BEEF AND RICE WITH VEGGIES
Steps:
- Heat oil in large pot over high heat. Add onion, capsicum and garlic. Cook for 1 minute.
- Add beef, cook until brown, breaking it up as you go.
- Add tomato paste, salt, pepper, onion powder, oregano, cumin and cayenne pepper. Cook for 1 minute.
- Turn heat down to medium. Add rice and beef broth, mix well. Add frozen veggies and bay leaf, then stir.
- Place lid on, lower heat to medium low so it's simmering gently. Cook for 12 - 15 minutes (might even take longer) until all liquid is absorbed (tilt pot to check). The rice should be just cooked, but will be wet.
- Remove from heat. Quickly toss spinach on top of the rice and put the lid back on. Leave to rest for 10 minutes.
- Fluff rice and mix through wilted spinach with a fork. Adjust salt if desired. Serve!

- Preheat oven to 375 degrees. Spray a large baking dish (about 9 x 13 inches) with cooking spray.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell pepper, tomato, and Worcestershire sauce. Cook and stir until pepper has slightly softened, about 5 minutes. Strain 1/2 of the liquid from the canned diced tomatoes into the mixture.

- Add ground beef, salt, pepper and garlic to a large skillet then brown and crumble over medium-high heat. When beef is about half cooked, add onion, celery and red pepper flakes then continue cooking until beef is cooked through and veggies are starting to become translucent. Do not drain. Spray a medium-sized casserole dish (1.5 quart) with cooking spray or rub with butter. In a separate bowl, whisk together broth and soup until smooth. Pour soup mixture and rice into skillet and stir until all ingredients are thoroughly incorporated. Pour into prepared casserole dish, cover tightly with aluminum foil then bake at 350 degrees for 1 hour or until rice is tender. Remove casserole from oven and let rest, covered, for 15 minutes before serving. Garnish with chopped green onions if desired. Notes: You can use other creamed soup flavors such as cream of onion or cream of mushroom. Use uncooked rice. I don't know if this can be made with Minute rice or brown rice because I've never cooked either type of rice. This recipe doubles easily in a 3-qt 13x9 dish. Cook 15-30 minutes longer or until rice is tender. You must cover the dish TIGHTLY with foil to ensure the moisture stays inside to cook the rice through. I don't know how this could be converted to a slow cooker recipe.

- Place a large saute pan on the stove over medium-high heat and add a dab of butter or margarine to the pan.
- Cook the ground beef in the saute pan.
- Add diced onions to the pan while the ground beef is cooking.
- Continue cooking the ground beef and onions, being sure to crumble the ground beef well.
- Once the ground beef is fully cooked, drain the grease from the pan.
- With the pan still over medium-high heat, add the condensed chicken broth and water to the pan.
- Add the instant rice to the pan.
- Stir gently until all of the rice is submerged in the liquid.
- Leave the dish to simmer, stirring occasionally, until all of the liquid is absorbed by the rice.
- Add the salsa, chili sauce, canned corn, chopped green chilies and taco seasoning to the pan.
- Do not drain the canned corn and canned green chilies before adding them to the pan.
- Stir well.
- Leave the dish to simmer for a few minutes and then remove the pan from the heat.
- Add two cups of the shredded cheese to the pan.
- Stir until the cheese is fully combined with the ground beef and rice mixture.
- Sprinkle the remaining cup of shredded cheese on top but this time do not stir it in.
- Sprinkle the dried chives on top of the cheese.
- Leave the dish to sit for a few minutes to allow the cheese on top to melt.
- Serve and enjoy!
