Steps:

  • Preheat oven to 375 degrees F.
  • Brush 4 large baking sheets well with oil. Arrange the potato slices in one layer on the sheets. Brush with the remaining oil, and top with another baking sheet to prevent curling and bake until golden, 30 to 35 minutes, switching the sheets halfway through baking.
  • Transfer with a spatula to cooling racks. Sprinkle with the Essence and salt, and set aside.
  • In a large, heavy skillet, melt the butter over medium-high heat. Add the shallots and cook, stirring, for 1 minute. Add the mushrooms, salt and pepper, and cook, stirring, until soft and most of the mushroom liquid is evaporated, about 8 minutes.
  • Add the stock, cream, and thyme, and simmer until the liquid has reduced by 50 percent in volume, about 5 minutes. Remove from the heat and stir in the truffle oil. Place 2 potato slices on each of 4 serving plates. Spoon a generous tablespoon of mushroom filling on top, topped with a teaspoon of grated cheese. Continue layering the napoleon so that you have 3 layers of potatoes and 3 layers of mushrooms in all, ending with mushrooms on top. Garnish the top of each napoleon with a sprinkle of cheese and 3 slices of truffle, if desired. Arrange the chives around the outer edge of the plate and serve.

Crisp rounds of potato are layered with wild mushrooms in this hearty dish. Prepare both galettes in the morning, then reheat.

3/4 cup butter
8 ounces oyster mushrooms, trimmed
2 garlic cloves, minced
3 russet potatoes, peeled
1 tablespoon minced fresh thyme

Steps:

  • Cut russet potatoes into 1/8-inch-thick rounds; set aside.
  • Melt butter in large nonstick skillet over medium-high heat. Pour all but 2 tablespoons melted butter into large bowl. Add potatoes and minced thyme to this bowl; toss gently to coat. Season potatoes generously with salt and pepper.
  • Add mushrooms and garlic to the 2 tablespoons butter remaining in skillet.
  • Sauté until mushrooms are tender, about 8 minutes. Cool to room temperature.
  • Position rack in bottom third of oven and preheat to 450°F.
  • Line bottom of two 9-inch-diameter cake pans with 1 1/2-inch-high sides with parchment paper; brush generously with melted butter.
  • Arrange 1 layer of potato slices in bottom of each pan, overlapping slightly.
  • Top each with second layer of potato slices.
  • Spoon on the mushrooms in each pan.
  • Cover with remaining potatoes, dividing equally. Add any remaining butter.
  • Bake potatoes until tender and very brown and crisp on top (bottom will also be brown and crisp), about 40 minutes.
  • Invert galettes onto platters; peel off parchment. Cut galettes into wedges.
  • Tip:.
  • Can be made 6 hours ahead. Let stand at room temperature. Rewarm potatoes in 350°F oven approximately 10 minutes.

2 cups chicken stock or canned broth
2 ounces dried porcini or shiitake mushrooms
6 tablespoons (3/4 stick) butter
2 medium onions, chopped
3 leeks (white and pale green parts only), chopped
2 cups dry white wine
1 teaspoon dried rosemary, crumbled
4 pounds russet potatoes, peeled, thinly sliced (1/8 inch thick)
2 tablespoons goose fat, or 2 tablespoons (1/4 stick) unsalted butter, melted
Minced fresh chives

Steps:

  • Bring stock to simmer in medium saucepan. Add mushrooms; remove from heat. Let mushrooms soak 30 minutes to soften. Squeeze mushrooms, reserving stock. Strain stock. Chop mushrooms, discarding hard stems.
  • Preheat oven to 350°F. Butter 9 x 13-inch baking dish. Melt butter in heavy large skillet over medium heat. Add onions and leeks and sauté until tender but not brown, about 20 minutes. Add mushroom soaking liquid, mushrooms, wine and rosemary and bring to boil. Season with salt and pepper.
  • Arrange half of potatoes in prepared dish. Using slotted spoon, top potatoes with onions, leeks and mushrooms. Pour half of liquid over. Top with remaining potatoes, overlapping slices. Pour remaining liquid over. Cover with foil. Bake until potatoes are almost tender, about 1 hour 15 minutes. Uncover and bake until potatoes are tender, most of liquid is absorbed and top is beginning to brown, about 45 minutes.
  • Preheat broiler. Brush potatoes with 2 tablespoons goose fat or butter. Broil until golden. Sprinkle with chives.

