Healthy Chicken Sausage Casserole

12 Oz (340g) Chicken sausage of choice
2 Cloves minced garlic
3 Cups (320g) chopped mixed peppers
1 1/2 Cups (160g) Chopped onion
14.5 oz (400g) Can of diced tomatoes (drained)
1 Cup (120g) sliced white mushrooms
1 1/2 Cups (354ml) water
2 Cups (454g) low calorie tomato sauce
8oz (227g) box of Banza elbow macaroni (if you can't find Banza use a pasta substitution of your choice)
10 oz (280g) Fat-free mozzarella cheese
1 tsp Italian seasoning

Steps:

  • Coat a large pan with baking spray
  • Add in chicken sausage - removing casing if necessary
  • Cook until browned and set aside
  • Re-coat Pan and add in garlic, peppers and onions
  • Cook until browned
  • Now add in tomatoes, mushrooms, chicken sausage from earlier, and the Italian seasoning
  • Mix these ingredients well
  • Add in water and tomato sauce
  • Bring it up to a boil and let simmer for 15 minutes
  • In a 9X13 casserole dish add in just enough sauce to cover the bottom of the dish
  • Top with the uncooked pasta and cover with the rest of your sauce
  • Finally top with the cheese.
  • Cover with tin foil and cook at 350 Degrees | 177 Celsius for about an hour

My grandmother always makes this for family gatherings like the birth of a baby or a funeral, because it is very filling and comforting, and leftovers store really well. I freeze it BEFORE baking, if I do, but it'd probably work well to freeze after it's baked too. My husband loves loves this recipe.

3 -4 lbs chicken
1 lb sausage
1 box long grain rice
2 cans cream of mushroom soup
1 can water or 1 can chicken broth
1 cup diced onion
3/4 cup diced celery
black pepper

Steps:

  • Cook and debone chicken.
  • Saute onions and celery for about 4 minutes in a bit of olive oil; add sausage, crumbling it.
  • Cook until done, crispy.
  • Prepare box of long grain rice per directions.
  • (I use Uncle Ben's) Mix all ingrediants together in a 9x13 casserole dish (easiest to do with your hands); you'll likely have some left over that you can put in a smaller baking dish.
  • Sprinkle liberally with black pepper Cover with aluminum foil and bake 30 minutes at 350 degrees.
  • Freezes VERY WELL.

3 -4 cups diced cooked chicken
1 lb pork sausage
1 stalk celery, chopped fine
1 tablespoon onion, chopped
1/2 lb mushroom, sliced
8 ounces cream cheese, softened
16 ounces frozen cauliflower, cooked well and drained
8 ounces cheddar cheese, shredded
salt
1/2 teaspoon pepper
paprika (optional)

Steps:

  • Brown the sausage with the celery, onion and mushrooms.
  • Stir the softened cream cheese into the sausage mixture until well blended.
  • Coarsely chop the cooked cauliflower.
  • Mix all ingredients, including the chicken, and spread in a greased 9"x13" baking dish.
  • If desired, dust the top with paprika.
  • Bake, covered with foil, at 350º for about 30 minutes.
  • Uncover and bake until hot and bubbly and top is lightly browned, about 10 to 15 minutes.

A simple yet deliciously flavorful casserole that pretty much invented itself one evening in my kitchen!

1 cup long grain brown rice
2 1/4 cups chicken stock
2 tablespoons olive oil
1/2 cup onion, chopped
3 garlic cloves
2 teaspoons cumin
1 teaspoon cayenne pepper
chicken sausage, 4-pack buffalo flavored and cut in 1/2 inch slices (we use precooked Al Fresco)
1/4 cup ranch dressing (we use Hidden Valley light)
10 ounces cream of celery soup
15 1/2 ounces black beans, rinsed and drained
1 cup cheddar cheese, shredded
1 -2 dash hot sauce (we use Frank's)
sour cream
mild salsa

Steps:

  • FOR THE RICE:.
  • Bring 1 cup rice and 2 1/4 cups chicken stock to boil in medium saucepan.
  • Once boiling, stir once, cover, reduce heat and let simmer 40-45 minutes.
  • FOR ONION/GARLIC MIXTURE:.
  • Saute onion in olive oil for 3-4 minutes on medium heat.
  • Add garlic, cumin and cayenne pepper and cook an additional minute, stirring frequently.
  • Preheat oven to 350 degrees.
  • Mix cooked rice, onion mixture, chicken sausage, ranch dressing, soup, beans and cheese together in large casserole dish.
  • Add 1-2 dashes hot sauce (or more to taste) and stir again. If desired, sprinkle top with additional cheese.
  • Bake uncovered for 25 minutes.
  • Top individual servings with dollop of sour cream and fresh salsa.

  • Add the oil and chicken sausage to a large, deep oven-safe skillet or dutch oven, and cook over medium until golden brown on both sides. Use a slotted spoon to remove the sausage and set it aside.
  • Add the potatoes and salt to that same skillet and sauté over medium until they can just be pierced with a fork, approximately 8-10 minutes. You don't want them to be too soft or else they'll fall apart in the oven. You may need to add more oil so they don't stick to the skillet. Then, use a slotted spoon to remove the potatoes and place them into the bowl with the chicken sausage.
  • Place onion and garlic into the skillet and sauté for 2-3 minutes or until the onion is soft. Then, pour the milk into the skillet and sprinkle the cornstarch overtop. Whisk continuously until the cornstarch has dissolved, then bring the milk to a low simmer. Once the milk starts simmering, sprinkle the cheese in a little at a time, whisking until it melts. Do this until all the cheese is gone.
