Time 35m

Yield 4 serving(s)

Number Of Ingredients 16

salt
1/2 lb egg tagliatelle pasta noodles or 1/2 lb thin spaghetti
2 pieces skin-on bone-in chicken breasts
4 ribs organic celery, 2 cut into large pieces and 2 thinly sliced on an angle
1 carrot, peeled and thickly sliced
1 medium onion, quartered
1 large fresh bay leaf
2 cups chicken stock
2 tablespoons vegetable oil
1 bunch scallion, thinly sliced on an angle
4 garlic cloves, thinly sliced
1 fresno chile pepper, thinly sliced
fresh ginger, grated
2 tablespoons tamari or 2 tablespoons low sodium soy sauce
4 wedges limes
1 handful cilantro, chopped

Steps:

  • Bring a pot of water to a boil, salt it, add the pasta and cook for 1 minute less than the instructions indicate. Drain and return to the pot.
  • Meanwhile, place the chicken, large celery pieces, carrot, onion and bay leaf in a pot. Cover with 1 1/2 to 2 quarts water, bring to a boil and let poach for 12 minutes. Remove the chicken, discard the skin and let cool enough to handle. Shred or dice the meat and discard the bones. Strain the poaching liquid into a large measuring cup and add the store-bought chicken stock. (Using the quick-poach liquid alone makes for too thin a flavor, but adding it to store-bought stock works out nicely and stretches a buck.).
  • Heat the oil in a dutch oven or medium soup pot over medium-high heat. Add the thinly sliced celery, scallions, garlic, chile pepper and the ginger and stir for a couple of minutes. Add the chicken stock mixture and tamari (or soy sauce).
  • Divide the noodles and shredded chicken among 4 soup bowls. Top with the soup and garnish with the lime wedges and cilantro.

CHINESE CHICKEN VEGETABLE SOUP

Chinese Chicken Vegetable Soup image

We had a Chinese restaurant that made two soups that I loved how they tasted. When they went out of business, we looked for someone else that made these two soups, without much luck. Knowing all the ingredients that were there, I went to work to make my own recipe for this very tasty soup. Plus I'm a big fan of 'make it tasty, fast and easy' which this is, when I run the veggies through my food processor. Also when I not feel well, this is one soup that has all what help me feel better. I also serve this with steamed rice as a side dish for those who want it as well.

ASIAN CHICKEN SOUP

Asian Chicken Soup image

There's no need to boil the noodles separately; here, they are cooked in the savory broth that serves as the base of this soup. Look for soba noodles in the Asian-food or pasta section of the grocery store. If you can't find them, use whole-wheat spaghetti instead.

Yield serves 4 as a main course

Number Of Ingredients 12

3 cans (14 1/2 ounces each) low-sodium chicken broth
1 tablespoon grated peeled fresh ginger
1 garlic clove, cut into slivers
1/4 to 1/2 teaspoon crushed red-pepper flakes
2 cups water
4 ounces soba noodles
2 boneless, skinless chicken breast halves (6 to 8 ounces each), thinly sliced crosswise
1 red bell pepper, ribs and seeds removed, cut into 1-inch strips
6 ounces snow peas, stem ends and any strings removed, sliced diagonally into 1/2-inch pieces
1 to 2 tablespoons fresh lime juice (from 2 to 3 limes)
2 scallions, trimmed and thinly sliced
Coarse salt

Steps:

  • In a large pot, bring chicken broth, ginger, garlic, red-pepper flakes, and the water to a boil over high heat. Add noodles, and reduce heat to a simmer; cook until noodles are just tender, 6 to 8 minutes.
  • Add chicken, bell pepper, and snow peas; cook until chicken is opaque throughout, about 1 minute. Add lime juice and scallions, and season with salt. To serve, use tongs to divide noodles among four bowls, then ladle the soup mixture over each.

ASIAN CHICKEN SOUP

Asian Chicken Soup image

An Asian-inspired chicken soup features a delicate mushroom broth laced with fresh ginger, garlic, jalapeno, and black peppercorns. Tofu provides protein and contrasting texture, while fresh herbs add color. You can use the mushroom broth in other soups and recipes as well; it is particularly good in risottos.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Yield Makes 1 quart

Number Of Ingredients 15

6 cups water
1/2 cup mixed dried mushrooms, such as porcini, shiitake, oyster, or wood ear
1 whole chicken breast (about 10 ounces)
1 carrot, roughly chopped
1 tablespoon roughly chopped jalapeno pepper
1 1/2 tablespoons roughly chopped fresh ginger
3 garlic cloves, crushed
1 teaspoon whole black peppercorns
1 tablespoon sugar
1/2 cup firm tofu, cut into 1/4-inch dice
Juice of 1 lime (about 3 tablespoons)
1 1/2 tablespoons roughly chopped fresh mint
1 1/2 tablespoons roughly chopped fresh basil
1 1/2 tablespoons roughly chopped fresh cilantro
1 teaspoon soy sauce

Steps:

  • Bring the water to a boil in a medium saucepan. Remove from heat, and add mushrooms; let sit until softened, at least 30 minutes. Strain mushrooms through a cheesecloth-lined sieve to remove any sandy grit; discard mushrooms.
  • Return mushroom broth to a clean medium saucepan, and add chicken, carrot, jalapeno, ginger, garlic, and peppercorns. Bring just to a boil; reduce heat, and simmer over medium heat 20 minutes, or until broth is reduced to about 4 cups. Strain through a fine sieve back into saucepan, reserving broth and discarding everything but the chicken.
  • Remove chicken meat from the bones, and shred the meat. Return chicken meat to mushroom broth; add sugar, tofu, lime juice, herbs, and soy sauce, and stir to combine. Transfer soup to a covered container, and refrigerate until well chilled, at least 2 hours or overnight. Serve.
