A healthy version of my favorite Quesadillas! Easy to prepare recipe, and I use it, but I'd hardly call it "healthy" when a serving contains 51% of the daily sodium value.

2 whole wheat tortillas
1/4 cup shredded monterey jack cheese (Reduced Fat)
1/4 cup shredded cheddar cheese (Reduced Fat)
1/3 medium tomatoes, chopped
2 teaspoons diced onions
1 teaspoon diced jalapenos or 1 teaspoon pepper
1/4 teaspoon chopped cilantro
1 slice low-fat bacon, cooked
salt

Steps:

  • heat pan over med heat.
  • put 1 tortilla in the pan.
  • spread all cheeses onto the center of tortilla.
  • put in tomato, onion, and pepper over the cheese.
  • crumble bacon and sprinkle it on.
  • finish with cilantro and salt.
  • fry the reminding tortilla, both sides.
  • remove and serve.

2 tablespoons organic low sodium chicken broth
1/4 cup onion, chopped
1 small garlic clove, minced
1/4 cup bell pepper, chopped
2 chili peppers, minced (to taste)
3 plum tomatoes, chopped
nonstick cooking spray
8 flour tortillas
1 cup low-fat cheddar cheese, shredded
1 1/2 cups cooked chicken, shredded
scallion, cut on the bias (garnish)
salsa (garnish)
nonfat sour cream (garnish)

Steps:

  • In a medium-heavy skillet, saute the onions, garlic and peppers until soft in the 2 tablespoons chicken broth.
  • Add the chili peppers and tomatoes and simmer for a few minutes more until the liquid has evaporated.
  • Add the chicken and stir well to combine.
  • Spray a cold skillet with the nonstick spray and heat over medium heat.
  • Place a tortilla in the pan and sprinkle with 1/8 cup cheese.
  • Add about a quarter of the chicken mixture and top with another 1/8 cup cheese.
  • Cover with another tortilla and cook for two to three minutes or until golden brown.
  • Flip the quesadilla over and cook for an additional two minutes.
  • Remove from the heat and cut into edges.
  • Keep warm while frying the remaining quesadillas.
  • Serve with salsa, scallions, and fat-free sour cream.

1 Tbsp. TACO BELL® Thick & Chunky Salsa
1 Tbsp. KRAFT Lite Ranch Dressing

Steps:

  • Heat large nonstick skillet sprayed with cooking spray on medium heat. Sprinkle cheese on half of each tortilla.
  • Fold tortillas in half; add to skillet. Cook 2 to 3 min. on each side or until lightly browned on both sides. Meanwhile, mix salsa and dressing.
  • Cut quesadillas in half. Serve with salsa mixture.

  • Heat a nonstick skillet over medium high heat. Place the tortilla in the skillet and sprinkle one half with about 1.5 tbsp of cheese. Spread with about 1/2 cup of the chicken filling. Top with another 1.5 tbsp of cheese. Fold the tortilla over and cook on one side until cheese is melting and the tortilla begins to brown. Flip over and cook on the other side for 2-3 minites more until tortilla browns and cheese it fully melted. Repeat with remaining quesadillas.
  • You can also make full-size quesadillas instead of folding the tortillas in half. Just make sure to note that the serving size would be half a larger quesadilla.
