GRILLING BISON BURGERS
Grilling bison burgers is a snap! Bison meat is lean, high in protein and iron, and makes perfect burgers when you use these handy grilling tips.

Steps:
- Preheat the grill to medium heat, or 350 F. Divide the ground bison into 3 or 4 equal pieces, gently flattening to form a patty from each piece. Spritz both sides of each patty with cooking spray, then season lightly with burger rub or seasoned salt.
- Grill the patties for 4 minutes on one side, then flip and grill for 3 more minutes, or until the internal temperature reaches 135 to 140 F. Remove from the grill with a clean turner to a clean plate.

Steps:
- Preheat grill to medium-high heat (about 400˚F).
- In a large mixing bowl, gently mix burger ingredients until combined. Shape into 1/4 pound patties.
- Grill burgers for 5 - 6 minutes per side or until internal temperature reaches a minimum of 145˚F (160˚F for well done).
- Remove from grill and immediately serve with your favorite burger toppings.

Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Mix bison, Panko crumbs, egg, Worcestershire sauce, hot sauce, garlic, and pepper together by hand in a bowl; form into 4 patties. Place patties on baking sheet, cover with aluminum foil, and refrigerate until chilled, about 15 minutes.
- Spray the patties with cooking spray and grill until hot and slightly pink in the center, about 5 minutes per side. Top each burger with a slice of cheese; continue cooking until the cheese melts, about 2 minutes more. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
- Sandwich burgers between bun halves.

Steps:
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserve bacon grease.
- Mix bison, bread crumbs, egg, Worcestershire, salt, and pepper in a bowl until evenly combined. The mixture should be slightly sticky and easy to form. Split into 4 equal patties. Use some leftover bacon grease to moisten each side of the patties; this will inhibit them from sticking on the grill and adds a little flavor.
- Cook patties on the preheated grill until browned, about 5 minutes on each side. An instant-read thermometer inserted into the center of each patty should read at least 160 degrees F (70 degrees C). Place Cheddar slices on each patty and continue to grill until melted, about 1 minute more. Remove to a plate.
- Place buns on the grill, sliced sides down, to toast, about 1 minute. Spread mayonnaise over the toasted buns. Add burgers and bacon.
