1 can (20 ounces) crushed pineapple, drained
1/2 cup chopped maraschino cherries, drained
1/2 cup sweetened shredded coconut
1/2 cup chopped walnuts

Steps:

  • Prepare cake mix according to package directions. Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until cake tests done; cool completely. , In a large bowl, combine milk and pudding mixes; beat in cream cheese until smooth. Fold in whipped topping. Spread over cooled cake. Top with the pineapple, cherries, coconut and walnuts. Store in the refrigerator.

1 (3 1/2 ounce) package French vanilla instant pudding
1/2 cup Hawaiian Punch drink, liquid concentrate undiluted
3 ounces cream cheese, softened
2 1/2 cups sifted confectioners' sugar
2 tablespoons crushed pineapple, well drained

Steps:

  • Combine cake mix, pudding mix, water, Hawaiian Punch, eggs and oil in large mixing bowl. Blend; beat at medium speed with mixer for 4 minutes. Stir in coconut.
  • Pour into greased and floured 10-inch tube pan; bake at 325ºF. for 1 hours Cool completely before frosting.
  • Frosting: Combine cream cheese with confectioners' sugar and pineapple. Blend well until smooth and creamy. Spread over top and sides of cake.

Steps:

Additional coconut, toasted, optional

  • In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. 15 ounces cream of coconut
20 ounces crushed pineapple (juice reserved)
2 cups heavy whipping cream
½ cup powdered sugar
1 teaspoon coconut extract
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine cake mix, water, vegetable oil and eggs until well combined.
  • Spray a half sheet pan (13"x18"x1") with nonstick cooking spray and spread batter in pan in an even layer.
  • Bake for 15-20 minutes, or until the center of the cake is set.
  • Remove from oven and let cool.
  • Use a fork and poke holes over the entire cake.
  • In a mixing bowl, whisk together sweetened condensed milk, cream of coconut and juice from can of crushed pineapple.
