1/2 cup unsweetened applesauce
8 ounces pineapple crushed dry canned
1/3 cup milk
4 egg whites
1/2 teaspoon pure vanilla extract
1 3/4 cups whole wheat flour
1/3 cup light brown sugar
2 teaspoons baking powder
1/4 cup light brown sugar

Steps:

  • Preheat the oven to 350°F. Lightly grease a 9 inch square baking pan.
  • In a large mixing bowl combine together the flour with the powder and the 1/3 cup sugar.
  • Pour in the blender the egg whites with the applesauce, the vanilla extract and the milk. Blend on high speed until it's white and creamy. Stir in the flour mixture. Stir well with a wooden spoon. Pour batter into the greased baking pan. Cover with the dry crushed pineapple. Sprinkle very well with the remaining 1/4 cup brown sugar. Pour in the oven and bake about 30-35 minutes. Remove and cool about 10 minutes. Cut into squares and serve.

1/2 cup vegetable oil
1/2 cup chopped almonds
2 eggs
1/2 teaspoon salt
1/2 teaspoon baking soda

1 (20 ounce) can crushed pineapple with juice, drained
1 (8 ounce) package cream cheese
1/2 cup butter
1 1/2 cups confectioners' sugar, sifted
1 teaspoon vanilla
1/2 cup finely chopped almonds

Steps:

  • Cake: Combine all ingredients in a large bowl. Beat until smooth, then pour into greased and floured 13x9-inch baking pan.
  • Bake at 350º until a toothpick inserted in center comes out clean, about 45 minutes. Cool and frost.
  • Icing: Cream cheese and butter together; add sugar and vanilla. Beat well until smooth. Ice cake and sprinkle almonds on top.
  • Store cake in refrigerator until ready to serve.

⅓ cup margarine
⅓ cup brown sugar
12 slices fresh pineapple
¼ cup dark rum
3 ⅓ cups sifted all-purpose flour
2 ¼ teaspoons baking powder
6 large eggs
¼ cup orange juice
2 teaspoons vanilla extract
¼ teaspoon freshly grated nutmeg
¼ teaspoon ground cinnamon
1 ¾ cups margarine, softened
¾ cup white sugar
1 (8 ounce) can crushed pineapple, drained and juice reserved
12 maraschino cherries

Steps:

  • Melt margarine in a large skillet over medium heat. Add brown sugar and cook until melted, 2 to 3 minutes. Lay pineapple slices in the sauce and cook until browned, 1 to 2 minutes per side. Lower heat and carefully add rum; simmer for 5 minutes. Remove from the heat and set aside to cool while you prepare the cake.
  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 3-inch deep, 9- or 10-inch round baking pan.
  • Mix flour and baking powder together in a bowl. Beat eggs, orange juice, vanilla, nutmeg, and cinnamon in a second bowl.
  • Cream margarine and sugar in a third bowl until light and creamy and sugar granules are no longer evident. Gradually add egg mixture while continuing to blend. Add drained pineapple and up to 2 tablespoons reserved juice, if needed. Fold in flour mixture until thoroughly combined.
  • Pour cooled sauce into the bottom of the prepared pan, arranging the pineapple slices so they're flat on the bottom. Pour cake batter over the sauce, making sure there is about 1 inch at the top of the pan so the cake has room to rise.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour.
  • Remove from the oven and let cool in the pan for 5 minutes. Invert onto a serving platter and garnish with a cherry in the center of each pineapple slice.

9 canned unsweetened pineapple slices
9 maraschino cherries halves
2/3 cup sugar
2/3 cup fat-free milk

1 large egg, room temperature
1 teaspoon lemon extract
1/2 teaspoon vanilla extract
1-1/3 cups cake flour
1-1/4 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Pour butter into a 9-in. square baking pan; sprinkle with brown sugar. Arrange pineapple slices in a single layer in pan; place cherry halves in center of pineapple slices; set aside., In a large bowl, beat the sugar, milk, oil, egg and extracts until well blended. Combine the flour, baking powder and salt; gradually beat into sugar mixture until blended. Pour into prepared pan., Bake at 350° for 35-40 minutes or until a toothpick comes out clean. 0.333333333333 cups evaporated milk
0.75 cups confectioners ' sugar
0.5 cups butter

Steps:

  • Preheat oven to 350 degrees F. Beat eggs with electric mixer. Gradually add sugar and vanilla. Beat mixture until it is a lemon color. Change speed to low and alternate half the pineapple and the dry ingredients. The pineapple is undrained.
  • Spread mixture on a lightly greased 15x10x3/4-inch jelly roll pan.
  • Bake for 18-20 minutes. Pour the rest of the pineapple (slightly drained) over cake.
  • To prepare glaze, boil all ingredients 3 to 4 minutes until white and bubbly. Pour over cake while still warm. Refrigerate a few hours.
