This delicious lamb moussaka recipe from the Hairy Bikers provides a wonderful meal for a family occasion. Completely comforting. Each serving provides 678 kcal, 34g protein, 34g carbohydrates (of which 10g sugars), 41g fat (of which 16.5g saturates), 6g fibre and 1.2g salt.

750g/1lb 10oz lamb mince
1 onion, finely chopped
2 garlic cloves, crushed
1 tsp dried oregano
1½ tsp dried mint
1 bay leaf
1 cinnamon stick
1 tbsp plain flour
200ml/7fl oz red wine
400g tin chopped tomatoes
2 tbsp tomato purée
2 aubergines, cut into 5mm/¼in slices
1 tbsp fine sea salt
100ml/3½fl oz olive oil
500g/1lb 2oz Maris Piper potatoes, peeled and thinly sliced
sea salt and freshly ground black pepper
50g/2oz butter
50g/2oz plain flour
400ml/14fl oz milk
25g/1oz Parmesan, finely grated
1 tsp finely grated nutmeg
1 free-range egg, beaten

Steps:

  • Put the lamb, onion, garlic, oregano, mint, bay and cinnamon in a large heavy-based frying pan and cook over a medium heat for 10 minutes, stirring with a wooden spoon to break up the meat.
  • Stir in the flour and add a good pinch of salt and pepper. Add the wine, tomatoes and tomato purée and bring to a simmer. Cook for 30 minutes, stirring occasionally, until the lamb is tender and the sauce has thickened. Season again if needed and set aside.
  • Meanwhile, place the aubergine slices in a colander and sprinkle with the tablespoon of salt. Set aside for 10 minutes.
  • Rinse the aubergine slices under cold running water and pat dry with a clean tea towel. Heat 3 tablespoons of the oil in a large heavy-based frying pan and fry the aubergines for 2-3 minutes on each side, adding more oil when necessary. Remove from the pan and set aside to drain on kitchen paper.
  • Cook the potatoes in boiling water for 5 minutes, then drain in a colander under running water until cold.
  • Preheat the oven to 200C/180C Fan/Gas 6.
  • To make the béchamel sauce, melt the butter in a large saucepan and stir in the flour. Cook for a few seconds, then gradually stir in the milk. Add half the Parmesan and the grated nutmeg. Simmer the sauce gently for 4-5 minutes, stirring regularly. Season with salt and pepper.
  • Remove the saucepan from the heat and allow the sauce to cool. When cooled, stir in the egg.
  • Spoon one-third of the meat sauce into a shallow ovenproof dish large enough to hold 2.5 litres/4½ pints. Cover loosely with a third of the potatoes and then a third of the aubergines - you don't need complete layers, just to arrange them roughly on top. Repeat the layers twice more, finishing with the aubergines. Pour over the white sauce, making sure it covers everything in a thick, even layer. Sprinkle with the remaining Parmesan. Bake for 35-45 minutes, or until deep golden brown and bubbling.

Moussaka is an oven-to-table casserole of layers of potato slices, cheese, ground meat sauce, and a creamy béchamel topping.

For the Meat Sauce:
2 tablespoons olive oil
4 medium onions, chopped
2 1/2 pounds ground beef
3 cups chopped ripe tomatoes
1/2 cup finely ground toasted breadcrumbs
Kosher salt, to taste
Freshly ground black pepper, to taste
3 cloves garlic, minced
1/2 teaspoon ground cinnamon (or 1-inch cinnamon stick)
2 bay leaves
1/8 teaspoon ground allspice
6 to 8 whole cloves
1/2 cup red wine
3 tablespoons tomato paste
For the Béchamel:
6 cups whole milk
12 tablespoons unsalted butter
15 tablespoons all-purpose flour
Kosher salt, to taste
Freshly ground pepper, to taste
Ground nutmeg, to taste to taste
3 to 9 egg yolks
For the Casserole:
5 to 6 pounds potatoes (peeled, cut into 1/2 inch slices)
1/2 cup finely ground toasted breadcrumbs
1 cup grated kefalotyri cheese

Steps:

