HAM AND NOODLE CASSEROLE
This is one of my favorite ways to use leftover ham.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

- Bring a pot of lightly salted water to a boil. Preheat oven to 375 degrees F. Spray a 9 x 13" baking dish with cooking spray, and set aside.
- Cook pasta according to package directions, and drain.
- While pasta cooks, melt butter in a large skillet over medium high heat. Add flour to melted butter, and whisk until combined.
- Whisk milk into flour mixture about a half cup at a time, making sure the consistency is smooth before adding more liquid. Bring this sauce base to a low simmer.
- Stir cheese, ham, and peas into sauce until cheese is melted. (The peas can be added while still frozen.) Stir in cooked pasta until combined well, and transfer to prepared baking dish.
- Melt butter in a microwave-safe dish in the microwave (or on the stove if you prefer). Stir breadcrumbs into the melted butter.
- Sprinkle 1/2 cup cheese over the pasta in the baking dish, and sprinkle the breadcrumbs over the cheese. Bake in preheated oven for 20 minutes or until top is golden brown and edges are bubbly. Serve right away.

- Preheat oven to 400°F. Mix together topping ingredients, set aside.
- Cook shells al dente according to package directions. Drain well.
- Meanwhile, melt butter, flour and seasonings in a saucepan. Allow to cook 1 minute.

Steps:
- Spray a 3-quart baking dish with nonstick cooking spray. Heat oven to 350 F.
- Cook the spaghetti or linguine in boiling salted water following the package directions. Rinse, drain, and set aside.
- In a large sauté pan, melt butter over medium heat. Add the mushrooms, ham, green onion, if using, and parsley. Saute, stirring, until mushrooms are tender. Stir in flour until blended.

PENNE CASSEROLE WITH HAM AND PEAS

- Gather the ingredients.
- Spray a 3-quart baking dish with nonstick cooking spray or lightly grease it with butter. Heat the oven to 350 F.
