KIMCHI FRIED RICE

Kimchi Fried Rice image

Not the high-heat stir-fry you might expect, Grace Lee's home-style fried-rice recipe uses a simple technique - make an easy, flavorful kimchi sauce, mellowed out with butter, and sauté leftover rice in it. It's perfect for a snack or a quick, simple meal. The Spam, though optional, reflects many Koreans' love of foods introduced by the American military.

Provided by Francis Lam

Categories     main course

Time 30m

Yield Serves 2

Number Of Ingredients 13

3 tablespoons unsalted butter
1/2 small onion, medium dice
1 cup roughly chopped kimchi (6 ounces)
2 tablespoons kimchi juice, or to taste
1/2 cup small-dice Spam, ham or leftover cooked meat
2 cups cooked, cooled rice (preferably short-grain)
2 teaspoons soy sauce, or to taste
1 teaspoon sesame oil, or to taste
2 teaspoons vegetable oil
2 eggs
Salt to taste
Crumbled or slivered nori (roasted seaweed) for garnish
Sesame seeds for garnish

Steps:

  • In a nonstick sauté pan or well-seasoned cast-iron skillet, melt butter over medium-low heat, and add onions. Cook, stirring, until the onions start to sizzle, about 2 minutes. Add kimchi and kimchi juice, and stir until it comes to a boil, about 3 minutes. Add Spam, and cook until sauce is nearly dried out, about 5 minutes.
  • Break up the rice in the pan with a spatula, and stir it to incorporate. Turn heat to medium. Cook, stirring, until the rice has absorbed the sauce and is very hot, about 5 minutes. Stir in soy sauce and sesame oil. Taste, and adjust with more soy sauce, sesame oil or kimchi juice. Turn heat down slightly, but let the rice continue to cook, untouched, to lightly brown while you cook the eggs.
  • Place a small nonstick sauté pan over medium heat, and add the vegetable oil. When it is hot, add eggs, season with salt and fry to your desired doneness. Serve rice topped with fried eggs, nori and a sprinkle of sesame seeds.

KIMCHI FRIED RICE

Kimchi Fried Rice image

Fried rice breathes new life into leftover grains. We've included instructions for making a quick kimchi, but this fried rice is also a tasty way to use up older kimchi you may have in the back of the fridge.

Provided by Food Network Kitchen

Time 30m

Yield 4-6 servings

Number Of Ingredients 6

6 to 8 slices thick-cut bacon
3 tablespoons sesame seeds
3 nori sheets (dried seaweed)
3 cups Kimchi, recipe follows
4 1/2 to 5 cups cooked medium-grain white rice, chilled
1 tablespoon toasted sesame oil

Steps:

  • Cut the bacon crosswise into 1/2-inch pieces. Toast the sesame seeds in a large skillet over medium heat until golden, shaking the pan, 2 to 3 minutes.
  • Cut the nori sheets in half with shears, then cut into 1/2-inch-thick strips.
  • Heat a large cast-iron skillet over medium-high heat. Add the bacon and stir-fry until almost cooked through, 6 to 8 minutes. Drain the kimchi, reserving the liquid. Raise the heat to high and stir-fry the kimchi until browned, 7 to 8 minutes. Add the rice, the reserved kimchi liquid, the sesame oil and half of the nori strips. Continue to cook, turning and flattening the rice mixture with a spatula until it starts to form a golden crust, about 8 minutes. (For more of a crust, remove the pan from the heat, cover and set aside 10 minutes.)
  • Transfer the fried rice to a serving dish and sprinkle with the remaining nori strips and the toasted sesame seeds.
  • Make this spicy Korean condiment, then turn it into fried rice or serve it with your steak: Pulse 3 chopped red jalapenos, 4 garlic cloves, 1/4 cup sugar, 2 tablespoons chopped ginger, 1 teaspoon red pepper flakes and 2 tablespoons each fish sauce and salt in a food processor. Cut 1/2 head napa cabbage and 6 scallions into 2-inch pieces; toss with the jalapeno paste. Refrigerate at least 4 hours.

