Like most kids, mine refuse to eat certain veggies. In order to feed them healthy foods, I have to be sneaky sometimes. The veggies give these meatballs a pleasing texture while providing valuable nutrients-and I'm happy to say my kids love 'em. -Courtney Stultz, Weir, Kansas

1/4 head cauliflower, broken into florets
1/2 cup finely shredded cabbage
1 tablespoon potato starch or cornstarch
1 tablespoon balsamic vinegar
1 teaspoon sea salt
1 teaspoon dried basil
1/2 teaspoon pepper
1 pound ground turkey
Optional: Barbecue sauce and fresh basil leaves

Steps:

  • Preheat oven to 400°. Place cauliflower in a food processor; pulse until finely chopped. Transfer to a large bowl. Add the cabbage, potato starch, vinegar, salt, basil and pepper. , Add turkey; mix lightly but thoroughly. With an ice cream scoop or with wet hands, shape into 1 1/2-in. balls. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake 20-24 minutes or until cooked through. If desired, toss with barbecue sauce and top with basil.

2 tablespoons extra-virgin olive oil, or more as needed
½ cup soy milk
½ cup old-fashioned oats
1 pound ground turkey
1 large egg, lightly beaten
¼ cup non-dairy Parmesan cheese substitute
1 tablespoon parsley flakes
¾ teaspoon sea salt
½ teaspoon garlic powder
¼ teaspoon ground nutmeg
coarsely ground black pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Drizzle olive oil over a rimmed baking sheet.
  • Combine milk and oats in a small saucepan over medium heat. Cook until milk is very hot, but not boiling. Reduce heat and simmer until mixture is the consistency of oatmeal, 3 to 5 minutes. Remove from heat and let cool for 5 minutes.
  • Combine turkey, egg, Parmesan cheese substitute, parsley, garlic powder, nutmeg, and pepper in a large bowl. Add cooled oatmeal mixture. Stir with a sturdy spoon or spatula until well combined. Form into 28 meatballs and arrange on the prepared baking sheet.
  • Bake in the preheated oven, turning halfway, until cooked through and evenly browned, 25 to 30 minutes.

These meatballs are so easy to make and taste delicious. If you have not tried making homemade meatballs, they have so much more flavor, are easy to make, and healthier because you get to decide what all goes in them.

1½ pounds ground turkey
½ cup breadcrumbs
¼ cup onion (minced)
1 teaspoon minced garlic
1 Tablespoon olive oil
⅓ cup brown sugar
¼ cup water
½ cup orange marmalade
¼ cup Honey
⅓ cup barbeque sauce
1 Tablespoon buffalo sauce
1 Tablespoon mustard

Steps:

  • Pre-heat the oven to 400 degrees.
  • In a large bowl, combine the ground turkey with the bread crumbs. It may be easiest to mix this with your hands.
  • Once combined, mix in the minced onion and garlic.
  • Roll the ground turkey mixture into 1 inch balls.
  • Heat stove to medium high heat.
  • Pour your olive oil into a pan or skillet.
  • Once the olive oil begins to bubble at the bottom, place your turkey meatballs in the pan or skillet.
  • Let each side of the pan or skillet cook the meatball until it begins to brown on the outside.
  • Brown the meatballs on all sides, then place them in a pan or baking dish and cook the meatballs at 400 degrees for about 20 minutes.
  • While the meatballs are cooking make the sauce as directed by combining the brown sugar and water until they are fully combined and melted together.
  • Add the orange marmalade, honey, barbecue sauce, buffalo sauce and mustard until it's fully combined.
  • Continue whisking until all the ingredients are fully mixed together and it begins to bubble, but don't let it come to a full boil or your sauce will be too thick and sticky.
  • Pour over the cooked meatballs immediately and serve warm.

Starr's Savory Meatballs image

This is my version of meatballs based on experimentation from several different recipes, including my mother's. I like to use these in spaghetti sauce, of course, but they're also delicious in my meatball subs. You can double or triple the recipe - sky's the limit! - and freeze.

2 pounds ground beef
1 small onion, diced
¼ cup dry bread crumbs, or as needed
¼ cup freshly grated Parmesan cheese
2 eggs, slightly beaten
4 cloves garlic, minced
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper.
  • Mix together the ground beef, onion, bread crumbs, Parmesan cheese, eggs, garlic, oregano, basil, thyme, Worcestershire sauce, salt, and pepper in a large bowl until just combined. Divide the mixture into 4 equal portions, then roll each of those portions into 4 meatballs. Arrange the meatballs on the prepared baking sheet.
  • Bake in the preheated oven until no longer pink in the center, 15 to 20 minutes.
