1 lb. boneless skinless chicken breasts
1 tsp. chili powder
1 tsp. paprika
Cooking spray
Salt and pepper
1/4 cup buffalo sauce
4 tsp. butter
1/4 cup nonfat plain Greek yogurt
1/4 cup blue cheese
4 reduced calorie hamburger buns

Steps:

  • Slice or pound the chicken into thinner cutlets. Spray with cooking spray and season with chili powder, paprika, salt, and pepper.
  • Heat a grill, grill pan, or skillet over medium high heat. Spray with cooking spray if needed. Cook the chicken for 3-4 minutes per side or until cooked through.
  • Meanwhile mix together the yogurt and blue cheese to create a sauce for the burgers. Season with salt and pepper.
  • Melt the butter and stir it into the buffalo sauce. Toss the cooked chicken breasts in this mixture.
  • Assemble the sandwiches and add lettuce, tomatoes, onions, and any other toppings you like.

4 boneless skinless chicken breast halves (6 ounces each)
3 celery ribs, chopped
2 cups Buffalo wing sauce
1/2 cup chicken stock
2 tablespoons butter
4 teaspoons ranch salad dressing mix
6 hoagie buns, toasted
Optional: Blue cheese or ranch salad dressing, and celery ribs

Steps:

  • In a 3- or 4-qt. slow cooker, combine first 6 ingredients. Cook, covered, on low until chicken is tender, 3-4 hours. Remove from slow cooker. Cool slightly; shred meat with 2 forks and return to slow cooker. Using tongs, serve on hoagie buns. If desired, top with dressing and serve with celery ribs.

½ cup buffalo wing sauce, or more as needed
4 slices LAND O LAKES® Deli American, cut into quarters
8 slider buns, sliced

1 rib celery, cut into 2-inch thin sticks

Steps:

  • Cut each chicken breast in half; place into large resealable plastic food bag. Flatten each to about 1/2-inch thickness with meat mallet.
  • Pour desired amount of buffalo wing sauce into bag; seal bag. Gently shake to coat chicken; refrigerate at least 30 minutes.

1/2 cup olive oil

1/3 cup low-fat buttermilk
1/3 cup crumbled blue cheese
2 teaspoons red wine vinegar
1 teaspoon Worcestershire sauce
1 1/2 cups pre shredded carrots
1 1/2 cups celery matchsticks (from about 3 stalks)
1/3 cup hot sauce, such as Frank's Red Hot
2 tablespoons unsalted butter
8 bone-in chicken thighs (about 2 pounds), skin removed

Steps:

  • Preheat a grill for indirect cooking over medium-high-heat (350 to 400 degrees F).
  • Combine the buttermilk, blue cheese, vinegar and Worcestershire in a medium bowl; add the carrots and celery and toss thoroughly. Allow to sit at room temperature while you cook the chicken.
  • Combine the hot sauce and butter in a small saucepan and bring to a boil; cook until slightly thickened, 1 to 2 minutes.
  • Meanwhile, grill the chicken, meaty-side up, and cook until the underside is well-marked and readily releases from the surface, about 15 minutes. Turn and cook until a thermometer inserted in the thickest part of the meat (not touching bone) registers 165 degrees F, about 15 more minutes.   • For the chicken: Preheat a grill to medium-high heat. Combine the garlic powder, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Place the chicken cutlets on a large plate or baking sheet and drizzle each piece lightly with the oil. Season both sides of the chicken with the garlic powder blend.
  • Grill the chicken, turning once, until cooked through and grill marks appear, 2 to 3 minutes per side. Transfer to a clean platter to rest for 10 minutes, then slice into thin strips and place in a medium bowl.
  • Place the butter and hot sauce in a medium saucepan over medium heat, either on the grill or on a stovetop. Whisk to combine the hot sauce with the butter until melted and smooth. Add to the bowl with the sliced chicken and toss to coat.

Steps:

  • Heat gas or charcoal grill. In small bowl, mix blue cheese, sour cream, celery seed and Worcestershire sauce; set aside.