CRISPY SKILLET RICE WITH GOCHUJANG, GROUND BEEF AND KIMCHI

Crispy Skillet Rice with Gochujang, Ground Beef and Kimchi image

With its mix of rice, veggies and meat, this easy skillet dinner takes inspiration from bibimbap, and especially dolsot bibimbap, which is cooked in a hot stone bowl that gives the rice a crunchy, golden brown crust.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

4 scallions, green parts only, thinly sliced on the bias
1/4 cup gochujang (Korean red chile paste)
1/4 cup low-sodium soy sauce
2 tablespoons toasted sesame oil
1 clove garlic, finely grated
4 ounces ground beef
2 large carrots, grated on the large holes of a box grater
1 cup kimchi, coarsely chopped
4 ounces shiitake mushrooms, stemmed and cut into strips
1/4 cup vegetable oil
4 cups cooked long-grain rice
1 large egg
Toasted sesame seeds, for serving

Steps:

  • Position an oven rack in the bottom of the oven and preheat to 500 degrees F.
  • Cover the scallions with ice water and chill until ready to serve (the ice water will make them curl).
  • Whisk together the gochujang, soy sauce, sesame oil and garlic in a small bowl until smooth. Mix 3 tablespoons of the gochujang mixture with the ground beef in a small bowl until combined.
  • Toss 1 tablespoon of the gochujang mixture with the carrots, kimchi and shiitake in a medium bowl until completely coated.
  • Pour the oil in a 10-inch cast-iron skillet and swirl to coat. Add the rice and press down to flatten and cover the entire surface of the skillet. Drizzle with 1 tablespoon of the gochujang mixture and spread it evenly over the rice, leaving about 1/2-inch of the edge exposed. Spread the carrot mixture evenly over the sauce and top with tablespoon-size portions of the beef mixture.
  • Heat the skillet over high heat until the sides start to dry out and you see the oil sizzling around the sides, about 6 minutes. Transfer to the oven and bake until the meat starts to brown, about 8 minutes. Remove from the oven, crack the egg in the center and return to the oven to continue baking until the egg is set, 5 to 6 minutes more. Let cool for 10 minutes.
  • Remove the scallions from the water, pat dry and sprinkle on top of the pizza. Top with the remaining gochujang sauce and some sesame seeds. Cut into slices to serve.

KIMCHI FRIED RICE

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 13

2 tablespoons vegetable oil
1/2 cup chopped onion
3/4 cup diced Spam (half of a 12-ounce can)
1 1/2 cups roughly chopped ripe kimchi, plus 1/3 cup kimchi brine
4 cups day-old cooked short- or medium-grain white rice
2 tablespoons unsalted butter
1 tablespoon minced garlic
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
Kosher salt
Toasted sesame seeds, for topping (optional)
4 large eggs
2 scallions, thinly sliced

Steps:

  • Heat 1 tablespoon vegetable oil in a large cast-iron skillet or wok over medium-high heat. Add the onion and cook, stirring occasionally, until soft and translucent, 2 to 3 minutes. Add the Spam and cook until browned around the edges, 2 to 3 minutes. Stir in the chopped kimchi and cook until it releases most of its liquid and browns slightly around the edges, about 3 minutes.
  • Add the rice to the skillet and break it up with a wooden spoon; stir to combine. Stir in the kimchi brine, butter, garlic, soy sauce and sesame oil; cook until the rice has absorbed most of the liquid, 3 to 4 minutes. Scrape the bottom of the skillet to ensure there is no burning rice. Season with salt. Remove from the heat and sprinkle with sesame seeds. Keep warm.
  • In a separate large nonstick skillet, heat the remaining 1 tablespoon vegetable oil over low heat until slightly shimmering, about 5 minutes. Crack the eggs into the skillet; cover and cook until the egg whites are set but the yolks are still runny, 2 to 2 1/2 minutes. Season with salt.
  • Divide the fried rice among plates or bowls and top each serving with a fried egg. Sprinkle with the scallions.

KIMCHI FRIED RICE

Kimchi Fried Rice image

Provided by Andrew Zimmern

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 16

3 small carrots, halved lengthwise then sliced into half-moons (1/3 cup sliced)
2 tablespoons naturally-brewed soy sauce, such as Kikkoman or Yamasa
2 tablespoons sake
2 teaspoons toasted sesame oil
2 tablespoons peanut oil
1 large egg, beaten
3 dried hot chiles
2 teaspoons grated garlic (about 3 medium cloves)
2 teaspoons grated ginger (about one 4-inch piece)
4 cups leftover cooked white rice
3 ounces lap cheong (Chinese sausage), sliced
3 ounces store-bought Chinese roast pork, diced
4 scallions, cut into 1-inch batons (about 1/2 cup)
1/3 cup frozen peas, defrosted
3 ounces kimchi, drained, squeezed dry and chopped (about 1/2 cup chopped)
1 cup soy bean sprouts

Steps:

