1 cup gluten free rolled oats
2/3 cup almond flour
2/3 cup brown sugar
2/3 cup pecan halves (chopped)
1/2 teaspoon kosher salt
6 tablespoons unsalted butter
2 1/2 pounds mixed apples
1/4 cup pure maple syrup or honey
2 tablespoons bourbon (or rum or water)
1 1/2 teaspoons ground cinnamon
1 tablespoon freshly squeezed lemon juice
1/2 tablespoon cornstarch
Vanilla ice cream (frozen yogurt, or Greek yogurt, for serving)

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish with non-stick spray.
  • In a medium bowl, stir together the oats, almond flour, brown sugar, pecans, and salt.
  • In a microwave-safe bowl in the microwave (or a saucepan on the stove), melt the butter. Pour over the top of the oat mixture. With a fork or rubber spatula, stir until the crumbs are evenly moistened.
  • To a large mixing bowl, add the apples, maple syrup, bourbon, cinnamon, lemon juice, and cornstarch. With a big spoon, stir to combine.
  • Scoop the apples and any liquid that has collected at the bottom of the bowl into the prepared baking dish into an even layer. It will be very full. Nudge the apple slices around a bit so that they lay fairly flat.
  • With your hands, squeeze chunks of the crumb mixture together to create clumps of assorted sizes, and place them on top of the apples. Scatter any remaining crumb mixture over the top.
  • Bake the crisp until the apples are tender (you may need to use a fork to peek down underneath that generous topping and check on the apples) and the crumb topping is crisp and deep golden brown, about 45 to 55 minutes. Check the crisp halfway through, then periodically during baking; if at any point, the topping browns more quickly than you would like, tent the pan with foil to protect the crust, then continue baking as directed. Serve warm with a big scoop of ice cream.

¼ cup rice flour
3 tablespoons white sugar
1 teaspoon ground cinnamon
¾ cup brown sugar
½ cup butter, softened
½ cup rice flour
½ cup quinoa flakes
½ cup rice flakes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine apples, 1/4 cup rice flour, white sugar, and cinnamon in a bowl; transfer to an 8-inch baking dish.
  • Mix brown sugar, butter, 1/2 cup rice flour, quinoa flakes, and rice flakes in the same bowl used for apple mixture. Sprinkle crumble topping over apple mixture and pat down gently.
  • Bake in the preheated oven until apples are tender and topping is slightly browned, 35 minutes.

A healthy gluten free apple crisp recipe that tastes anything but healthy! Sweet apples with a crunchy oat and almond flour topping. There is no better dessert in the winter to enjoy than apple crisp warmed with a little scoop of vanilla ice cream or vanilla greek yogurt. Delish!

2 1/2 lb honey crisp or granny smith apples (5-6 apples approximately)
1/3 cup honey
1 tsp lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
2 tsp vanilla
1 tbsp cornstarch
2/3 cup rolled oats (gluten-free)
1/3 cup almond flour
1/3 cup brown sugar (packed)
1/4 cup unsalted butter (cold)
1 tsp cinnamon
1/4 tsp salt

Steps:

  • Preheat oven to 350F.
  • Peel, core and thinly slice 5-6 honey crisp or granny smith apples. Place in a large bowl.
  • Add 1 tsp lemon juice, 2 tsp vanilla, 1/3 cup honey, 1 tsp cinnamon, 1/4 tsp nutmeg and 1 tbsp cornstarch to a large bowl with apples and mix until apples are evenly coated. Then pour the apple mixture into the 8" X 8" pan.
  • In a medium bowl add 2/3 cup gluten-free rolled oats, 1/3 cup almond flour, 1/3 cup packed brown sugar, 1/4 cup cold butter cut into cubes, 1 tsp cinnamon and 1/4 tsp salt. Mix with a fork or pastry cutter till the butter and oat mixture forms a lumpy oatmeal-like texture. Then pour the oat mixture into the 8" X 8" pan over top of the apples evenly. Gently press down on the oat mixture to seal the edges and create a flat top. Try and make sure the entire top is covered with few wholes for the apples to peak out of.
  • Bake at 350F until the top is golden and the apple mixture is bubbling around the edges. About 45-50 minutes. Remove from the oven and let rest on a cooling rack for 10 minutes before serving. Serve with a scoop of vanilla ice cream or a dollop of vanilla greek yogurt.
  • Store any leftovers once completely cooled tightly covered with foil in the fridge for up to 3 days. Reheat in the microwave or in the oven if you want to crisp up the crumble again.

4 cups apples, peeled & sliced, such as Granny Smiths
1 tablespoon sugar
2 tablespoons water
1 teaspoon cornstarch
1 teaspoon ground cinnamon
1 pinch nutmeg
1/2 cup almond flour
1/2 cup certified gluten free old fashioned oats
1/4 cup brown sugar
1 teaspoon cinnamon
2 tablespoons softened unsalted butter

Steps:

  • Preheat the oven to 350. Coat a pie dish with cooking spray. In a large bowl, toss together the apples, sugar, water, cornstarch, 1 teaspoons cinnamon, and nutmeg until well combined. Set aside.
  • Make the oatmeal topping: In a bowl, gently combine: almond flour, oats, brown sugar, 1 teaspoons cinnamon, and butter until crumbly.
  • Place the apple mixture in the dish. Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is browned. Serve, hot, warm, or at room temperature.
