This incredibly easy and healthy edible chickpea cookie dough is finger-licking good and made from just a handful of staple foods! High in protein, gluten-free and perfect for a kid-friendly portable treat, this no-bake beginner recipe is ready in 10 minutes and easy to customize.

1 15-oz can chickpeas, drained (240 g)
½ cup almond flour (56 g)
2 tablespoons oat flour
4 tablespoons almond butter
6 dates, pitted (60 g)
1 teaspoon vanilla extract
1 teaspoon baking powder (optional)
⅓ cup chopped dark chocolate (60 g)
Pinch of salt (optional)

Steps:

  • Add the dates, almond butter and vanilla extract to a food processor jar and pulse to obtain a puree.
  • Next, add the chickpeas, almond flour, oat flour and baking powder. Process again to obtain a thick, smooth and creamy batter. Stop and scrape down the sides as needed.
  • Get a spoon and make a quick taste test to see whether you want to make any adjustments.
  • Transfer the cookie dough into a bowl, add chopped chocolate and mix with a spoon.
  • Enjoy your edible chickpea cookie dough immediately or transfer it into an airtight container and refrigerate for up to 5 days to have a healthy and delicious snack ready anytime!

2 tablespoons honey

Steps:

  • Mix first six ingredients in a food processor until the chickpeas are completely blended and smooth. Stir in chocolate chips.
  • For bars or cookie dough truffles, line a glass dish with parchment paper and put in the freezer for 45 minutes. Once removed from the freezer, let the cookie dough thaw for 5 minutes. For an extra indulgent treat, drizzle them with melted chocolate, and sprinkle flaked sea salt on top.

1 15 oz can (1 ½ cups) no salt added drained and rinsed canned chickpeas (see my notes)
¼ cup natural peanut butter
2 tsp vanilla extract
3 tbsp almond flour
2-4 tbsp maple syrup or more to taste (see my notes)
½ tsp cinnamon
1/4 tsp salt
Optional 2-3 tablespoons of unsweetened vanilla almond milk (see notes)
2 tablespoons dark chocolate chips
2 tbsp toasted coconut
3 tbsp dried cranberries
1 tbsp of sprinkles (plus a few more for the top)
1 ½ tsp cocoa powder
1 tsp unsweetened almond milk
1 tsp maple syrup
2 tbsp dark chocolate chips

Steps:

  • In the bowl of a food processor, combine the chickpeas, peanut butter, vanilla, almond flour, maple syrup, cinnamon, and salt.
  • Mix for about a minute, then scrape down the sides of the bowl. Mix for another minute or so until the mixture is smooth and creamy.
  • Add almond milk as desired to achieve a texture that is more of a dip.Divide the cookie dough mixture into 4 equal portions. Use a rubber spatula to fold the mix-ins for each variation into each portion of dough.
  • Cover and refrigerate the cookie doughs until ready to serve.

½ cup pure maple syrup, or to taste
3 tablespoons all-purpose flour
½ teaspoon vanilla extract
⅛ teaspoon salt
½ cup vegan chocolate chips
2 tablespoons peanuts

Steps:

  • Combine chickpeas, peanut butter, maple syrup, flour, vanilla, and salt in a powerful blender, such as a Vitamix®. Blend until smooth, using tamper if needed. Scoop into a bowl.
  • Stir in chocolate chips and peanuts. Roll mixture into balls.
