HAWAIIAN MARTINI

Roy Yamaguchi's national chain of Hawaiian fusion restaurants serves a martini that will have you singing "Tiny Bubbles" with your imaginary monkey friend Cecil. Whole bottles of Skyy vodka, Stoli Vanil, and Malibu rum are dumped into a giant decanter along with some sugar and pineapple chunks. After three days, when all the hunks of pineapple are floating, the cocktail's ready to be served -- shaken, not stirred -- in a chilled martini glass. Prepare in advance of your next swinging cocktail party since the recipe makes around 36 drinks.

2 (750 ml) bottles skyy vodka
1 (750 ml) bottle stoli vanilla vodka
1 (750 ml) bottle Malibu rum
1 (6 ounce) can pineapple juice
1 cup sugar
1 fresh pineapple, sliced

Steps:

Combine vodkas, Malibu rum, and pineapple juice in a large nozzled decanter or 5 quart jug.
Add sugar and stir until dissolved.
Slice the top and bottom off of a fresh pineapple.
Slice the pineapple in half then slice the halves in half to make quarters.
Cut the rind from each of the quarters, then slice the quarters into 1/2-inch thick slices.
This will make several bite-size wedges.
Add pineapple slices to decanter, and let mixture sit for 3 days.
To make the drink, shake 3 ounces of the martini blend with ice and strain into a chilled martini glass.
Garnish with one piece of pineapple from the decanter, speared on a toothpick.

1/2 ounce lime juice (1 tablespoon)
1/2 ounce monin desert pear syrup (1 tablespoon)
1/4 ounce monin coconut syrup (1/2 tablespoon)
1 ounce coconut water (2 tablespoons)
1 1/2 ounces cruzan guava rum (3 tablespoons)
edible orchid, garnish (optional and won't taste any different)

Steps:

Place all ingredients in a cocktail shaker with about 1/2 cup ice. Shake and pour into a martini glass.

1 medium orange, juiced
1 medium lime, juiced
1 teaspoon Hawaiian sea salt
ground black pepper to taste
1 (14 ounce) can pineapple chunks
4 (5 ounce) mahi mahi fillets
cooking spray
2 stalks green onions, thinly sliced
¼ cup ground macadamia nuts

Steps:

Combine orange juice, lime juice, sea salt, and pepper in a bowl. Add pineapple juice from the can and whisk to combine. Refrigerate pineapple chunks until needed.
Place mahi mahi fillets in a large glass or ceramic bowl. Add marinade and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 3 hours.
Preheat the oven to 375 degrees F (190 degrees C). Cover a rimmed baking sheet with foil and spray foil with cooking spray.
Remove fillets from the marinade and shake off excess. Discard the remaining marinade. Place fillets on the prepared baking sheet. Top with green onions and macadamia nuts.
Bake in the preheated oven until fish is white and flakes easily with a fork, 25 to 30 minutes.
Top fillets with reserved pineapple chunks.
