These amazing applesauce cookies are soft, moist and low fat, even though they don't taste like it. Adding applesauce to a recipe to reduce fat has been used for years, in this apple cookie it just brings out the flavor even more.

1/2 cup light brown sugar
1/2 cup granulated sugar
1 large egg
½ cup applesauce ( See note* )
2 ¼ cups all-purpose flour
1 teaspoon cinnamon (See note*)
1 teaspoon nutmeg
1/2 teaspoon ground ginger
½ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
Optional Glaze
1 cup Powdered Sugar
1 teaspoon Milk (regular, almond, cream, any dairy)
1 teaspoon Vanilla (clear or regular, we had cinnamon, color doesn't matter)
1 teaspoon Cinnamon

Steps:

  • Preheat oven to 350. This is a One Bowl Recipe
  • With Electric Mixer- In a large bowl, beat sugar, egg, vanilla. Add applesauce and mix.
  • Add dry ingredients and continue mixing just until combined. Do not over mix.
  • Scoop onto sheet pan, bake 8-10 minutes or until golden brown and set up. Cookies should not spread.
  • Drizzle with icing or Cover in Cinnamon Powdered Sugar

1 1/4 cups quick oats
1 cup white whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt
1/4 cup unsweetened applesauce
4 tablespoons unsalted butter (melted and cooled)
1 large egg
1 teaspoon pure vanilla extract
1/2 cup honey
1/3 cup dark chocolate chips
1/4 cup raisins
1/4 cup well chopped raw walnuts or pecans

Steps:

  • In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
  • When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
  • Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.

1/2 cup (4 oz) unsweetened applesauce
1 cup quick oats
1/2 cup mix-ins of your choice (chopped dried fruit, chocolate chips, etc)

Steps:

  • Preheat oven to 350°F. Line a baking sheet with silicone baking mat or parchment paper.
  • In a large bowl, add applesauce and oats. Mix with a spoon until evenly combined and all oats are moistened. Stir in mix-ins (you can add them onto the cookies right before baking instead for a prettier presentation. See notes for more details).
  • Use a 1.5 tbsp cookie scoop and scoop dough balls, placing them onto prepared baking sheet, spaced 2 inches apart. Using the back of your spoon or the palm of your hand, press down on dough balls to form thick round disks (about 3/8 inch thick). The cookies will not spread or change shape during baking so shape them as needed until they are how you want them to be.
  • Bake cookies about 13-15 minutes or until they are set. If you are unsure if the cookies are set, use a cookie spatula and try to lift a cookie off of the baking sheet. You should be able to lift the cookie off of the sheet in one piece when they are done. Let cookies cool before removing and eating. Store cookies in airtight container at room temperature for 1-2 days or in the fridge or freezer for longer.

1/4 cup granulated sweetener of choice

Steps:

  • Preheat the oven to 180C/350F and lightly grease a baking tray and set aside.
  • In a large mixing bowl, combine the oats, pumpkin, applesauce and granulated sweetener of choice and mix well. If desired, add 2 tablespoons or so of your favorite nut butter.
  • Using your hands, form12 balls and place on the baking tray and press each ball into a cookie shape. Sprinkle lightly with cinnamon and bake for 12-15 minutes, depending on desired consistency.

3/4 cup chopped walnuts
1/3 cup powdered sugar
2 tsp. water

Steps:

  • Heat oven to 325°F.
  • Combine first 4 ingredients. Beat egg, brown sugar, sour cream and applesauce in large bowl with mixer until blended. Gradually add flour mixture, mixing well after each addition.
  • Drop dough into 24 mounds, 2 inches apart, onto 2 parchment-covered baking sheets, using about 2 Tbsp. dough for each mound. Top with nuts; press gently into dough to secure.
  • Bake 16 to 18 min. or until tops of cookies are firm to the touch. Cool 3 min. Remove to wire racks; cool completely.
  • Mix powdered sugar and water until blended; drizzle over cookies. Let stand until glaze is firm.

1 cup Mashed Bananas, very ripe (about 3 bananas)
2 cups Whole Oats
1/2 cup Applesauce
1 tsp. Cinnamon
1/4-1/2 (total) cup Mix-ins of choice: Chopped Dates, Nuts, Chocolate Chips, Coconut, Dried Fruit, etc.
1/4 cup Maple Syrup or Dry Sweetener (Optional)

Steps:

  • Preheat oven to 350 degrees.
  • Mash bananas well in a medium size mixing bowl. I use a bean masher.
  • Mix in applesauce.
  • Stir in oats and cinnamon. Add more oats if it appears too wet. This photo shows the consistency I like.
  • Add in your mix-ins of choice if desired, and optional sweetener.
  • Use a medium sized cookie scoop to form rounds onto a baking sheet fitted with a non stick liner.
  • Flatten rounds slightly with water dampened hand, to the thickness you like. (Getting your hand wet prevents the dough from sticking to your hand). These will not spread, so they will remain the same size.
  • Bake in your preheated oven for about 15 minutes. They should be lightly brown. Cool on tray for a couple of minutes, then transfer to a wire rack to cool completely. They are delicious warm or cold, especially with a tall glass of ice cold Almond Milk! Enjoy! :)

1 tablespoon coconut oil, melted, or oil of choice
1 tablespoon ground flax seeds plus 3 tablespoons water (or 1 egg)

Steps:

  • Lightly oil a baking sheet or line with parchment paper or a nonstick baking mat.
  • Combine the flaxseed and water in a small bowl and give it a few minutes to gel. (Omit this step if you are using an egg.)
