Fresh Fruity Chicken Pasta Salad image

This colorful fresh fruit chicken pasta salad is perfect for summer barbecues, or year-round potlucks. It always tastes fresh and families love it.

1 egg (lightly beaten)
½ cup orange juice (no pulp)
¼ cup honey
3 tablespoons lemon juice
¼ teaspoon ground nutmeg
¾ cups bow tie pasta (uncooked)
1 small cantaloupe (cubed)
2 cups cooked chicken (cut into cubes)
1 cup seedless grapes (halved)
½ cup celery (sliced)
½ cup walnuts (chopped)

Steps:

  • Cook the bowtie pasta to al dente according to package directions. Drain and rinse with cold water. Set aside.
  • Mix the egg, orange juice, honey, lemon juice and nutmeg in a small saucepan. Cook, stirring constantly, over medium heat until slightly thickened, about 4 minutes. Remove from heat and set aside.
  • Combine the melon, chicken, celery, grapes, walnuts, and bowtie pasta in a large bowl. Toss until well mixed. Pour the dressing over the salad and toss until evenly distributed.
  • Cover and chill in the refrigerator for at least 2 hours. Serve cold.

2 cups uncooked bow tie pasta
2 cups cubed cooked chicken
1 can (11 ounces) mandarin oranges, drained
1 cup halved green grapes
1/2 cup ranch salad dressing

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, oranges and grapes. Drain and rinse pasta with cold water; add to chicken mixture. Drizzle with dressing; toss to coat. 1 stalk celery, chopped
1 (16 ounce) can mandarin oranges, drained
1 cup red seedless grapes

1 cup Cool Whip

Steps:

  • Mix mayonnaise and cool whip in large bowl.
  • Add the rest of the ingredients and mix. (I mix everything else and add the mandarin oranges last.).
  • Best if chilled before serving.

1 tablespoon cooking oil
2 chicken breasts, sliced into strips
2 tablespoons Tasty™ Fiery seasoning mix
½ yellow bell pepper, seeded and sliced
½ orange bell pepper, seeded and sliced
½ medium red onion, sliced
1 ½ cups fresh spinach
3 cups whole milk
½ lb rotini pasta
½ cup mozzarella cheese, shredded
¼ cup parmesan cheese, shredded

Steps:

  • Heat the oil in a large pot over high heat. Add chicken and 2 tablespoons Tasty™ Fiery Seasoning Mix and stir to coat. Cook until the chicken is no longer pink, 5-6 minutes, then remove from the pot.
  • Add the yellow and orange bell peppers, and red onion to the pot and toss well to combine. Cook until the onion is translucent, 5-7 minutes.
  • Return the chicken to the pot with the milk and pasta. Be sure to stir occasionally to prevent the pasta from sticking together. Cook for about 20 minutes, until the pasta is al dente and the liquid has reduced to a thick sauce that coats the pasta.
  • Add the spinach, mozzarella, and parmesan cheeses and stir until melted.
  • Serve warm.

1 lb boneless skinless chicken breast, cut into 1 in chunks
2 cups frozen broccoli
8 oz penne pasta, or rotini pasta, uncooked
1 package cream cheese, cubed
2 cups chicken stock, such as Kitchen Basics®
1 cup milk
1 package Tasty™ Fiery seasoning mix
1 cup shredded cheddar cheese

Steps:

  • Preheat your oven to 375°F (190°C).
  • Mix together the stock, milk and seasoning mix in a large bowl until well blended.
  • Arrange chicken and broccoli in a single layer in a 9X13-inch baking dish sprayed with non-stick cooking spray. Top evenly with pasta and cream cheese.
  • Pour the seasoned stock over the pasta in the baking dish and cover tightly with foil.
  • Bake for 50 minutes, remove foil and stir together to incorporate. Stir and sprinkle with shredded cheese. Bake, uncovered, for 5 minutes or until cheese is melted. Let stand at room temperature for 10 minutes before serving.
