I had to have this recipe after eating this at my uncle's birthday party on the 4th of July. It is really good! I was not sure of the size of the package of Ramen noodles, so I estimated. It is the standard small rectangle package.

Number Of Ingredients 9

1 (8 ounce) package ramen noodles, broken up into small bits (discard seasoning)
1/2 cup chopped walnuts
4 tablespoons butter or 4 tablespoons margarine
3 heads lettuce, torn, can use Romaine, Green Leaf, Red Tip, etc
2 -4 chopped green onions
1 cup canola oil
1/2 cup wine vinegar
1 cup sugar
2 -3 teaspoons soy sauce

Steps:

  • Add vinegar, sugar, and soy sauce into a jar and shake until sugar is dissolved. Add oil and shake. Sometimes I cut back on the amount of oil and sugar and use 1/2 cup of each. Just a matter of taste.
  • Saute ramen noodles and walnuts in margarine until slightly golden. Drain and cool.
  • Combine lettuce, green onion, and topping in a large bowl. When ready to serve, shake dressing and pour on salad, then serve. Do not put dressing on until ready to serve. Dressing will being breaking down the lettuce.

I didn't like this the first few times I tried it but now I love it! It's got a tangy taste and goes well with Chinese food or sandwiches. Leftovers are softer but great as a snack the next day.

¼ cup rice vinegar
¼ cup sugar
¼ cup vegetable oil
2 (3 ounce) packages ramen noodles with seasoning packet
½ head romaine lettuce, chopped
1 (10 ounce) can mandarin orange segments, drained
¼ cup slivered almonds

Steps:

  • In a microwave-safe bowl, mix together vinegar, sugar, and oil. Microwave on high until sugar dissolves, about 1 minute. Mix well, and set aside to cool.
  • Crush ramen noodles in the packages. Pour into salad dressing.
  • In a salad bowl, toss romaine lettuce with oranges, almonds, and salad dressing.

  • Put ramen noodles into frying pan that has been sprayed with nonstick cooking spray.

1 cup blanched slivered almonds
2 teaspoons sesame seeds
½ cup butter, melted
1 head napa cabbage, shredded
1 bunch green onions, chopped

½ cup white sugar
2 tablespoons soy sauce

Steps:

  • In a medium skillet over low heat brown ramen noodles, almonds, and sesame seeds with melted butter or margarine. Once browned, take off heat and cool.
  • In a small saucepan bring vegetable oil, sugar, and vinegar to boil for 1 minute. Cool. Add soy sauce.

2 tablespoons rice vinegar
2 teaspoons toasted sesame oil
4 drops hot chili oil
2 small cloves garlic, minced
1/2 teaspoon grated fresh ginger
1 teaspoon vegetable oil
2 cups julienned snow peas
2 cups mung bean sprouts
2 cups diced cooked turkey
2 tablespoons sesame seeds (preferably black)
6 large iceberg lettuce leaves, halved, center ribs removed

Steps:

  • Make a dipping sauce by combining soy sauce, vinegar, sesame oil, chili oil, garlic and ginger in a small mixing bowl. Blend well.
  • Heat the vegetable oil in a large nonstick skillet. Add the snow peas and sprouts and stir-fry for 2 minutes. Add the turkey and cook until heated through, about 1 minute. Remove from heat and stir in the sesame seeds.
  • Divide the salad among the 12 halved lettuce leaves and roll up. Serve with the dipping sauce.
