Steak Tacos image

These easy steak tacos marinated in lime juice and spices come out perfectly tender. Ready in twenty minutes and can be cooked on the grill or in the oven.

2 limes, juice
1 tsp salt
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/4 tsp oregano
1.33 lbs. lean sirloin steak, trimmed of all fat
8 corn tortillas
1/4 cup cilantro
1/4 cup onions, chopped
1/2 cup salsa

Steps:

  • Preheat the oven to broil. You can also use a grill.
  • Combine the lime juice and spices. Rub over the steak.
  • Broil (or grill) for 5-6 minutes per side for medium-rare, or to your desired doneness. Let rest for 10 minutes and slice thin or chop into small pieces. You can also chop the steak into smaller pieces and cook it in a skillet. It will take 3-5 minutes in a hot skillet with about one tablespoon of oil.
  • Warm the tortillas and top with cilantro and your other favorite toppings.

1 1-pound flank steak, trimmed
1 tablespoon chili powder
½ teaspoon turmeric
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
8 6-inch corn tortillas
1 avocado, (peeled and diced)
2 medium tomatoes, (diced)
1 jalapeno, (seeds removed and diced)
¼ cup green onions, (diced)
¼ cup chopped fresh cilantro
½ cup black beans
½ cup corn kernels
1 lime, (juiced)
1/2 teaspoon cayenne pepper
½ teaspoon kosher salt
4 cups red cabbage, (thinly sliced)
1/4 cup mayonnaise
1/4 cup greek yogurt
1 lime (juiced)
3 teaspoons fresh garlic (minced)
1 jalapeno (seeds removed and diced)
1/4 cup fresh cilantro (chopped)
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Steps:

  • With the flank steak on a cutting board, score a diamond pattern on both sides of steak. In a small bowl, combine chili powder, turmeric, salt, and pepper. Cover the steak with the seasonings, cover and chill 1 hour (up to 8 hours).
  • In a skillet over medium heat, add oil. Once hot, place steak in the pan and cook 5-8 minutes on each side.
  • Transfer the steak to a cutting board and cover it with foil. Allow it to rest for 5-6 minutes and then slice it across the grain in ¼ in slices.
  • Set aside (tent to keep warm)
  • In a medium bowl, combine avocado, tomato, jalapeno, cilantro, black beans, corn, lime juice, cayenne pepper, and salt. Chill in refrigerator until you are ready to assemble.
  • In a large bowl whisk together mayonnaise, greek yogurt, lime juice, and garlic. Add in jalapeno, cilantro, cabbage, salt and pepper. Stir to combine. Chill in refrigerator until you are ready to assemble.
  • Heat tortillas according to package directions. Spoon steak mixture evenly over each of 8 tortillas. Top each taco with salsa and slaw.

  • Prepare marinade (*see note below for non-marinated steak option) by whisking together all ingredients. Add marinade to a large ziploc bag and add steak. Make sure the steak is well coated in marinade and allow to rest for 6-24 hours.
  • In a large bowl whisk together mayonnaise, greek yogurt, lime juice, lime zest, garlic and jalapeno. Stir in cilantro, scallions, cabbage, salt and pepper. Can be made up to 1 day in advance.
  • Heat tortillas, either on the grill for 30 seconds or in a pan. Place a few slices of steak in a tortilla, top with a spoonful of slaw, and a slice of avocado and a sprinkle of cotija cheese. Squeeze fresh lime on top.
