LAMB & QUINOA BURGERS WITH BEETROOT TZATZIKI
Serve our lamb burgers with a vibrant beetroot slaw for an easy midweek family dinner that delivers two of your 5-a-day. They'll be on the table in just 30 minutes

Steps:
- Cook the quinoa in plenty of boiling water for 10-15 mins (don't worry if it still has a little bite), then drain well and leave to cool. Grate the beetroot and mix with the yogurt, half the mint and some seasoning. Chill until ready to serve.
- Use your hands to squish together the cooked quinoa, the lamb, the remaining mint, half the dill and some seasoning. Shape into four burger patties. Heat a large frying pan (if it's non-stick, you won't need oil as the lamb mince is already fatty; otherwise, add a drizzle of oil). Cook the burgers for 5-8 mins on each side until they have a nice golden crust and are cooked through, then leave them to rest for a few mins.
- Mix the carrots, onions and the remaining dill in a bowl. Gently warm the wraps or buns, then pile with the carrot mix, add the lamb patties and top with a dollop of the beetroot tzatziki.

Steps:
- Place meat in large mixing bowl. Sprinkle with harissa, fennel, garlic, coriander, cumin and cinnamon. Season with salt and pepper. Mix quickly by hand. Divide into 4 portions. Form each into large patty, making thinner at centres and thicker at edges. Refrigerate until ready to use.
- Barbecue directly over medium-high heat on lightly oiled grill, about 4 minutes per side for medium-rare. Alternately, cook in large skillet or grill pan over medium-high heat.
- Place burgers in buns.

MOM'S QUINOA BURGERS
I made these with leftover quinoa and some vegetables I had in the fridge. Super easy! Great on a multigrain bun with some tomatoes, spinach, and your favorite spread! My 2 1/2-year-old said, I love it Mommy! If necessary, while frying, flatten the burgers with the back of your spatula (but don't make them too thin).

Steps:
- Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Set aside to cool slightly, about 15 minutes.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add onion and celery; saute for 1 minute. Add zucchini, yellow bell pepper, and red bell pepper; saute until tender, 5 to 7 minutes more. Set aside to cool, about 10 minutes.
- Mix quinoa, zucchini-pepper mixture, and garlic together in a bowl. Stir in flour; stir in egg. Season with salt, pepper, and cayenne. Mix in mozzarella cheese. Form into about 6 equal-size patties; place on a plate.
- Heat 1 tablespoon oil in a skillet over medium heat. Fry patties until heated through and browned, 5 minutes per side.

Another great recipe from Donna Hay magazine. Beautiful flavours and a bit of spice. Quinoa uses 1/3 cup grain to 1 cup water and is cooked (simmer) around 15mins until liquid is absorbed - we haven't included this in the prep time.

Steps:
- Put mince, quinoa harissa, garlic, salt and pepper in a bowl and mix well to combine.
- Shape the lamb into 6 patties.
- Heat oil in a large frying pan over medium heat. Cook patties 4-5mins each side.
- Spread the rolls with the tzatziki and extra harissa. Top with green leaves and patties to serve.
