2 cups prepared vegetable broth
1/2 cup ketchup
2 tablespoons tamari or 2 tablespoons soy sauce
2 cups dry textured vegetable protein, granules
1 cup quick oats or 1 cup breadcrumbs
1/4 cup ground flax seeds or 1/4 cup chia seeds
1 tablespoon nutritional yeast
1 teaspoon garlic granules
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon basil

Steps:

1.) Preheat oven to 375 degrees.
2.) In medium bowl, combine prepared broth, ketchup, tamari and TVP. Mix to combine and let stand 10 minutes until the liquid is absorbed.
3.) Add remaining ingredients, except topping. Mix well.
4.) Pack mixture into a 9 x 5 loaf pan or a glass casserole. (Many people making this suggest just forming into a loaf on a baking sheet.) Bake 40-45 minutes.
5.) If using topping, spread on loaf during the last 10 minutes of baking.

I got this recipe from Cooks.com. Personally I think I'd like these meatballs a tad spicier. I used a nut oil instead of canola to fry the onion and garlic. I then used olive oil to fry the meatballs.

Ingredients

8 ounces by weight of dry textured vegetable protein
1 3/4 cups boiling water
1 small onion, diced
2 tablespoons canola oil
1 teaspoon minced garlic
1/2 teaspoon chili powder
1/2 teaspoon cilantro
salt and pepper
1/2 teaspoon dried oregano
1 tablespoon tamari soy sauce
1 tablespoon chopped fresh parsley
1/2 cup whole wheat flour
1 tablespoon oil (for frying the onion and garlic)
1/4 cup oil (to fry the meatballs)

Steps:

Boil your water and add it to the TVP and let it rehydrate for at least 10 minutes.
Saute the onion and garlic in the 1 tbsp oil. Add spices and mix well.
Add to the TVP mixture. Add in the flour.
Mold into 1 inch size meatballs. Press them together hard to keep them from crumbling.
Fry in the 1/4 oil turning meatballs around to cook all sides until crispy and golden brown.
Yields about 3 dozen.

A delicious, lightly seasoned breakfast sausage made from TVP (textured vegetable protein). Found on a low-carber website when searching for TVP sausage recipes, made small modifications. In our supermarkets, TVP is located with 'specialty flours' like rye and rice.

Ingredients

1 cup water
1 cup dry textured vegetable protein (TVP)
1/8 teaspoon ground savory
1/4 teaspoon ground thyme
1/4 teaspoon black pepper
1/4 teaspoon sage
1/2 teaspoon salt (or to taste)
1 teaspoon sugar
2 medium eggs

Steps:

Add salt and spices to water, bring to boil. Add TVP. Remove from heat, stir well, and allow to cool enough to mix with eggs. Beat egg with sugar*, add TVP mixture. Form patties - extra may be frozen. Fry up (about 3 minutes per side, till nicely browned) and enjoy!
* I'm not sure what the sugar's for - the original recipe called for more sweetener than this and it came out quite sweet. I left in a little to help the sausage brown up, but I'm sure the recipe would be fine without it!
