GAME DAY BREAKFAST SLIDERS
A different twist on a breakfast egg and cheese biscuit! Great tailgate breakfast serving offered at a UVA tailgate by Krisanna Hudson. Gobbled up by the crowd!

Steps:
- Whisk eggs, salt, and pepper together in a bowl until frothy. Melt 2 tablespoons butter in a large skillet over medium-low heat. Pour eggs into skillet; cook and stir with spatula until set, 3 to 6 minutes. Remove from heat.
- Cut rolls in half horizontally; lay bottoms in a single layer in a 9x13-inch baking dish. Add a layer of provolone cheese, then scrambled eggs, then a layer of ham, then provolone cheese, then ham, then provolone cheese again. Cover with roll tops. Cut through ham and provolone cheese layers to make individual sandwiches.
- Melt 1/4 cup butter, brown sugar, and mustard together in a small saucepan over medium heat; cook and stir until sugar is dissolved. Spread mixture over roll tops. Cover baking dish with aluminum foil and let stand, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from baking dish.
- Bake in preheated oven until tops are golden brown and cheese has melted, 15 to 20 minutes.

Steps:
- Transfer rolls from package to cutting board, taking care not to separate rolls. Use serrated knife to carefully cut block of rolls horizontally in half.
- Place bottom halves of rolls, cut sides up, in 13x9-inch pan sprayed with cooking spray; top with folded ham slices.
- Whisk eggs and milk until blended. Melt 1 Tbsp. butter in large nonstick skillet on medium-low heat. Add eggs; cook 4 to 5 min. or just until set, stirring occasionally. Spoon over ham.
- Spread cream cheese spread onto cut sides of tops of rolls; place, cut sides down, over sandwiches in pan.
- Microwave remaining butter in microwaveable bowl on HIGH 20 sec. or until melted. Stir in mustard and poppy seed; drizzle over sandwiches. Let stand 20 min.
- Heat oven to 350ºF. Bake sandwiches 20 min. or until heated through.

- Slice the buns horizontally and place the bottom half in a greased 8x8” baking pan. Layer on the cheese, then scrambled eggs, then honey ham. Put the top half of the buns on.

- In a medium-sized pan over medium heat, set 4 wide mouth canning rings in the pan. Spray the insides of the rings and the base of the pan with the oil spray. Crack each egg into each ring and pop the yolk. When the egg white has gone from clear to white, remove the rings and flip the eggs.