  • Bring a small saucepan of water to a boil. Add the carrots and cook for 1 minute. Drain the carrots and reserve on a plate.
  • For this dish, you need to have everything ready to go before you start to cook in the wok.
  • Combine the soy sauce, sake and sesame oil in a small bowl for the liquid seasonings.
  • Preheat a large wok over high heat. Add 1 tablespoon of the peanut oil and swirl to coat. Add the egg. Tilt the wok, scraping and breaking up the egg. As soon it's cooked, place on a plate. Wipe out the wok, if necessary.
  • Add the remaining 1 tablespoon peanut oil to the wok and swirl to coat. Add the chiles, ginger and garlic. Cook, stirring, until fragrant, about 10 seconds.
  • Add the rice and cook, tossing, until the rice is warmed through and crisp in some places, about 2 minutes. This will give you some of that smoky "breath of the wok" flavor.
  • Add the cooked egg, sausage and roast pork to the wok. Toss for 1 minute. Next, add the scallions and carrots. Toss for 30 seconds then add the peas. Cook, tossing, for another 30 seconds then add the kimchi and bean sprouts. Pour in the liquid seasonings along the rim of the wok. Cook, tossing, for another 30 seconds. Serve on a platter.

KIMCHI FRIED RICE (KIMCHI BOKKEUM BAP)

Kimchi Fried Rice (Kimchi Bokkeum Bap) image

Chef Kim's kimchi fried rice is spicy, delicious comfort food made right. Learn the right ingredients, ratios, and techniques to use for the best fried rice you've ever had.

Provided by Hooni Kim

Categories     side-dish

Time 30m

Yield 2 servings

Number Of Ingredients 12

2 cups day-old, cooked white rice; or use any leftover white rice
3 tablespoons grapeseed or canola oil, divided
1 bunch Chinese chives
1 medium onion
4 ounces beef fillet, sirloin or wagyu
1 wedge napa cabbage kimchi; or use store-bought
1 large egg, plus 1 additional egg, optional
kosher salt
3 tablespoons soy sauce
1 tablespoon toasted sesame oil
1 tablespoon toasted sesame seeds
1 scallion, green and white parts, thinly sliced into rounds

Steps:

  • Rice: You will need day-old, cooked white rice (freshly made rice has too much moisture and will stick to the pan). Start by spreading freshly cooked rice on a tray to let it cool and dry out, 15 minutes. Divide cooked, cooled, and dried rice into 1-cup portions; store individually in zip-top plastic bags and freeze until ready to use. When you're ready to cook, place 2 cups frozen rice in a bowl; put on rubber gloves, and pour 1 tablespoon oil onto your gloved hands. Then crumble the rice in the bowl so the kernels separate and absorb the oil. Set aside.
  • Ingredient prep: Dice Chinese chives; place in a bowl and set aside. Peel and trim onion, then finely dice so the pieces are the size of a rice kernel; place in a bowl and set aside. Dice beef into small cubes; place in a bowl and set aside. Place kimchi on a flat surface. Cut away and discard the core and separate the layers; then spread out the kimchi and dice. (Kimchi dice should be larger than other ingredients.) Place in a bowl and set aside.
  • Fried rice: Preheat a wok over high heat until it starts to smoke, 7-10 minutes. While the wok is heating, preheat a small cast-iron skillet to cook the eggs, 1-2 minutes. When the skillet is smoking, add ½ tablespoon oil. Crack egg into skillet, season with a pinch of salt, and take skillet off the heat to finish cooking, 2 minutes. (Optional: If you want an egg for each serving, repeat with second egg and more oil.)
  • When the wok is smoking, add 1 tablespoon oil and the beef. Season with a pinch of salt. Do not toss or stir, so the beef can sear on one side, 30 seconds. Add 1 cup of the onions and 1 cup of the kimchi; toss for 30 seconds. Push the mixture to one side of the wok and add the rice, flattening it gently against the bottom of the wok; season the rice with salt, and allow to rest, 30 seconds. Flip kimchi mixture on top of the rice and let the rice cook for 1 minute; then add about half of the chives. After about 30 seconds, a light crust will form on the bottom of the rice (similar to socarrat in paella); when it does, vigorously toss and mix the fried rice, moving the wok around and breaking up rice clumps with your spatula, 30 seconds.
  • Move the fried rice to one side and tilt the wok; add the soy sauce by letting it trickle down the side of the wok and pool at the bottom. Allow it to reduce by ⅔; then mix everything together until thoroughly combined. Add sesame oil, most of the sesame seeds, and half the scallions; toss and mix until combined.
  • Remove wok from heat and transfer fried rice to a serving bowl. Top with fried egg, garnish with additional scallions and sesame seeds, and serve immediately.