1 lb wild mushroom (such as chanterelles, oysters, stemmed shiitakes, or cremini)
3 tablespoons butter
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 garlic cloves, minced
salt & freshly ground black pepper
4 large russet potatoes, peeled and cut into 1/8 inch slices (a food processor works well)
1/2 cup low sodium chicken broth
1 cup whipping cream (can use fat-free) or 1 cup half-and-half (can use fat-free)

Steps:

  • Preheat oven to 375°.
  • Slice mushrooms into 1/8 inch slices.
  • In a large saucepan, melt butter over medium high heat, add mushrooms and cook until lightly browned, about 5 minutes.
  • Stir in thyme and garlic and cook for 2 minutes; season with salt and pepper.
  • Lightly butter (or use Pam) a gratin dish or a 9-inch square ovenproof dish.
  • Make a layer of half of the potatoes and season with salt and pepper to taste.
  • Spread mushrooms over the potatoes; top with remaining potatoes.
  • In a small bowl, mix the broth and cream; pour over potato/mushroom mixture.
  • Bake for 40-45 minutes or until liquid is absorbed and potatoes have a golden crust.
  • Cut into wedges or squares and serve.

2 pounds new potatoes (such as Yukon Gold), halved
2 tablespoons olive oil, or more if needed
salt to taste
1 teaspoon olive oil
2 ounces pancetta, chopped
¼ pound king trumpet mushrooms, cut into chunks
¼ pound chanterelle mushrooms, cut into chunks
¼ pound nameko mushrooms, trimmed
¼ pound clamshell (shimeji) mushrooms, trimmed
3 tablespoons sherry vinegar
2 tablespoons chopped fresh tarragon
2 cloves garlic, minced
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place potatoes into a large roasting pan and drizzle with 2 tablespoons olive oil. Sprinkle with salt and mix to coat potatoes with salt and olive oil. Turn so the cut sides are up.
  • Roast in the preheated oven for 30 minutes.
  • While potatoes are cooking, pour 1 teaspoon olive oil into a large skillet over medium heat and cook pancetta, stirring often, in the hot oil until pancetta releases some fat and looks like cooked ham, about 5 minutes. Stir in king trumpet, chanterelle, nameko, and clamshell mushrooms, adding a pinch of salt as they cook.
  • Turn heat to high and cook mushrooms until most of the juices evaporate and mushrooms begin to brown, about 10 minutes.
  • Turn oven heat up to 425 degrees F (220 degrees C).
  • Stir potatoes in the baking dish; mix mushrooms and pancetta with potatoes. Return to oven and bake for 10 minutes; stir and continue baking until potatoes are browned, soft, and tender, about 10 more minutes. Let cool slightly, about 10 minutes.
  • Drizzle sherry vinegar over potatoes and mushrooms, sprinkle with tarragon, garlic, and 1 tablespoon olive oil, and toss to mix. Taste and adjust seasoning. Transfer to a serving platter.

Steps:

  • Put oven rack in middle position and preheat to 400°F.
  • Cook chanterelles or shiitakes with salt and pepper to taste in 1 tablespoon butter in a large nonstick skillet over moderate heat, stirring, until liquid mushrooms give off is evaporated and mushrooms are tender, about 8 minutes, then transfer to a bowl. Cook cremini in remaining 1 1/2 tablespoons butter in skillet, stirring, until liquid is evaporated and mushrooms are tender, about 8 minutes, then transfer to bowl with wild mushrooms.   • Peel potatoes and cut crosswise into 1/8-inch-thick slices (preferably with an adjustable-blade slicer). Bring potatoes, cream, milk, salt, white pepper, nutmeg, and remaining 1/2 teaspoon garlic to a boil in a 4- to 6-quart heavy pot, stirring once or twice, then remove from heat.
  • Transfer half of potatoes to buttered gratin dish with a slotted spoon, spreading evenly. Spread mushrooms evenly over potatoes, then top with remaining potatoes. Pour cooking liquid over potatoes and sprinkle with cheese.
  • Bake gratin until top is golden brown and potatoes are tender, 45 to 55 minutes. Let stand 10 minutes before serving.
