CREAMY HALIBUT SUPREME



Creamy Halibut Supreme image

This works well with several other types of fish also. When in a pinch, I have used a can of cream of chicken soup, lemon and pepper spice, and omitted the flour when I didn't have the lemon juice and canned mushrooms and it turned out superb.

2 lbs halibut steaks
2 tablespoons lemon juice
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon nutmeg
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon white pepper
milk
1 (8 ounce) can mushrooms, sliced, reserve liquid
1/2 cup parmesan cheese, grated

Steps:

  • Rinse and pat very dry halibut steaks.
  • Place the steaks in a well greased baking dish.
  • Drizzle lemon juice over the steaks.
  • Melt the butter in a saucepan; stir in the flour.
  • Add the seasonings; mix well.
  • Add enough milk to the mushroom liquid to make 1 cup.
  • Whisk into the flour mixture.
  • Cook until thick over medium heat.
  • Pour over the halibut steaks.
  • Sprinkle with mushrooms and cheese.
  • Bake at 350 degrees for 30 minutes.

½ cup mayonnaise
½ cup sour cream
2 tablespoons all-purpose flour
1 ½ teaspoons lemon juice
1 tablespoon diced onion
⅛ teaspoon ground cayenne pepper
2 pounds halibut steaks

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a medium baking dish.
  • In a bowl, mix the Cheddar cheese, mayonnaise, sour cream, flour, lemon juice, onion, and cayenne pepper.
  • Arrange the halibut steaks in the prepared baking dish, and cover with the Cheddar cheese mixture.
  • Bake 10 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue baking 15 minutes, or until fish is easily flaked with a fork.

nonstick cooking spray
1 medium onion, sliced thin
1 lb halibut fillet
1/2 lemon, sliced thin
1 medium tomatoes, chopped
1/2 cup dry white wine

Steps:

  • Spray a medium baking dish lightly with cooking spray.
  • Lay onion slices on bottom and the fish on top.
  • Place the lemon slices on fish and sprinkle with tomato.
  • Season with pepper.
  • Pour wine all over.
  • Slowly bring to a boil on the top of the stove.
  • Transfer to the oven and cook 10-15 minutes at 350F until the fish is cooked through.

1/4 cup toasted almonds slivers
1 tablespoon chopped parsley

Steps:

  • 1. Coat a 13 x 9 x 2-inch baking dish with cooking spray, and place halibut steaks in baking dish.2. Add the remaining ingredients, except almonds and parsley, and bake at 325°F, basting frequently, for 25 minutes until fish flakes easily with a fork.3. Remove from oven and top the halibut steaks with toasted almond slivers. 2 pounds fresh halibut pieces
1/4 cup plus 1 tablespoon butter, divided
1/4 cup flour
2 cups milk
1/4 teaspoon salt
1/4 teaspoon Worcestershire sauce
3 tablespoons chopped onions
1 cup grated Cheddar cheese
1 buttered bread crumbs (1 cup crumbs plus 2 tablespoons melted butter)

Steps:

  • Place halibut in salted boiling water. Simmer, covered, about 20 minutes or until flaky. Drain well and set aside. In a medium saucepan, make white sauce by melting 1/4 cup butter, then stirring in flour until well combined. Add milk, salt, and Worcestershire, stirring constantly over medium heat until the mixture comes to a boil. Continue cooking at a boil for about 2 minutes, until thickened. Remove from heat; set aside. Sauté onion in 1 tablespoon butter for about 5 minutes, or until tender. Add to white sauce. Layer halibut, cheese, and sauce in greased 2 1/2-quart baking dish, ending with sauce on top. Top with buttered bread crumbs. Bake at 325° for about 30 minutes.
