6 thin cantaloupe pieces (1x1/4 inch)
6 rosemary and olive oil woven wheat crackers
1/2 tsp. chopped fresh parsley

Steps:

  • Wrap 1 ham piece around each cantaloupe slice; place on crackers.
  • Sprinkle evenly with parsley.

Field editor Ruth Peterson from Jenison, Michigan submitted the recipe for these tender, savory wraps. "The great dressing is what makes the wraps so special," notes Ruth. "They're so easy to make, and if you don't have tortilla wraps, the ingredients go nicely with good, homestyle bread, too."

1/4 cup mayonnaise
1 tablespoon milk
3/4 teaspoon sugar
1/4 teaspoon prepared mustard
1/8 teaspoon celery seed
Dash salt
2 flour tortillas (10 inches), room temperature
1/4 pound thinly sliced deli ham
1/3 cup shredded Swiss cheese
2/3 cup shredded lettuce
1 medium tomato, seeded and chopped
1 green onion, chopped

Steps:

  • In a small bowl, whisk the first six ingredients; spread evenly over each tortilla. Layer with ham and cheese. Top with lettuce, tomato and onion. Roll up tightly; secure with toothpicks if desired.

2 limes, juiced
1 tablespoon honey
1/8 teaspoon cayenne pepper
1/2 honeydew melon, sliced into 12 pieces
12 slices ham, cut in 1/2

Steps:

  • Preheat a grill to medium-high heat.
  • In a small bowl, toss together the lime juice, honey, cayenne pepper, and melon. Thread the melon chunks on the wooden skewers and wrap each chunk with ham, tucking in the ends so it stays together.
  • Put the skewers on the grill and cook until the ham is just crisp, about 5 minutes on each side.
  • Remove the skewers from the grill to a serving platter and serve.

1 small cantaloupe, halved and seeded
4 teaspoons fresh lime juice
1/4 teaspoon cayenne pepper

Steps:

  • Remove rind from cantaloupe and cut into 1 1/2-inch pieces for a total of 24.
  • Lay ham slices on work surface. Cut slices lengthwise into thirds.
  • Place one melon piece in center of each piece of ham.
  • Sprinkle with lime juice, then cayenne, on each piece.
  • Wrap ham around melon, securing together with toothpicks or decorative skewers.
  • Serve immediately.

This appetizer originally came from a Colonial Williamsburg cookbook. It is now part of our Thanksgiving afternoon, leading up to dinner.

2 medium honeydew melon
1 lb ham, thinly sliced (Virginia or other, see note in directions)

Steps:

  • Cut melons in half.
  • Scoop out seeds and discard.
  • Scoop out balls with a melon ball scooper, approximately 1" in diameter.
  • Slice ham into strips about 1" by 4".
  • NOTE: Virginia ham is much saltier than our common ham. Since it is not available in my normal store, I use the packaged ham luncheon meat that is preformed into a rectangle (Danola brand), cutting it lengthwise.
  • Wrap each melon ball with a strip of ham and secure with a toothpick.
  • Chill and serve.
