BEEF BREAKFAST SAUSAGE
Juicy and flavorful beef breakfast sausage is so tasty and filling. You can make several of them ahead of time and quickly reheat each morning.

Steps:
- Place all the ingredients except for the oil in a medium bowl and use clean hands to combine them into a uniform mixture, but don't over-mix.
- Divide the mixture into four 1/2-inch thick patties. You can also divide it into eight small patties if you wish.
- Heat the olive oil in a large skillet over medium heat. Add the patties and cook them until browned and cooked through, 4-5 minutes per side.

OWENS SAUSAGE AND GROUND BEEF BACKYARD BURGERS
This recipe was included in an ad in my local paper. It sounded so good that we had to try it. We used Owens rolled sausage since I had the coupon. It was great, but I'm sure other sausage brands would work too! The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so "fatty". Doubled the recipe and made 12 patties. They came out just the right size. Huge hit with all the guests! Many tried to guess the "secret ingredient" and were amazed when I told them it was breakfast sausage mixed with the beef.

- Over medium heat on the grill, cook burgers on each side until done (no longer pink), approximately 15 minutes total.

- Combine ground pork, sage, salt, crushed red pepper, marjoram, black pepper, onion powder, and thyme leaves in a large bowl; mix until evenly combined. Form mixture into 10 small patties.
- Heat oil in a large skillet over medium-high heat. Working in batches, cook patties for 3 minutes. Flip and cook 3 minutes more or until juices run clear. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C). Transfer patties to a paper towel-lined plate to absorb any excess grease.

BREAKFAST SAUSAGE PATTIES
Plan ahead the pork mixture must be refrigerated for 24-48 hours to blend the flavors together before making the patties. I usually get about 18-20 patties out of this, but the yield will vary depending on how large you make them --- you may adjust the amount of sugar but I recommend making the first batch using the stated amount, you might prefer it sweeter but for my family 1 tablespoon is just the perfect amount --- these are very good between biscuits :)

- In a small bowl mix all the spices together.
- Place the ground pork into a large bowl; add in the spices to the pork and mix using clean hands until well combined.
- Cover and chill for 24 hours.
- Place the pork mixture between two pieces of greased waxed paper; using a rolling pin, roll out the pork to about 1/2 inch thickness (or to desired thickness, gathering up the ends to re-cut).
- Remove the top piece of waxed paper.
- Using a 3-inch biscuit cutter cut into rounds.
- Place the rounds onto a baking sheet and freeze until ready to use.

You may use beef or pork or a combination of both. You may use splenda instead of brown sugar or maple syrup. You will have to use a little more splenda.If you have fresh herbs the flavor is more intense.This is a make ahead recipe and freeze if desired. I used to make this with ground vension and ground pork. The kids loved it.

- In warm water, add brown sugar or splenda and maple syrup if desired. Stir.
- Add to ground meat mixture and mix well.
- Form patties.
- Fry in heavy skillet on medium heat. Brown on both sides.
- Pack each pattie between waxed paper if you freeze. Then reheat in pan or microwave.
