Our version of Harry Potter's Pumpkin Juice is the perfect drink for fall. It has a smooth pumpkin flavor with a little bit of spice and is super tasty!

4 liters apple cider (apple juice works fine too)
15 ounces pumpkin puree
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons pumpkin pie spice
2 teaspoons vanilla

Steps:

  • Combine all ingredients in a large pitcher and stir well.
  • Pour over ice in individual glasses, and top with cinnamon sticks and a straw. (Apple slices optional)
  • Stir again before each serving to prevent settling.

6.4 oz Pumpkin (peeled) (1 1/2 cups of pumpkin cut into 1 inch cubes)
6.4 oz Apple (red) (1 medium apple)
6.2 oz Pear (1 medium pear)
2.35 oz Carrot (1 medium carrot)
0.55 oz Lemon (1/8 medium lemon)
0.2 oz Ginger (2 slices (1 inch diameter))
0.5 oz Ground Cinnamon (1 tablespoon (reduce to 1/2 teaspoon if you don't have a juice press machine))
0.166 oz Ground Nutmeg (1 teaspoon (reduce to 1/8 teaspoon if you don't have a juice press machine))
0.166 oz Ground Clove (1 teaspoon (reduce to 1/8 teaspoon if you don't have a juice press machine))
0.15 oz Turmeric (1 teaspoon (reduce to 1/8 teaspoon if you don't have a juice press machine))
1 Harry Potter themed cup

Steps:

  • Peel and deseed the pumpkin, then cut it into 1 inch cubes.
  • Quarter lemons and place in press along with the spices.
  • Grind everything else on top and press.
  • Peel and deseed the pumpkin, then cut it into 1 inch cubes.
  • Peel the lemons.
  • Juice all produce together.
  • Whisk the spices into the juice. Don't forget to reduce the measurements as noted in the ingredients list!

Number Of Ingredients 9

10 dried apricots
1 1/2 cups water
2 cups apple juice
1 cinnamon stick
7 allspice berries
2 - 2 inch pieces of thinly sliced ginger
1/2 vanilla bean , split (or 1/2 teaspoon vanilla extract)
1/2 cup pumpkin puree
1/8 teaspoon ground nutmeg

Steps:

  • Soak the apricots in the water for at least 4 hours or overnight in the fridge. Add the apple juice, cinnamon stick, allspice, ginger and vanilla bean to a saucepan. Bring almost to boil, then turn heat to low and simmer for 10 minutes. Take off heat and let it cool a bit. Add the apricots and the soaking water to a blender and blend until smooth. Add the pumpkin puree and nutmeg and blend again. Strain the apple juice mixture into the blender to make sure only the liquid comes through. Blend until smooth. Put a fine mesh strainer over a pitcher and strain the pulp so that only the thick juice is in the pitcher. Save the pulp and make pumpkin juice slow cooker oats the next day!!

3 cups apple cider
1 cup pumpkin puree (not pumpkin pie filling)
¼ cup brown sugar
2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
½ teaspoon salt

Steps:

  • Set out a blender. Measure all the ingredients into the blender jar.
  • Cover and purée for 30 to 60 seconds to dissolve the sugar.
  • Serve immediately over ice, or cover and chill until ready to use. If making a head, make sure to shake or stir the pumpkin juice before serving.
