NO BAKE GRANOLA BARS
Great quick and easy granola bar recipe that kids can make. Perfect to throw in lunches or in your purse for travel. You can also add 1/4 cup wheat germ without changing the consistency. Change up the dried fruit, nuts, and chocolate for different flavors. I generally keep the bars in the refrigerator until I am ready to eat them, but these keep well to take to work or school.

Steps:
- Stir oats, peanut butter, flaxseed, honey, cranberries, chocolate chips, and almonds together in a bowl; press into a 9x11-inch baking dish, using the back of a spatula to press into a flat layer.
- Refrigerate mixture at least 1 hour.
- Cut into 12 bars and wrap each individually in plastic wrap for storage.

HEALTHIER NO-BAKE COOKIE BARS
Healthy no bake cookie bars are thick, chocolatey and just 6 simple, wholesome ingredients! They make a great afternoon snack, lunch box treat or dessert!

Steps:
- Grease an 8x8 glass pan with cooking spray and set aside.
- Combine peanut butter, honey and milk in a medium pot over medium heat. Stir until well combined.
- Add remaining ingredients, turn off heat and stir until the chocolate is melted.
- Pour mixture into prepared pan and let cool slightly. Cover with plastic wrap and chill for an hour.
- Cut into bars and serve!

HEALTHY 5-INGREDIENT GRANOLA BARS
Steps:
- Process dates in a food processor until small bits remain (about 1 minute). It should form a "dough" like consistency. (Mine rolled into a ball.)
- Optional step: Toast your oats (and almonds if raw) in a 350-degree F (176 C) oven for 10-15 minutes or until slightly golden brown. Otherwise, leave them raw - I prefer the toasted flavor.
- Place oats, almonds and dates in a large mixing bowl - set aside.
- Warm maple syrup (or agave or honey) and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout.
- Once thoroughly mixed, transfer to an 8x8-inch baking dish or other small pan lined with plastic wrap or parchment paper so they lift out easily. (A loaf pan might work, but will yield thicker bars // adjust size of pan if altering batch size).
- Press down firmly until uniformly flattened - I use something flat, like a drinking glass, to press down and really pack the bars, which helps them hold together better.
- Cover with parchment or plastic wrap, and let firm up in fridge or freezer for 15-20 minutes.
- Remove bars from pan and chop into 10 even bars (or 9 squares // as original recipe is written). Store in an airtight container for up to a few days. I kept mine in the freezer to keep them extra fresh, but it isn't necessary.

- Line a 9-inch square pan with parchment paper and set aside.
- Put the oats in a large bowl.
- In a small saucepan over medium-high heat, bring the maple syrup to a boil. Once it's bubbling, mix it in the oats, along with the peanut butter, any of the optional ingredients and your "add ins".
- Quickly mix everything together as it will become very hard to mix if you wait.
- Transfer the mixture to the lined loaf pan, and press down very hard to pack it tightly. This will help the bars stay together. If you want to add more toppings on top, go for it now! Put the pan in the fridge or freezer for 1 hour then using a serrated knife, cut into 16 bars.
