HEALTHY OATMEAL BREAKFAST COOKIES
Recipe video above. Like homemade granola - in cookie form! A satisfying grab 'n run breakfast that tastes like your favourite Oatmeal Raisin Cookies. Same chewy and moist inside (thanks to the mashed dates!), but not as crispy. And these happen to be healthy! Customisable - see notes.

Steps:
- Preheat oven to 180C/350F (standard) or 160C/320F (fan/convection). Line a tray with parchment/baking paper.
- Roughly chop dates. Place in bowl, pour over water. Cover and leave to soak for 10 minutes+.
- Mash with potato masher or fork until it becomes a paste.
- Add remaining Wet ingredients. Mix well with wooden spoon.
- Add Dry ingredients. Mix until all flour is incorporated - should be a thick batter (see video).
- Measure out just shy of 1/2 cup (6 cookies) or 1/3 cup flat (8 cookies). Flatten to 1.7cm / 2/3" thick rounds. (Note 9) Bake 20 minutes until golden.
- Remove from oven, leave to cool on the tray.

Steps:
- Preheat the oven to 180C/fan 160C/gas 4. Line a baking tray with baking parchment.
- Mix in the bowl: flour, baking powder, porridge, oats, apple and your choice of combination.
- In a saucepan pour in the milk, agave nectar and butter. Heat until the butter is melted.
- Add the liquid to the dry ingredients and mix. with the back of your spoon push it against the mixture to form a ball.
- Place the mixture onto the baking tray and shape. Cook for 15 minutes or till golden brown.
- Cut as soon as it is out of the oven. Cool for 5-10 minutes.
- Serve with a drink. Bon appetit!

Steps:
- Bowl one; Whisk together the OATS, FLOUR, BAKING POWDER, CINNAMON and SALT
- In bowl two whisk together the COCONUT OIL, EGG AND VANILLA. Stir the HONEY into this bowl.
- Add the flour mix from bowl 1 to the wet mix in bowl 2. Stir until the two mixes are just incorporated.
- Fold in the RAISINS
- Chill the dough for 30 minutes and preheat the oven to 170C
- Drop even sized amounts of the mixture onto a baking sheet and flatten slightly, I made 8 large cookies
- Bake for 12-14 minutes
- After the cookies have baked, leave them on the tray for ten minutes. This ensures that they are cooked in the middle without the outsides burning.
- Remove the cookies from the tray onto a wire cooling rack

Steps:
- Heat the oven to 180C/160C fan/gas 4. Line a baking tray with baking parchment.
- Sift the flour into a bowl. Mix in the baking powder, porridge oats and sugar.
- Melt the butter, syrup and milk in a small saucepan or in the microwave and stir.
- Add to the dry ingredients. Mix until the liquid covers all the oat mixture and until well combined.
- Spoon onto a baking tray and shape into rounds, leaving space between each biscuit as they will spread whilst cooking.
- Bake for 10-15 mins, or until golden brown. Leave to cool for 5 mins before removing from tray.
