EASY AND HEALTHY DARK CHOCOLATE MOUSSE

Steps:
- In a blender, process tofu until smooth.
- Combine chocolate, cocoa, water and brandy in a small saucepan over medium heat; stir until melted.
- Remove from heat; mix in sugar, a little at a time, until smooth.
- Add chocolate mixture to tofu; process until smooth.
- Spoon mousse into champagne glasses; cover and refrigerate for at least one hour.
- Top with whipped cream and shaved chocolate, if desired, and serve!

- In the food processor, mix avocados, bananas, and agave nectar until smooth. Blend in cocoa to taste. Blend in vanilla, salt, cinnamon, and nutmeg. Serve in cups, with fruit, or use as icing. Enjoy!

- Place a small saucepan over medium heat, add milk and chocolate. Stir until chocolate melts into a smooth sauce. Stir in the honey and vanilla extract.
- In a medium sized bowl, add Greek yogurt and slowly pour the chocolate mixture over the top. Stir until evenly blended. Cover bowl with plastic wrap and place in the fridge to chill for 2 hours.
- Once chilled, serve cold. Optional: top with whipped cream, extra Greek yogurt, chocolate shavings and/or your favorite fresh berries. Mousse can be stored in the refrigerator for up to 2 days.

- In a small saucepan, whisk together egg yolks, Greek yogurt, brown sugar, flour, and sea salt. Place over low heat and cook, stirring constantly, for 3 minutes. Meanwhile, melt your chocolate chips in a double boiler or in a microwave.
- In a standing mixer, whip egg whites to stiff peaks. Slowly drizzle in melted chocolate mixture, folding carefully as to not deflate the egg whites. Fold until homogenous.
- Pour mousse into 8 small ramekins, then refrigerate for at least 2 hours (up to 5 days) before serving! Optional toppings: whipped cream and chocolate shavings!
