Sweet Potato Potato Salad image

Move over white potatoes, this Cold Sweet Potato Potato Salad is a delicious twist on the classic! This healthy potato salad recipe is the perfect balance of sweet and savory; it's gluten-free, vegan, paleo, and allergy-free! This quick and easy side dish is ready in 15 minutes making it great for weeknight dinners or a make-ahead dish for potlucks and cookouts!

2 lbs of Sweet Potatoes (peeled, cubed)
1/2 Cup Chopped Celery
1/2 Cup Diced Red Onion
1/2 Cup Dried Cranberries (unsweetened or sweetened)
1/3 Cup Unsalted Roasted Sunflower Seeds
2 TB Chopped Scallions
1/2 Cup Homemade Vegan Mayo (or store-bought)
1 TB Dijon Mustard (or Honey Mustard)
2 TB White Vinegar
Lemon Zest, Black Pepper, Salt (to taste)

Steps:

  • Prepare your sweet potatoes by method of choice: boiling, steaming, or microwaving. Add your fork-tender potatoes to a large mixing bowl to cool.
  • Add the veggies, seeds, and cranberries to the cooked sweet potato.
  • Mix together the mayo dressing and pour it over the salad.
  • Toss everything to coat and combine. Chill before serving.

An easy side dish for a bbq or picnic, this healthy cold sweet potato salad is paleo and dairy-free. Minimal ingredients and lots of antioxidants in this easy healthy potato salad.

4 sweet potatoes (, washed and cubed)
2 hard boiled eggs (, peeled & diced)
2 tbsp diced onion
1/4 cup avocado mayonnaise
1 tbsp yellow mustard
1 tbsp lemon juice
2 tsp apple cider vinegar
salt & pepper to taste

Steps:

  • Add roasted potatoes, diced eggs and onions to a medium-sized bowl.
  • In a separate large bowl, whisk dressing ingredients together.
  • Add potato/egg/onion mixture to dressing and mix to combine. Chill until ready to serve.
