THIS DISH is one my husband and I enjoy any time of the year, and if I don't have leftover ham, I buy a thick slice and use that. Served with a salad and rolls, it's a quick meal for two, but it's also easily adapted for a larger number. -Judy Hall, Lockport, Illinois

Number Of Ingredients 11

2 medium potatoes, peeled and cut into 3/4-inch cubes
2 medium carrots, sliced
1-1/2 cups cubed fully cooked ham
1 cup water
1 small onion, chopped
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon dried savory
1/8 teaspoon pepper
3 tablespoons all-purpose flour
1 cup milk

Steps:

  • In a large saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender. In a small bowl, combine flour and milk until smooth. Stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf before serving.

This could be considered a hearty soup rather than a stew. Great way to use of leftover ham. Creamy cheesy good! Don't remember where the recipe came from, but it is delicious!

1 potato, peeled and diced
2 carrots, peeled and chopped
1 medium onion, cut into bite sized pieces
1 cup frozen green pea
1 cup cooked ham, diced or cubed
1 (10 3/4 ounce) can condensed cream of celery soup, undiluted
4 ounces Velveeta cheese

Steps:

  • In a large saucepan, bring potato, carrots, and onion to a boil in 1 1/2 cups water.
  • Reduce heat; cover and cook 10 minutes.
  • Add peas and ham; return to a boil.
  • Add soup and cheese.
  • Reduce heat to low and simmer, stirring occasionally, about 10 minutes or until smooth and heated through.

4 cups chicken broth
2 cups cooked ham, cut into 1/2 cubes
1 tablespoon Mrs. Dash seasoning mix, original blend
1 cup frozen peas
1/2 cup water
2 tablespoons cornstarch

Steps:

  • Combine onion, celery, carrots, broth, ham, and seasoning in Dutch oven.
  • Cover and cook over medium high heat for 20 minutes or until carrots are almost tender. Stir in peas.
  • Mix water and cornstarch; add to stew. Stir constantly until stew comes to a boil and thickens.

1 jar (12 ounces) chicken gravy
1 cup water
1-1/2 pounds fully cooked ham, cut into 1/2-inch cubes
6 small red potatoes, quartered
1 cup fresh sugar snap peas
1 cup frozen lima beans
1 cup fresh baby carrots or frozen tiny whole carrots
1 cup frozen small whole onions

Steps:

  • In a large saucepan over medium heat, stir gravy and water until smooth. Add remaining ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until vegetables are tender.
