- Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
- Preheat broiler and set rack 12 inches from heat.
- While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
- Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.

- 1. Cook the macaroni and drain well. Place in a greased 2 qt. casserole dish. Top with sliced hot dogs.
- 2. Melt the butter on top of stove in a saucepan. Saute the shallots 2 minutes. Add the flour and make a roux. Slowly add the milk and cook until thickened a bit. Slice the Velveeta into pieces and add to milk. Stir and cook until smooth and melted.
- 3. Pour the cheese sauce over the macaroni and hot dogs. Stir to combine. Season with salt and pepper. Place in preheated 350 degree oven and bake 20 minutes.

- Make mac and cheese: In a large skillet over medium heat, melt butter. Add flour and whisk until combined. Let cook until golden, 1 minute, then pour in milk and season with salt and pepper. Let thicken, 3 minutes, and add cheddar. Stir until melty and creamy then add cooked macaroni and stir until coated. Stir in cooked bacon.
- Top mac and cheese on hot dogs and garnish with more bacon and chives.
HOT DOG CHEESY MACARONI CASSEROLE
Steps:
- Preheat the oven to 350°F. Spray a 12 x 8 inch baking dish with cooking spray. Set aside.
- Cook the macaroni in salted water per the package directions until al dente. Drain well.
- Meanwhile, in a separate pan over medium-high heat add 6 Tbsp of butter to reserved 2 Tbsp bacon drippings. Add onion.
- Cook for 3 minutes until the onion has softened. Lower the heat to medium and add the flour, garlic salt, mustard and black pepper. Stir until the flour has absorbed the butter. Cook stirring constantly for 1 minute.
- Gradually whisk in the milk. Bring to a boil then immediately lower the temperature to low heat. Allow to bubble gently for 5 minutes to thicken.
- Remove sauce from heat. Add 3 cups cheddar cheese and crumbled bacon. Reserve 2 Tbsp crumbled bacon for garnishing. Stir until the cheese has melted.
- Pour sauce over macaroni. Add hot dogs. Mix until macaroni is evenly coated and hot dogs are evenly distributed. Pour into the baking dish.
- Top with the remaining 1 cup of cheese. Dot with 1 Tbsp butter.
- Bake for 30-35 minutes until golden and bubbly.
- Garnish with bacon crumbles and sliced green onion. Serve immediately.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Eva Smith. The printed version of this recipe makes me giggle because there is a typo where the hot dogs are called 'hot gods'. Eva didn't specify serving yield, so I am guessing.

- Melt butter in Dutch oven.
- Cut hot dogs in half and then into small pieces.
- Simmer onion, pepper and hot dogs in butter for about 10 minutes or until brown.

- Fill a medium sized pot with hot water about half way.
- Put the water on the stove at high heat.
- Add box of Kraft macaroni and cheese dinner.
- Cut up the hod dogs into 1/4 pieces and drop in the water.
- Bring everything to a boil.
- Once the water boils, reduce the heat and continue to cook until the macaroni is tender.
- Drain water.

- Bring a large pot of salted water to the boil and cook the macaroni pasta according to packet instructions.
- While it's cooking, make the roux - melt the butter in a medium saucepan (big enough to hold the cooked macaroni) over low heat. When the butter begins to foam, add the flour.
- Mix the butter and flour well with a small whisk or spatula to form a paste. Keep stirring over a low heat for 1 minute.
- Add the milk bit by bit and mix well. Make sure its completely incorporated with the roux each time before you add more milk. I prefer to use a whisk for this but a spatula or wooden spoon also work.
- Keep stirring over a low heat until the mixture is thick enough to coat the back of a spoon.
- Take off the heat and stir in the mustard powder and some salt and pepper. Mix in the grated cheese.
- When the macaroni is done cooking, drain it and add to the cheese sauce. Reserve a cup of the water you cooked the pasta in - you can add a little to loosen your cheese sauce if you find it is too thick.
- Slice open your rolls and add the cooked Frankfurters. Top with a generous spoonful of macaroni.
- Dice the crispy cooked bacon really finely then sprinkle on top of the mac and cheese. I also like to garnish with some diced spring onion or chives.

- Make the mac and cheese: Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs until al dente. Drain the pasta well and let cool.
- In a medium saucepan, heat the milk and 2 cups heavy cream over medium heat until warm (do not boil). In a separate medium saucepan, melt the butter over medium heat. Add the flour to the butter and stir until incorporated, about 5 minutes, making sure it doesn't brown. Add the warm milk and heavy cream, in batches, and whisk until incorporated. Bring to a simmer and cook, whisking, about 15 minutes.
- Add the American, gruyere and parmesan cheeses to the milk mixture and whisk until melted, 2 to 3 minutes (do not boil). Remove from the heat. Puree with an immersion blender until smooth (or transfer to a regular blender in batches and puree). Let cool to room temperature and mix with the pasta.
- Make the hot dogs: Lightly oil a grill pan and preheat over medium-high heat. Grill the hot dogs until slightly charred, 5 to 7 minutes. Reheat the mac and cheese in a saucepan with the remaining 1/4 cup heavy cream; season with salt and pepper. Place the hot dogs on the buns and top with the mac and cheese. Season with pepper.
