SLOW COOKER 3-BEAN CHILI
This is so easy and so tasty. Freezes great for meals later in the week. If you want it a little thinner add an extra can of tomato sauce. Also the green chiles are not hot but add a wonderful flavor, so don't be afraid of them.

Steps:
- Cook and stir turkey in a large skillet until completely browned, 7 to 10 minutes; transfer to slow cooker.
- Stir tomatoes, tomato sauce, pinto beans, kidney beans, black beans, onion, green chilies, chili powder, garlic, oregano, and cumin with the turkey in the slow cooker.
- Cook on High for 4 hours or on Low for 7 hours.

- Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and cook, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.

- Heat a large skillet over medium-high heat. Cook and stir turkey, onions, and Anaheim chile peppers in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and transfer turkey mixture to a slow cooker.
- Mix kidney beans, Mexican-style tomato sauce, chili powder, cornmeal, garlic, onion flakes, cocoa powder, cumin, ground black pepper, sugar, parsley, oregano, beef base, red pepper flakes, and coriander into turkey mixture. Add enough water to reach desired consistency.

- Rinse and drain three cans of beans, low sodium preferred. I used pinto, black, and light kidney beans and that is the combination I recommend.
- To 4.5 quart or larger crock pot add the cooked ground meat, prepared veggies, two 14 oz cans of diced tomatoes (substitute one 10 oz can of Ro-Tel for one can if you want.) - Trim off the ends of the zucchini + cut it down the center lengthwise before chopping into half-moons (about ½” thick). Cut the celery and carrots into thick ½” pieces as well. If your carrots are rather large (ie: if they are closer to the circumference of the zucchini), cut those into bite-sized half-moons instead of rounds so they are easier to eat.
- Preheat a pan over medium heat. Add ½ tbs cooking oil to the pan. Add onion and a sprinkle of salt. Sauté onion for a few minutes, until almost translucent. Then add celery and carrots and cook for a few minutes (or until slightly softened). While you wait for the veggies to cook through, open all the canned ingredients (the tomatoes + beans). Pour the diced tomatoes (liquid included) straight into the slow cooker, liquid and all. For the beans, drain the liquid from the can first and rinse them well before adding them to the bottom of the crockpot too. When the veggies are done cooking, add them to the crockpot as well.
- Add the remaining ½ tbs of oil to a large pan over medium-high heat. Add the ground meat and begin browning the turkey. After a minute or two, add the chili powder + oregano + garlic powder + 2 tbs of water and stir until well coated. The water will help rehydrate the dried spices so the flavors can really adhere to the meat. Turn off heat and add entire contents of pan to the crockpot.
- Add 1 tsp of salt to the crockpot. Stir. Cover and cook on low for 8 hours (or on high for 4 hours).
