The best thing about this salad is how it comes together in no time at all. Asian rice noodles generally cook more quickly than wheat noodles and with the addition of the precut coleslaw mix the prep time is very minimal.

1 (8-ounce) box Asian brown rice (whole-grain) noodles
1/4 cup soy sauce (preferably reduced-sodium)
1 tablespoon rice vinegar
2 teaspoons fresh lime juice (from 1/2 lime)
2 teaspoons honey
2 teaspoons toasted sesame oil
1 teaspoon minced fresh ginger
1 garlic clove, minced
3/4 cup fresh cilantro leaves, chopped
3/4 cup chopped salted, dry-roasted peanuts or cashews
2 1/2 cups coleslaw mix (shredded green and red cabbage plus carrots, found in the produce aisle)
Red pepper flakes (optional)

Steps:

  • Cook the noodles according to the package directions. Drain and set aside in a large bowl to cool (a few minutes in the freezer can help!). Cut the noodles up a bit with kitchen shears or a knife to make them easier to toss.
  • In a small bowl, whisk together the soy sauce, vinegar, lime juice, honey, sesame oil, ginger, and garlic.
  • Add the sauce, cilantro, peanuts, and slaw mix to the bowl with the noodles and toss until well combined. If desired, sprinkle in red pepper flakes to taste. Serve at room temperature or refrigerate for later.

  • Fill a bowl with boiling water; add rice noodles. Cover bowl and let sit until noodles are softened, about 10 minutes. Drain. Add 1 tablespoon olive oil and toss to coat.
  • Mix romaine lettuce, red bell pepper, red onion, green onions, cucumber, basil, cilantro, ginger root, jalapeno pepper, and garlic with rice noodles.
  • Whisk 1/3 cup olive oil, rice vinegar, soy sauce, white sugar, lemon juice, lime juice, salt, turmeric, and paprika together in a bowl; pour over rice noodle mixture and toss to coat.

Any leftover will keep in the fridge for up to a week, and you'll be happy to drizzle it on fish, chicken and all kinds of vegetables.

Steps:

  • In a medium bowl, toss radishes and carrot with vinegar, sugar and salt, and let sit while preparing remaining ingredients.
  • Cook rice noodles according to package instructions. Immediately transfer to a colander and rinse under cold water to cool. Set aside to drain.
  • In a small bowl, prepare the dressing: Stir together lime juice, oil, fish sauce, ginger, garlic and chiles.
  • Pile noodles in a large bowl, then top with radish and carrot mixture and any juices from the bowl, cucumber, lettuce, scallions, herbs, peanuts and eggs, if using. Drizzle the dressing over the top.

1/2 low sodium soy sauce
1/3 cup coarsely chopped fresh ginger
1/4 cup rice vinegar
2 tablespoons vegetable oil
3 -4 tablespoons thai green curry paste (check for vegetarian)
2 teaspoons brown sugar
6 garlic cloves, minced
7 ounces thin rice noodles
2 teaspoons vegetable oil
1 cup finely chopped red bell pepper (capsicum)
1 cup grated carrot
1/2 cup chopped scallion (white and light green parts)
1/2 cup chopped cilantro
1/2 cup chopped fresh mint leaves
1 head boston lettuce, leaves separated
1 lime, sliced for garnish (optional)

Steps:

  • Bring a large pot of water to a boil.
  • Make dressing: Combine all ingredients in a blender or food processor and mix until well blended (can be made up to 4 days in advance refrigerated).
  • Place your rice noodles into a large bowl and pour your boiling water over them.
  • Stir to separate and immerse noodles and let soak for 5 minutes.
  • Drain, rinse under cold water, and drain again.
  • Return noodles to bowl and coat with the 2 tsp of vegetable oil.
  • Add peppers, carrots, scallions, 1/4 cup cilantro, and 1/4 cup mint to noodles.
  • Add 1/2 of the pineapple dressing, tossing to coat.
  • Sprinkle with remaining cilantro and mint.
  • Garnish with lime.
  • Serve remaining dressing separately.

1 cup chopped cilantro
1 jalapeno pepper, chopped
1 tablespoon honey
1/4 cup fresh lime juice
3 tablespoons fish sauce
1 teaspoon kosher salt
1 pound dried rice vermicelli
2 carrots, julienned
1 cucumber, halved, peeled, seeded and sliced into thin half-rounds
1/4 cup chopped fresh mint
1/2 cup finely shredded napa cabbage
1/4 cup chopped dry-roasted nuts

Steps:

  • Place the garlic, cilantro, jalapeno, honey, lime juice, fish sauce and salt in the bowl of a food processor and process until almost smooth. Bring a large pot of salted water to a boil, add the noodles and cook for 2 minutes. Drain, rinse well with cold water and drain again. In a large bowl, combine the sauce, noodles, carrots, cucumber, mint and napa cabbage. Toss well and garnish with peanuts.

Some stores sell crispy rice noodle but if you cant get them you can make your own by putting dry rice noodles in hot oil - be careful as they get BIG!

1 tablespoon sesame oil
3 cm fresh ginger, chopped
2 garlic cloves, crushed
100 g sugar snap peas, sliced lengthways
1 carrot, in matchsticks
4 spring onions, sliced
175 g spinach, shredded
100 g bean sprouts
1/4 cucumber, in matchsticks
50 g roasted cashews, chopped
1 lime, juice of
2 teaspoons chili oil

Steps:

  • Heat the sesame oil in a wok. Add ginger and garlic and stir fry for 30 seconds.
  • Add peas, carrots and spring onions and stir fry for a minute. Add spinach and bean sprouts and stir fry for another minute.
  • Remove from heat and stir in cucumber.
  • Pile onto plates, sprinkle over the lime juice and nuts. Drizzle with the chilli oil and top with the crispy noodles.
