LOWER FAT BANANA BREAD I
A wonderful banana bread that is lower in fat and calories than most other banana bread recipes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
- In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
- Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
- Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

LOW-FAT BANANA BREAD
This is one of my family's favorite recipes for banana bread. It is moist and delicious. Freezes well. I sometimes like to add blueberries, nuts, chocolate chips.

- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan. Whisk the flour, sugar, baking soda, and salt together in a bowl.
- Beat the egg in a mixing bowl. Whisk in the mayonnaise, bananas, and vanilla extract until evenly mixed. Stir in the flour mixture until no dry lumps remain. Pour the batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- Preheat oven to 350 degrees F.
- In a large mixing bowl combine eggs, mashed banana, sugar, and applesauce.
- Add flour, baking powder, baking soda, salt, cinnamon and nutmeg; mix well.
- Pour batter into a greased 9 x 5 inch loaf pan and bake for 55 to 60 minutes, until crust is golden brown.
- Cut into slices and serve.

LOW FAT SECRET INGREDIENT BANANA BREAD
This is just delicious--moist and flavorful, chock full of protein, and LOW FAT! Oh, and it's at least partly whole wheat. What more could you want?!? This is a great way to work soy into your diet stealthily. :) Oh, and the secret ingredient is tofu. It replaces the fat in traditional recipes, and does a darn good job of it, too! :P Feel free to leave out the nuts. From "Tofu Quick & Easy"

Steps:
- Preheat oven to 350°F.
- Spray a 8.5 x 4.5 x 2" loaf pan with cooking spray.
- Line pan with foil, letting edges overhang, and spray foil with cooking spray.
- Blend or beat the tofu and bananas together in a food processor or mixer until smooth.
- Scrape down the sides.
- Add sugar and vanilla.
- Process until fully blended.
- In a medium bowl, mix together flours, baking powder, baking soda, and salt.
- Add flour mixture to the banana mixture and beat or pulse in a food processor just until smooth.
- By hand, fold in walnuts, if using.
- Spread batter into prepared pan.
- Bake for 30-35 minutes until lightly browned, springy to the touch, and a toothpick inserted into the center comes out clean.
- Cool in pan on a wire rack for 30 minutes.
- Remove from pan.
- Peel off the foil and let the cake fully cool on the wire rack.
- Enjoy!

- Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
- In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
- Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
- Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
- Enjoy!!

Steps:
- Adjust oven rack to middle position and heat oven to 325 degrees. Bake bananas on rimmed baking sheet until skins are completely black, about 20 minutes. (Do not turn off oven.) Cool bananas completely, peel, and mash with potato masher until smooth. Measure 1 1/2 cups mashed bananas and discard any excess.
- Grease a 9 by 5-inch loaf pan. Whisk eggs and vanilla in small bowl. With electric mixer on medium-low speed, mix flour, sugar, baking powder, baking soda, and salt in large bowl until combined. Add oil and cream cheese, 1 piece at a time, and mix until only pea-sized pieces of cream cheese remain, about 1 minute. Slowly mix in egg mixture, then add mashed bananas and beat until incorporated, about 30 seconds.
- Scrape batter into prepared pan and bake until golden brown and toothpick inserted into center comes out with a few crumbs attached, 50 to 60 minutes. Cool for 10 minutes, then turn out onto wire rack and let cool at least 1 hour. Serve. (Bread can be stored at room temperature for up to 3 days.).
