SMOKED GOUDA CHEESE GRITS
Delicious side dish for breakfast or dinner. The Gouda gives a taste unlike other cheese grits I have had. Of course, cheddar or other cheese can be substituted. I got this from a lady in Louisiana.

Steps:
- Bring broth, milk and seasoning to boil.
- Stir in grits.
- Reduce heat and simmer.
- Stir occasionally (about 5-10 minutes).
- Add cheese and butter.
- Stir until melted and the consistency is to your liking.
- I like my grits on the runny side.
- Easily doubled or tripled or more.
GOUDA GRITS CASSEROLE
Spinach adds a wonderful addition to this cheesy casserole dinner made using eggs, corn grits and bacon.

Steps:
- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 2-quart saucepan, heat 2 1/2 cups water, 1 1/2 cups of the half-and-half, the butter and salt to boiling. Gradually stir in grits. Reduce heat to low. Cover; simmer 5 to 7 minutes, stirring occasionally. Remove from heat. Stir in 3/4 cup of the cheese until melted. Cool 15 minutes.
- Stir 2 of the eggs into grits mixture. Pour into baking dish. Bake 20 minutes.
- Meanwhile, in 10-inch skillet, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside. Cook onion in bacon drippings over medium heat, stirring occasionally, until tender. In large bowl, beat remaining 8 eggs, the pepper and remaining 3/4 cup half-and-half with whisk; stir in remaining 1 1/4 cups cheese, the bacon, onion and spinach. Pour over crust.
- Bake 25 to 30 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.

WHITE CHEESE PIZZA WITH GRILLED CORN AND WOOD SMOKED BACON
Steps:
- Preheat oven with pizza stone to 475 degrees F for 30 minutes.
- Gently stretch dough to 11-inches in diameter. Place dough on pizza peel dusted with semolina to prevent sticking. Top dough with the Cheddar and brie cheese. Scatter corn, bacon and parsley leaves. Sprinkle pizza with olive oil then Romano. Slide pizza onto hot stone in oven. Bake 6 to 8 minutes until golden, cut into 6 slices and serve on warm plate.
SMOKY GOUDA GRITS AND SHRIMP

Steps:
- Bring chicken broth to a boil over medium-high heat; stir in grits. Cook, stirring occasionally for 5 to 7 minutes or until thickened. Remove from heat; stir in salt, pepper, butter, and shredded Gouda. Stir until the cheese melts. Set aside and keep warm.
- While the grits are cooking, start cooking the bacon in a large nonstick skillet over medium-high heat until crisp; remove bacon from pan.
- Cook shrimp in the same pan over medium-high heat for 3 minutes or until almost pink, stirring occasionally. (I do this in batches)
- When all shrimp are to the almost pink stage, add all back to pan, if you have removed any to cook in batches. Add lemon juice, Worcestershire sauce, chopped parsley, green onions, and garlic. Cook for 3 minutes. Stir in bacon.
- Spoon grits onto individual serving plates or shallow bowls; top with the shrimp mixture. Serve immediately.

- In a large skillet, cook bacon and corn over medium heat, stirring frequently, until bacon is crisp; drain well, and set aside.
- Preheat oven to 350°; spray a 13 x 9 inch baking dish with cooking spray.
- In a large saucepan, bring broth to a boil over med-high heat.
- Slowly stir in grits; decrease heat, and simmer for 4-5 minutes or until thickened.
- Stir in cream; remove from heat.
- Add cheese, green onion, and bacon mixture to grits.
- Add eggs and salt, stirring until combined.
- Spoon mixture into prepared dish.
- Bake for 40-50 minutes or until golden brown.
- Let stand for 10 minutes before serving.
- Garnish with green onion strips, if desired.

Steps:
- Bring the chicken stock to a boil in a saucepan over high heat.
- Slowly pour the grits into the stock while stirring constantly.
- Reduce heat to low; simmer until the grits are tender and thick, 15 to 20 minutes, stirring occasionally.
- Stir in 1/4 cup heavy cream to thin the grits.
- Stir in the Gouda cheese and 1/4 cup butter until melted and smooth.
- While the grits are cooking, place the bacon in a large, deep skillet over medium heat; cook until the bacon fat is rendered, about 3 minutes.
- Stir in the shallot and garlic; cooking and stirring until the shallots are tender, about 5 minutes.
- Pour in the white wine and stir in 3 tablespoons butter, cooking and stirring until the butter has melted.
- Drop the shrimp in the skillet; cook and stir until they are bright pink on the outside and the meat is no longer transparent in the center, about 3 minutes.
- Stir in the spinach, mushrooms, and green onions; cook and stir until the spinach wilts, about 2 minutes more.
- Remove the shrimp with a slotted spoon.
- Stir in 2 cups heavy cream. Simmer until the cream is reduced by about a third, about 10 minutes.
- Season with hot sauce, salt, and pepper.
- Return the shrimp to the skillet to heat through.
- Serve shrimp and sauce over the prepared grits.

- In a medium pot bring the stock and water to a boil. Add a small pinch of baking powder and the corn meal. Turn the heat down to low and give everything a good stir with a whisk, making sure to break up all the clumps.
- Cover the pot and let everything cook for five minutes. After five minutes give everything a good stir, cover, and let the grits cook on low for twenty minutes.
- While the grits are cooking mix the salt, pepper, and paprika, shred the cheese and dice the tops of the green onion.
- After twenty minutes turn the heat off, mix in the spices and shredded cheese. Cover the grits and let sit for at least ten minutes. The longer you let them sit, the thicker they will get.

- In a large pot, bring water, stock, and milk to a low boil. Add in salt, pepper, garlic powder, and cayenne pepper. Stir. Slowly pour in grits. Turn heat down to low and cook for 5 minutes stirring to make sure grits do not stick. Remove pot from the stove and let cool for 8 to 10 minutes.
- In a small bowl, mix together eggs and melted, cooled butter. Add the mixture along with cheese to the grits and stir to combine. Pour into the prepared dish and bake for 50 minutes until the center is set and the top is golden brown.

- Dethaw shrimp and drain of any liquid. In a medium sized bowl, mix together shrimp, lemon juice and several dashes of hot sauce. Add a few dashes of salt and pepper. Let marinate for at least 10 minutes in the refrigerator.
