- Heat the canola oil in a large nonstick skillet over a medium-high heat. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes. Add black beans and red pepper flakes and cook until warmed through, another 3 minutes. Season with salt and pepper and transfer to a dish.
- Whisk together the eggs and egg whites then stir in the cheese. Spray the skillet with cooking spray, and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes. Spread each tortilla with 1 tablespoon each sour cream (or yogurt) and salsa, then layer with 1/4 of the black bean mixture, 1/4 of the scrambled eggs, some diced tomato and 1/4 of the avocado. Season, to taste, with hot sauce. Roll up burrito-style and serve.
HEALTHY BREAKFAST BURRITOS
As a high schooler, I' always late in the morning, and often I'm not really hungry after waking up until I get to school. These work great for this; I heat a frozen burrito in the microwave, drive to school, and then chow down during first period (with my teacher none the wiser). However, I've never been able to handle very fatty foods--they just make me sick. So I came up with these little babies, and they've never let me down!

Steps:
- Scramble egg whites in Pam spray.
- Cube potatoes and cook with onion and shredded carrots in Pam spray.
- Microwave, bake, or fry Canadian bacon.
- Layer egg whites, Canadian bacon, cheese, and potato mixture in tortilla. Wrap, burrito-style.
- Freeze and enjoy later.

Steps:
- In a large skillet over medium heat, cook turkey bacon according to package instructions. Remove and set to the side.
- Using the same skillet, add diced sweet potatoes and season with salt and pepper. Cook until soft. Remove from pan and set aside.
- Add diced red bell peppers and cook until softened. Remove from pan and set aside.
- Cook spinach, then set aside.
- Reduce heat to medium-low and pour in beaten eggs. Remove from pan once cooked.
- To assemble the burritos, place down parchment paper, then put the tortilla on top. Add scrambled eggs, sweet potatoes, spinach, bell pepper, turkey bacon, and cheese.
- Fold the left and right side of the burrito in, then fold the bottom up and roll tightly.
- Roll burrito into parchment paper.
- Serve now or place into a bag or reusable container.
- Transfer to the freezer. Freeze for up to 1 month.
- To reheat, remove burrito from parchment paper and wrap in a damp paper towel.
- Microwave for 3 minutes or until warm.
- Rest for one minute.
- Enjoy!

- In a large skillet sprayed with nonstick cooking spray, sauté potatoes for about 3-5 minutes and until they are softening. Chop chicken sausage and add it with onion and bell pepper to the skillet. Continue to cook for a minute or two and then add in spinach. Once veggies are tender and sausage is browned, add eggs, egg whites and seasonings.
- Fill tortillas evenly with 1/4 of the egg mixture and any other toppings you prefer. Fold in the sides of the tortilla over the filling and roll, tucking in the edges as you go. (See video in this post for a visual.)
- Spray cleaned skillet with cooking spray and set the heat to medium. When the skillet is hot, add the burritos, seam side down. Cook, covered, until the bottom of the burritos are golden brown, about 3 minutes. Flip the burritos over and continue cooking, covered, until golden, a few minutes more. Serve warm.
- Make Ahead: The burritos may be assembled a few hours ahead of time, wrapped tightly in plastic wrap and refrigerated, before cooking. To reheat leftover burritos, wrap in foil and warm in a 350°F oven for about 15 minutes. (They won't be as crisp as they are fresh out of the pan, but they reheat well.)
