Marinara sauce recipe is very simple, cheap and quick-to-make. This authentic Italian recipe wants only 4 ingredients: tomatoes, extra virgin olive oil, garlic and oregano. It's a simple aromatic sauce, which can be used to season any type of pasta, in special way spaghetti, or to dress pizza. The ingredients must be of the highest quality. Tomatoes must be red and well rip - San Marzano quality canned peeled tomatoes or canned cherry tomatoes; use fresh garlic cloves because it has a unique flavor; use fresh oregano, possibly still attached to the twigs, which you will crumble just before adding it to the sauce; finally use extra virgin olive oil

500 g (1,1 pound) of fresh tomatotoes such as San Marzano, or Tomato Passata or canned Peeled Tomatoes
4 tablespoons of extra virgin olive oil
1 teaspoon of dried oregano
2 cloves of garlic
1 tablespoon of fresh chopped parsley (optional)
fine salt to taste

Steps:

  • Cut the garlic into small pieces then sautè it in a large pan with the extra virgin olive oil.
  • If you have chosen peeled tomatoes (fresh or canned), crush them coarsely with a fork. In this case you will get a more rustic sauce with chunks of tomato.
  • Add the tomatoes to the garlic soffritto, stir well and let it cook for about 15 minutes. Finally, add a pinch of fine salt.
  • Add the oregano and, if you like, also a tablespoon of finely chopped fresh parsley. Stir to mix the spices well and turn off the heat. The marinara sauce is ready. You can use it for dressing pasta or pizza. Or it can be eaten plain, either hot or cold, depending on how you want to use it.

One 32-ounce can whole peeled plum tomatoes
3 garlic cloves
1/4 cup extra-virgin olive oil
Grated Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions and then drain.
  • While the pasta is cooking, puree the tomatoes with their juice in a blender with the garlic cloves, 1 teaspoon salt, and a few grinds of pepper.
  • Heat the oil in a large heavy skillet over medium-high heat. Careful of it splashing, pour the tomato puree into the hot oil and cook, stirring occasionally, until slightly thickened, about 5 minutes. Add the cooked pasta to the sauce and toss until coated. Season with salt and pepper. Serve with grated Parmesan.

4 cloves garlic, thinly sliced
1 small onion, diced
1 teaspoon dried oregano
Kosher salt
1 28-ounce can whole peeled tomatoes, crushed by hand
1/2 cup chopped fresh basil
1 pound spaghetti
2 tablespoons unsalted butter, cut into cubes

Steps:

  • Combine the olive oil and garlic in a large skillet. Cook over medium heat until the garlic is golden around the edges, about 3 minutes. Add the onion, oregano and 1 teaspoon salt. Cook, stirring, until the onion is soft but not browned, about 10 minutes. Add the tomatoes and their juices and 1/2 cup water; continue cooking until the sauce is slightly reduced, about 20 minutes. Stir in the basil and season with salt. Keep warm over low heat.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Add the pasta to the sauce along with the butter and 1/2 cup of the reserved cooking water. Increase the heat to medium and toss to coat, adding the remaining cooking water as needed to loosen the sauce. Transfer the pasta to bowls and drizzle with olive oil.

1 medium onion
2 cloves garlic or 1/4 teaspoon garlic powder
1 small green bell pepper
1 tablespoon olive or vegetable oil
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
1/4 teaspoon salt
1/4 teaspoon fennel seed, if desired
1/8 teaspoon pepper
1/2 teaspoon salt (for cooking spaghetti), if desired
8 oz uncooked spaghetti

Steps:

  • Peel and chop the onion to measure 1/2 cup. Peel and finely chop the garlic. Cut the bell pepper in half lengthwise, and cut out seeds and membrane. Chop enough bell pepper to measure 1/4 cup. Wrap any remaining bell pepper with plastic wrap and refrigerate.
  • In a 2-quart saucepan, heat the oil over medium heat 1 to 2 minutes. Add the onion, garlic and bell pepper. Cook 2 minutes, stirring occasionally.
  • Stir in the tomatoes with their liquid, tomato sauce, basil, oregano, 1/4 teaspoon salt, the fennel seed and pepper. Heat to boiling over high heat. Once mixture is boiling, reduce heat just enough so mixture bubbles gently and does not spatter.
  • Cover with lid; cook 35 minutes, stirring about every 10 minutes to make sure mixture is just bubbling gently and to prevent sticking. Lower the heat if the sauce is bubbling too fast.
  • After the sauce has been cooking about 20 minutes, fill a 4-quart Dutch oven about half full of water. Add 1/2 teaspoon salt if desired. Cover with lid; heat over high heat until the water is boiling rapidly. Add the spaghetti. Heat to boiling again. Boil uncovered 8 to 10 minutes, stirring frequently, until tender but not mushy.
  • Place a strainer or colander in the sink. Pour the spaghetti in the strainer to drain. Serve with the tomato sauce.

2 (14 1/2 ounce) cans hunts chunky crushed tomatoes
2 (6 ounce) cans hunts tomato paste
1/2 cup Italian stewed tomatoes
1/4 cup extra virgin olive oil
6 garlic cloves (cut in halves)
1 teaspoon chopped garlic, in juice (from jar)
1 shallots (diced) or 1/2 small onion (diced)
2 tablespoons dried oregano
4 tablespoons dried Italian seasoning
1 teaspoon dried basil
1 tablespoon Splenda sugar substitute or 1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 lb lean ground beef
1 onion (finely chopped)

Steps:

  • Empty Hunts chunky crushed tomatoes, stewed tomatoes, and Hunts tomato paste into the pot. Add the extra-virgin olive oil to the pot.
  • Slice the cloves of garlic crosswise into either halves or thirds or pieces, and dump them into the pot.
  • Dice the shallot, and dump that into the pot. Add the rest of the ingredients, except the ground beef and finely chopped onion, and stir to mix well with a large long handled wooden spoon.
  • Do not strain, as the pulp adds to make this a thick and wonderful sauce.
  • Cover and cook on medium heat, stirring every 10 minutes for about an hour or until it bubbles and is completely heated throughout.
  • Reduce heat to simmer, and continue to simmer, stirring every 10 or 15 minutes to keep from burning or sticking to the bottom of the pot for 1 or 2 hours.
  • While the sauce is simmering, brown the ground beef and the finely chopped onion in a skillet. When the beef is browned, add the beef and finely chopped onion into the sauce.
  • If the sauce is too thick for your liking, add a little red wine or water. Remove from heat and give it one last stir.
  • NOTE: Use only Hunts Chunky Crushed Tomatoes and Hunts Tomato Paste. Conagra Foods makes both Angela Mia and Hunts, so Angela Mia would also be alright to use.
