HEALTHY OATMEAL-CHOCOLATE CHIP COOKIES
Here's your new cookie jar staple. This recipe for classic oatmeal chocolate chip cookies gets a healthy boost with whole-wheat flour and uses less sugar and butter than traditional recipes. Don't hesitate to make a double batch--they're so satisfying they'll be gone fast.

- Preheat oven to 350 degrees F. Lightly coat a baking sheet with cooking spray.
- Whisk flour, baking powder and salt in a medium bowl. Whisk brown sugar, butter, egg and vanilla in a large bowl. Add the flour mixture, oats and chocolate chips; stir with a wooden spoon until well combined. Drop level tablespoons of the dough onto the prepared baking sheet, making 12 cookies per batch.
- Bake until golden brown on the bottom, 12 to 14 minutes. Cool on the pan for 5 minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.

- Beat butter, yogurt, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Add eggs one at a time. Beat in vanilla extract. Mix in flour and baking soda until just incorporated. Fold in quick oats, walnuts, chocolate chips, carrots, and cranberries. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.

- Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside. Alternatively, use two baking trays, to avoid cookies from overspreading.
- In a large mixing bowl, add your coconut sugar, white sugar, coconut oil, applesauce and vanilla extract, and mix until fully combined. Then, add your flour, baking soda, and salt, and mix well. Finally, fold through your oats and chocolate chips, until just combined. Do not overmix. Refrigerate the dough for 30 minutes.
- Remove the dough from the refrigerator. Using a cookie scoop or large spoon, drop balls of cookie dough onto the lined trays, about 2 inches apart.
- Bake the cookies for 15-17 minutes, or until just beginning to go golden brown around the sides. Remove from the oven and let cool on the tray for 10 minutes, before transferring to a wire rack to cool completely.

HEALTHY BUT TASTY CHOCOLATE CHIP OATMEAL COOKIES
My sister is forever asking for "desserts that are healthy but don't taste like it." I tried this one and she couldn't believe how healthy they were because they tasted so good. If you want to make it healthier, substitute dried cranberries or raisins for teh chocolate chips. Splenda can be substituted for the white sugar.

- Preheat oven to 375°.
- Beat the sugars and butter until light and fluffy. Add orange juice, corn syrup, egg, vanilla extract, and butter flavor; beat well.
- In a separate bowl combine flour, flax, wheat germ, baking soda, baking powder, and salt. Stir in the oats and chocolate chips.
- Add to sugar mixture; stir until well-blended.
- Drop by tablespoons onto baking sheets coated with cooking spray. Press 3-5 pecan/walnut pieces onto the tops of each cookie if desired.
- Bake at 375° for 8 minutes or until almost set. Cool on a wire rack.
