GROUND BEEF SOUP
This recipe is one of our family's favorites...fairly easy to make and very yummy! My husband, who won't normally eat leftovers actually hoards these leftovers (this makes a big batch) and will eat them for days in a row! :) This recipe also works great in a crockpot! Just brown the beef ahead of time, then throw everything together to simmer for the day!

My then 5 year old son was complaining about a casserole I made one night...he didn't like everything mixed together. So I decided to start mixing everything together the next night. - Crumble ground beef into a stockpot over medium-high heat; cook and stir until beef is crumbly, evenly browned, and no longer pink, 7 to 10 minutes. Drain and discard any excess grease.
- Stir carrots, celery, and onion into the ground beef; cook and stir until vegetables are soft, about 5 minutes. Add potatoes, tomato sauce, crushed whole tomatoes, undrained peas, corn, and green beans to the pot; season with black pepper. Stir mixture until evenly mixed. Add thyme and bay leaf to the pot.
