tbsp freshly squeezed lemon juice
1 tsp Dijon mustard
Salt; and freshly ground black pepper
2 tbsp pine nuts
2 oz feta cheese (crumbled)
Fresh basil leaves

Steps:

  • Heat the grill to high heat. Brush the zucchini on both sides with olive oil and season with salt and pepper, to taste. Grill for just about 1 minute per side (until slightly charred and wilted), then remove them to a platter.
  • In a small pan, toast the pine nuts on medium high heat until fragrant.
  • Whisk together the Dijon mustard, lemon juice, lemon zest, and salt and pepper, to taste. Slowly whisk in the olive oil until emulsified.
  • Drizzle the vinaigrette over the zucchini. Top with crumbled feta cheese, pine nuts and basil.

1-2 large zucchini, sliced at an angle 1/4-inches thick
Kosher salt
2 teaspoons hot red pepper flakes
3 teaspoons minced fresh garlic
3 teaspoons dried oregano
3 teaspoons dried parsley
3 tablespoons olive oil
4 ounces feta cheese, crumbled
1/4 cup pine nuts

Steps:

  • Slice the zucchini on a cutting board at an angle about 1/4 inch thick.
  • Brush each side with olive oil and arrange the slices on a plate.
  • Season with the zucchini with red pepper flakes, garlic, oregano and parsley.
  • Apply cooking spray to the grill grates then preheat grill to medium heat.
  • Grill zucchini slices for about 2 to 3 minutes per side until you see light grill marks.
  • Arrange the grilled zucchini pieces on a serving platter and top with the feta cheese and pine nuts.

Canola oil
Salt and freshly ground black pepper
1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice

Honey
2 tablespoons finely chopped fresh flat-leaf parsley, plus leaves for garnish
1/2 cup extra-virgin olive oil
Wedge Pecorino Romano, for shaving
2 tablespoons toasted pine nuts

Steps:

  • Heat the grill to high heat. Brush the zucchini on both sides with canola oil and season with salt and pepper, to taste. Grill for just about 1 minute per side (until slightly charred and wilted), then remove them to a platter.
  • Whisk together the Dijon mustard, lemon juice, lemon zest, honey, to taste, and salt and pepper, to taste, and parsley in a small bowl. Slowly, whisk in the olive oil until emulsified.
  • Drizzle the vinaigrette over the zucchini and let it marinate for 15 minutes at room temperature. Top with shaved cheese, pine nuts, parsley and mint leaves.

100g feta cheese

1 red chilli , deseeded and chopped

  • Brush a griddle pan with a little of the oil and place on a high heat, then griddle courgettes in batches for 2-3 mins on each side until charred and cooked through. Keep warm while you cook the rest.

This skillet of warmed feta and nuts can tide guests over before dinner or embellish a meal of grilled lamb kebabs, mixed vegetables, pork or chicken. Inspired by saganaki, a fried-cheese appetizer from Greece, the feta here is surrounded by nuts, olive oil, honey and herbs. Thyme, oregano or za'atar adds earthiness to the salty feta and sweet honey, but you could incorporate orange or lemon peel, fresh or dried chile, or any other aromatics you like on spiced nuts. You could also trade the nuts for tomatoes, dates, salami or olives. Whatever you do, be sure to drizzle the herbed honey and oil over each spoonful of feta. Steps:

  • Heat the grill to medium-high. Lightly grease the bottom of a small or medium cast-iron skillet with extra-virgin olive oil.

  • Rinse the zucchini and pat dry. Cut off the tops and slice them lengthways, about 2mm or so thick, so they cook quickly. Grill them in a single layer until browned and softened — I like to do this over high heat on a cast iron pan (if you don't have one a non-stick pan will do), about 2-3 minutes on both sides (slightly less on a non-stick pan). You may have to do this in batches. Set aside to cool.
  • Toast the pine nuts in a pan over medium heat — keep an eagle eye on them and move the pan around continuously so they do not burn. It will only take about a minute.
  • Toss the cooled zucchini slices with the olive oil, lemon juice and season with a good pinch of salt and a few twists of freshly ground pepper. Pile the zucchini onto a serving plate, then scatter over the pine nuts, crumble over the feta cheese and finally add the picked herb leaves.