  • Gather the ingredients.
  • Heat 2 tablespoons of oil in a large skillet over medium heat. When the oil shimmers, add the onions. Sauté until translucent, stirring often, about 4 minutes. Add the garlic and continue to sauté until fragrant, about 30 seconds.
  • Add the ground meat and continue to sauté until no longer pink. Drain the skillet.
  • Add tomatoes, breadcrumbs, cinnamon, bay leaves, allspice, cloves, salt, pepper, wine, and tomato paste. Mix well.
  • Bring to a boil over high heat. Reduce the heat to low. Cover with the lid slightly cracked and simmer, stirring occasionally, until all the liquid is gone, about 45 minutes. If there is still liquid in pan, continue to simmer uncovered, stirring to prevent sticking, until the mixture is as dry as possible without burning. This step is crucial to prevent the final dish from having too much moisture.
  • Discard bay leaves, and cinnamon stick (if used), adjust salt and pepper to taste, and set sauce aside uncovered until ready to use. Meanwhile, position a rack in the upper and lower third of the oven and heat to 400 F.
  • Toss the potatoes on 2 rimmed baking sheets with enough oil to coat. Arrange the slices in single layers. Season to taste with salt and pepper.
  • Roast until the potatoes are light golden, flipping the baking sheets half way through cooking, about 45 minutes total. Set aside until ready to use.
  • Gather the ingredients.
  • In a medium saucepan, heat the milk over medium-low heat until warm.
  • In a large saucepan, melt the butter over low heat. Slowly add the flour, stirring continuously with a wooden spoon until there are no lumps. Continue to cook until the mixture is fragrant, about 1 minute more.
  • Increase heat to medium-low. Slowly add the milk while whisking continuously. Whisk until sauce begins to thicken, 12 to 13 minutes. It should be creamy, yet thick.
  • Remove from heat and whisk in the salt, white pepper, and nutmeg. Adjust the salt and pepper to taste.
  • In a medium bowl, whisk the yolks together. While whisking continuously, slowly drizzle in 2 to 3 tablespoons of the béchamel mixture. Continue to whisk in another 2 to 3 tablespoons of the béchamel mixture.
  • Return the béchamel-yolk mixture to the béchamel pan. Remove from the heat and whisk until well-combined. Set aside until ready to use.
  • Gather the ingredients.
  • Reposition a rack in the center of the oven and lower the heat to 350 F. Generously spray a large baking or roasting pan (about 15 x 10 x 2, or 5 quart) with cooking spray. Sprinkle bottom of the pan with breadcrumbs. Place a layer of potato slices on the breadcrumbs. It's OK to overlap.
  • Spread meat sauce evenly on top of the potatoes, pressing it down lightly all the way to the sides of the pan.
  • Cover evenly with the remaining potato slices. Slowly pour the béchamel sauce over top and spread evenly with a spatula, if necessary.
  • Transfer the pan to a rimmed baking sheet. Bake until the béchamel sauce begins to set, about 35 minutes. Sprinkle the cheese evenly over top. Continue to bake until golden and bubbling around the edges, 35 to 40 minutes more.
  • Remove moussaka from oven and allow to cool for 20 to 30 minutes.

This is another recipe from "New Concise Larousse Gastronomique". The original recipe is only with aubergines (eggplants), but since nobody in my family like's eggplants, I used potatoes. You can also use beef instead of lamb.

450 g lamb (minced, also beef)
200 g onions
2 garlic cloves
1 bay leaf
2 tablespoons olive oil
1 tablespoon oregano (dry)
1 teaspoon cinnamon (grounded)
10 g salt
5 g pepper
450 g tomatoes (peeled and chopped)
250 ml lamb stock or 250 ml beef stock
1000 g potatoes
2 eggs
1 tablespoon flour
5 g salt
3 g pepper
1/4 teaspoon nutmeg (grounded)
250 g yogurt (firm Greek yogurt)

Steps:

  • Fry minced onion, garlic and bay leaf in olive oil until onion becomes translucent, but not browned.
  • Add minced lamb (or beef) and cook, stirring until browned. Add oregano, cinnamon, salt and pepper. Add peeled and chopped tomatoes to the meat with lamb (or beef) stock. Bring to the boil, reduce the heat and cover. Simmer gently for 30 minutes or until reduce most of liquids.
  • Meanwhile, peal and slice potatoes into flat pieces, as for chips, but thicker, about 0,5 cm. Fry them in olive oil until lightly browned on both sides. Remove them from pan on a paper towel.
  • Take a large ovenproof dish and layer the potato slices and meat, ending with a layer of potatoes.
  • Beat 2 eggs with flour, salt, pepper and a little grated nutmeg. Stir in yogurt. Pour this over the moussaka.
  • Bake in preheated oven at 180°C for about 1 hour, until the topping is set and golden brown. Allow to stand for 15 minutes before serving.
